00:00My name is Sim Walker. I'm the owner-operator of Negril Village, Atlanta, Negril Village,
00:11New York, in Sokol, Brooklyn. The restaurant business is a family business. I got started,
00:27I grew up in the business with my mother, Marva Lane, and I've been in the business since before I can
00:33see over the counter. So you and your mom are really close? You know, we work together and we
00:38drive each other crazy. So that's a good thing. So I guess I would say I'm blessed to have that
00:44opportunity. Who's the better chef? There's only one answer to that. She is. And the cocktails sort
00:52of complement the meals, right? Oh, indeed. Yeah, I saw on Foursquare that this is the cocktail place
00:57in Atlanta. Yes. So what are your other specialties? Like, what are the things that people run in here
01:02for? Right now, the jerk chicken and waffles are taken off. We can barely keep that in the house.
01:07I'm looking forward to tasting your dishes. Let's get some food out here. All right.
01:11What are we about to dine on right now? Oh, well, we got a lot of goodies at the table for you. We
01:23have our curry goat, the Axtell stew. Okay. I have a nice whole snapper for you. Our shrimp and grits
01:30empanadas. So I have each variety for you. So we have a curry chicken, curry goat, and the Axtell
01:35empanada. And then the infamous jerk chicken and waffles. And I think it sounds like you want to
01:41start here first. We do, but before we do, I have a question. Okay. What are you supposed to eat
01:46first? This is the debate. Really? Yeah. It's a thing. It's a thing. So how do you eat? What's the answer?
01:51My personal preference is you have to combine all the flavors. You know, we want to match that sweet
01:56and savory. You know, I'm always here for the syrup. You have to get the cream cheese frosting. Oh,
02:03don't forget the cream cheese frosting. And then match that with the jerk chicken. Waffle,
02:07a little dip. Chicken syrup. There we go.
02:14Oh, my God. Oh, my God. Amazing. Okay. You have to eat it like that. You have to. You have to.
02:23It's the only way. Because otherwise you're cheating yourself.
02:25I love being in the restaurant, being social, greeting people. You know, the restaurant's really
02:36a community environment. People have good times. People meet. So it's awesome.
02:41This is so good, you guys. Tim, come on. Give me some. Don't leave me in. That was amazing.
02:45Oh, we're doing this? Okay. Okay.
02:47Okay.
