00:43chef Louie and Pila are going and it's sad because become friends with these people they've become
00:50part of your lives and then all of a sudden they're gone wait are you taking our food
00:55yeah they're my rice crispies bye guys this is very sad I don't know where I'm going to get my food
01:04from either you're gonna have to cook I'm cold I'm hungry I'm broken and we don't have a kitchen either
01:09the seasons have changed since Banjo and Roe first set sail for all the house
01:21with passion and purpose Banjo has revitalized the reception rooms
01:29and designed a romantic honeymoon suite while Roe has toiled with rewiring re-plumbing and banishing
01:42leaks from the long neglected roof together they are bringing their vision of a unique boutique hotel
01:49to life they've ploughed through over two-thirds of the 150,000 pound budget
02:04now all eyes turn to the kitchen the quiet engine which will power every guest stay and threatens to

04:26design a 1950s icebox that's gonna conceal the fridge that'll go there then pantry gorgeous all

04:44knock the door off put a new window on then you've got this wow look at those curves suddenly like we've
04:54got some organic kind of shape in here it's really nice for some reason seeing the shape I don't know
04:59why but I find that very pleasing we're opening it all up it's gonna be one big beautiful space the
05:10centerpiece of the hotel's kitchen will be a grand island which banjo will design from reclaimed materials
05:17copper sheeting salvage from the roof will form wall paneling and banjo is planning a retro style cabinet to
05:26house the fridge and freezer mmm chef's kiss I like it I just feels a lot also demanding attention are the
05:44windows with shattered glass and rotten frames they are nowhere near guest ready should we rip all this
05:52up at the moment it's probably keeping water out well where there's rain there's water and when there's
05:57water there's rock okay I think leave this where they are replacing the windows will be the final step in
06:05making all the house wind and water tight but banjo and ro need not worry about autumn as all locals know
06:13it's winter it shows no mercy obviously all that is a tough place to be in the winter it's incredibly
06:22cold and very very wet every angle you can think of the rain comes with the wind and finds a way and if
06:28it can they need to really be aware of getting it completely wind and water tight getting their
06:34windows sorted or it will be a very long miserable winter for them in that house banjo and ro have
06:42paid 15,000 pounds for replacement heritage sash and case windows the biggest single outlay we need to
06:50get those windows done and replaced by the end of November if we don't we're gonna get hit with a
06:54massive insurance premium 14 grand they're building insurance for news in December banjo and ro must
07:02fortify the house against the elements by then these windows are critical they should be here two weeks
07:09before the deadline they will be here two weeks before the deadline we'll just get the best looking
07:19sheets their first task in redesigning the kitchen is ransacking the copper removed from the roof so
07:30that's one two three four five for the feature wall splashback they're pretty rough conditions some are
07:37covered in tar some have been beaten by hail and just won't be able to be used but others are fabulous
07:44they've got that gorgeous brown copper color kind of in two minds I love the copper and then I love
07:50the verdigris show me the verdigris side that's this is the verdigris the green is the verdigris okay
07:58formed by wild hebridean weather this verdigris has developed over decades as the copper reacted with
08:07nature's forces so that as a backdrop be really lovely a couple yeah would be lovely too like in a kind of
08:15beautiful rich warmer color salvaging these panels is gonna look really lovely whether they're the copper
08:23color or the verdigris I can honor the past and then find an interesting new way to use them for the future
08:30banjo has sent the time-worn and weather-beaten copper across the water to a master of metalwork
08:38on mull Tom can turn this copper into a wow piece he knows how to spin gold from nothing
08:49howdy how's it going yeah pretty good the verdigris is this naturally occurring process
08:59but you can add a little bit of chemical or some magic potions to expedite that process Tom really
09:07understands that this is your options so you got just bare copper just polished and then you've got
09:13one coat of sprayed verdigris then two coats of sprayed verdigris but the first one's kind of
09:18white to make it more even and you've got two layers of sprayed verdigris what do you think
09:23cry I've got no idea I think I fancy this one that's like a nice degree of verdigris but it's
09:32amazing you can kind of dial it up and down it's just sprayed magic juice what do you mean magic
