00:08creating breakfast magic that'll make you question why you ever ate them separately.
00:13For the pancakes, 1 1⁄2 cups all-purpose flour,
00:172 1⁄2 teaspoons aluminum-free baking powder,

00:211 tablespoon sugar,
00:231 1⁄4 cups milk,
00:243 tablespoons melted butter,
00:26and 1 egg.
00:27For the filling, spray or oil for cooking,
00:308 eggs,
00:32whisked 8 ounces sausage,
00:34crumbled,
00:34and 1 1⁄2 cup maple syrup for drizzling.
00:37Make the pancakes.
00:39In a large bowl, whisk together the flour,
00:42baking powder,
00:43salt,
00:43and sugar.
00:44Make a well in the center.
00:46Add the milk,
00:46egg,
00:47and melted butter,
00:48and mix just until smooth.
00:49Small lumps are fine and help keep the pancakes tender.
00:53Heat a nonstick griddle over medium-high and lightly grease it once hot.
00:56Pour about 1⁄4 cup of batter for each pancake,
01:00gently spreading into even rounds.
01:02Cook until bubbles form and the edges set,
01:05then flip and cook until golden on the other side.
01:08Transfer to a plate,
01:09keep warm,
01:10and repeat with the remaining batter until the batter is used up.
01:13Make the filling.
01:14Meanwhile,
01:15cook the 8 ounces crumbled sausage over medium-high heat
01:18in a separate large skillet,
01:21breaking it up with a spatula as it browns.
01:23Cook for 5-7 minutes until the sausage is fully cooked and nicely browned.
01:28Pour off the excess grease from the sausage,
01:30leaving just enough to cook the eggs.
01:32Add the 8 whisked eggs to the hot pan with the sausage and cook,
01:36while stirring constantly until the eggs are fluffy and just set,
01:39about 3-4 minutes.
01:41The residual heat will continue cooking them slightly.
01:45Assemble.
01:45Scoop a generous portion of the warm scrambled egg and sausage mixture
01:48onto one half of each pancake.
01:50Pick up the pancake and fold it gently in half,
01:53creating a taco shape.
01:54Place each pancake taco in a taco holder,
01:57or lean them against each other on a serving plate,
01:59then drizzle generously with maple syrup before serving immediately.
02:03Take care.
