00:06My first Pancake House was in the Geissele and I opened 2nd of December, just before my birth, the 3rd
00:14of December, it was my goal, 2015.
00:17When I moved to UK about 22 years ago, I've been trying so many different jobs and it always was
00:25in my head I would like to have my own business.
00:27Pancake is a very Ukrainian dish and I'm originally from Ukraine.
00:33So I tried to create, first my menu was like more Ukrainian food and Ukrainian ingredients.
00:39It was different for the Yorkshire people to accept that but they did try, some of them they liked, some
00:45of them they didn't like.
00:46My mum always made the Pancake, Sunday was probably our like traditional food every Sunday but that was like a
00:54treat.
00:55My mum always make it really thin and we have it like with the cottage cheese.
00:59We didn't ever have it lemon and sugar.
01:01First time I tried lemon and sugar pancake in my Pancake House because it's like more traditional English pancake and
01:09I love it, absolutely love it.
01:11And now if I make it at home, I make it lemon and sugar.
01:14As I mentioned before, I'm originally from Ukraine and it's really worried me what's going on there.
01:19And it's very sad what people have to come through.
01:22But we try to support maximum how we can.
01:25So one of the support what we provide, we just communicate Ukrainian families with a sponsor who want to be
01:32sponsored for Ukrainian families.
01:34One of my customers is Anna.
01:36She's an amazing woman.
01:37She come across straight away the next day of the war and said, I want to help.
01:40That's the way how we bring Olga over.
01:43I know Olga from university.
01:44We will study together.
01:45We've been really good friends.
01:46So she was have to run away with the daughter with just one handbag and passport because she's have no
01:52choice to pack any clothes.
01:54And Anna helped her to come across to UK.
01:57I want to say a great appreciation for this country, for this lovely people who helps me, for all people
02:04in Great Britain who support Ukraine.