09:38juice Tom because I know you could do pee and that would work it's not your pee is it it could
09:44be pee I bought off eBay so who knows what's in it it could be somebody's pee it could be somebody's
09:49pee I don't know what's in it that's a good business for somebody well whatever's gonna
09:53get you patina down okay so which one are you going with I think I like this one yeah this
10:00has definitely come up the best I think Banjo has traveled to Perthshire to begin work in the kitchen
10:11island to build the bespoke piece he has chosen Bob a master craftsman with a sprawling workshop and
10:22salvage yard Bob if I can find it and dream it he can make it ah you beauty
10:41hey now we're talking so these could be perfect for the legs for a bit of the island this is the
10:51thing that's going to give it a bit of soul some lovely old found stuff and this place is just like
10:57treasure trove I want it to feel like a bit of an heirloom kind of like it's always existed I'm looking
11:08for something to clad the inside of the island I'm meant to add a bit of texture and depth I know it
11:14when I see it oh yes that will work nicely so I think those legs will work that I found in the yard
11:29yeah I know it I know exactly where we got those from we got those act of a linen factory um in
11:36Kirkcaldy yes I love it my fridge hidden in plain sight kind of inspired by like a 1950s icebox those
11:48beautiful old timber ones oh high-tech drawing I'm actually self-taught as a designer can you tell
11:53yeah so we're making a grand island a hidden fridge all in a couple of weeks because winter
12:01is coming Bob and Ruri's stopping running the boats as well so we kind of have that like hard
12:07deadline to get that done otherwise it'll just be left out in the cold
12:11when winter hits Ruri will restrict ferry crossings to islanders only and even those will be at his
12:24discretion the waters are very deceptive around Alva even the narrow sound between Alva and Mal can be
12:32treacherous it looks easy doing what I do but unfortunately there's all sorts of danger in any
12:39sort of water I've seen people being overly confident and making mistakes and I've saved
12:47people have done that even closer to home my uncle actually drowned in these waters he was an experienced
12:57sailor he lived in Alva for 40 years it just shows you can do something a thousand times and you can
13:03still make a mistake you can't beat mother nature you just have to respect it back at all the house
13:14it's all hands on deck in the kitchen Rose says I never let him express his creativity when it comes to
13:25interior design so I've let him pick the kitchen tiles Ro has opted for a white and peach
13:32marble they look beautiful oh they're stunning not exactly practical wait until grandpa and my little
13:41pigs mess up those you know pigs on my tiles not a chance hello hello so I'm just keying back all the
13:54woodwork in here so we can get a decent primer on it get all the lumps and bumps off and years of kind
14:01of you know gunk Tom has cast his alchemy with the magic spree and is making delivery of his first batch
14:10of panels that's great from the roof to the wall beautiful absolutely beautiful well done Tom
14:24we have to have our house wind and watertight otherwise we're hit with the 14,000 pound insurance
14:33bill and we're gonna miss that deadline Banjo is on the phone to the window maker desperate to confirm
14:41delivery before Ruri closes the ferry and the December deadline strikes we're just getting kind of hit from
14:49every which angle if you can't do it next week you'll be heroes if you can get them on time but that
14:57would be amazing if they're not here we're cooked that's our deadline to be wind and watertight gone if
15:08they don't get that in that's us stung with the 14,000 pound insurance bill yeah I know this could
15:16be disastrous for us you know we're stretched to our limit emotionally physically financially moving
15:24to the island has brought us so much joy but it's also pushed us to our limit oh the frozen soul
15:38hungry hands turning soft and old my hero cried as we stood out there in the cold like these autumn leaves I don't have nothing to hold
16:02have we made the right decisions I don't second-guess myself when we're out here feels like oh this is
16:11where we want to be but people have worked way harder in tougher conditions yeah like maybe we're
16:21just not tough enough you know it's just everything just feels a bit harder and maybe we're just a bit
16:27naive we promised that we could deliver this hotel and it was hopefully going to regenerate the island
16:46and that's put a lot of pressure on us I really need to know we're going in the right direction
16:53I'm kind of starting to doubt myself as a designer so I've invited Nicola her husband Robert they used
17:01to own a boutique hotel on Mull they're blunt they won't sugarcoat it they'll tell us what we've done
17:07she saw the place beforehand so I'm hoping they really like it

