00:00We found pasta heaven at this Italian supermarket on Long Island, Uncle Giuseppe's in Melville, New York.
00:06Long, thin, capellini pasta gets tossed around in some heavy cream,
00:10topped with a healthy amount of parmesan and mozzarella cheese.
00:14It all gets mixed together.
00:17They add some scoops of guanciale, mix all of that together,
00:22form it into a pan and let it cool to look like this.
00:26It gets sliced into squares.
00:30Then triangles.
00:32They cover each pasta triangle in flour,
00:35their egg yolk and pecorino cheese mixture,
00:39and Italian seasoned breadcrumbs until they look like this.
00:43They get fried, dried off, finished with parsley and pecorino,
00:50then wrapped up like the most delicious Christmas present we've ever gotten.
00:54We couldn't believe the size of these fried pasta triangles.
00:57Break them open, pull that cheesy, creamy pasta, and devour,

01:44We were still hungry and went into the back to see how they make their ricotta stuffed gnocchi.
01:49They pack this machine with their seasoned ricotta cheese.
01:52They slice up their house-made gnocchi dough into pieces,
01:55and toss each piece into the machine,
01:58and press it closed.
02:01They fill another part with semolina, and watch those ricotta stuffed gnocchi form.
02:06They jam-pack a box, and send it through the conveyor belt to seal it.

02:12And the chef wanted to show us one of his favorite pasta dishes using these ricotta stuffed gnocchi.