17:22come in welcome wow quite a difference quite a difference first impressions count in hoteling
17:32don't they I remember when we were talking at the start about how it was going to work making sure it
17:37was warm yeah welcoming and it's absolutely beautiful very nice indeed yes this is the library
17:45well the library of the library with booze yes it doesn't matter if you're a resort in the Maldives
17:53a chalet in the Alps or an island off an island off the west coast of Scotland you've got to make
17:58people want to come here and this is the kind of thing that a lot of people will want to do oh I'm
18:03excited talking to you yeah I know it's refreshing all right come in okay this is the orangery oh
18:12another belter of a room so you reckon we're almost ready to open not quite I'm afraid the house will
18:22need a lot of compliance health and safety alcohol license you don't have an alcohol license then you've
18:29got very little chance of survival fire regulations electrical certification patent testing making
18:35sure you comply with all the complexities of your insurance is going to be key you'll
18:39be lucky if you're up and running this time next year there's a lot to do a successful business will
18:46only start to turn a profit after three years if you think you're going to be sipping champagne
18:50in the south of France this time next year then you've got another thing coming maybe three or four
18:55years time and upstairs is there a bedroom above yes the honeymoon suite you're going to need to
19:00make sure that the noise down here is not too much or the noise up there is nothing you're still
19:07smiling yeah we're still smiling we're still smiling that's good that's good i feel confident we've made
19:14the right decision this can be a viable business yeah good advice from a good source it's good but more today

19:32banjo and ro are reinvigorated their doubt drifting away as the kitchen units arrive to swell their renewed hope

20:22well now that'll slide in there yeah and it'll go together like a glove with some bolts look at these
20:35legs these are the ones we found in your salvage yard that's a work of art right
20:41well this is reclaimed teak work tops from a school science lab you know there's a few grooves there's
20:53a little bit of graffiti writing in the one at the other end it's alive we're gonna make a mark on it
20:59the kitchen isn't the only delivery banjo and roe are celebrating
21:08oh it looks so good oh makes it easy makes it easy this is single-handedly like our biggest purchase
21:17for the house and we've got to carry the windows over on every boat
21:21the windows are a very expensive thing to bring this way some sort of lonely fields and horses joke
21:41it's absolute chaos i don't care they're coming over we're getting them up we're going to be wind and
21:45watertight and avoid that insurance premium oh most importantly yes this is just in time you have
21:56saved our bacon this winter especially with arena dead
22:03this has given the house its second wind yeah i don't i don't think this would have made another
22:09winter and it's a step forward to preserving a piece of history oh watch me palmet like a
22:15glove you're a magician i love it the kitchen is such an important space
22:27it's where i cook it's where i eat it's where i relax and we haven't had one for so long
22:34i'm just looking forward to making new memories in there having people over entertaining cooking

24:33that we sit down and celebrate with rory and rebecca this does not look like the same place

24:46hidden that's for sure it's beautiful genius genius she said it so we've got a loin of venison
24:55from olva if you think back to six months ago like six months to now yeah like we've come so far
25:06when i look back walking through those doors i was just naive about the amount of work for me to be
25:11done there's so much to do yeah but there's so much to learn yeah but we don't have much time to do it
25:18but i think actually probably being a bit naive about it is what was needed
25:25to see it at this point is actually unbelievable i'm really proud of how far we've come roe switch
25:31the generator on wow it is so beautiful i can't believe it what did you think do you think we'd
25:42ever get to this point i thought you could do it because i can see how stubborn particularly banjo is
25:49that's a good thing you've got a vision and you're gonna push forward faded grandeur

26:21yourselves probably the pigs it was very nice but it went very well as well surprisingly well
26:30even when it was like really hard and i was really struggling i just knew it's okay yeah it feels like home

27:17quarters the dining room i've got my donkey pavilion as well i've got to paint the outside of the house
27:23landscaping i'm going to build a glass house knocking through the wall on the boat house i want to do that
