01:49Taking stock of my decorations the other day,
01:51I realized it's time for an ornament upgrade.
01:54I brought some samples as inspiration.
01:57But I need a little help from you, bakers.

02:04of the holiday decorations.
02:05You will create four chocolate truffle ornaments,
02:08with a baked element inside, and covered in seasonal decor.

03:06And I like to put a little bit of the Asian flavor
03:08into the Western baking techniques that I'm using.

03:19We are making Dak the Hall's chocolate truffle ornament with red and gold and dark green Christmas decorations.

03:34The flavors of the truffle, we put the dark chocolate ganache with a chocolate pistachio streusel and cranberry sauce.

06:00We're making white chocolate truffles with caraway and plum apricot jam and sugar cookie crumbs.
06:07The recipe was actually my grandma's truffle recipe that we kind of built off of.

09:52What is the trickiest part of all this?
09:54It's a sphere.
09:55So removing that thin shell out of a mold is absolutely nerve-wracking.

10:22To assemble the ornaments, we have to layer the different components so that the judges taste the different layers and texture.

10:30You can start with putting them together and decorating.
10:32To make sure the judges don't see the connection where we joined it, I have to spend a little bit more time with the candy melts to make sure I spread it evenly to hide the seams.

13:02We made deck the hall chocolate truffle ornaments.
13:05We wanted to infuse the colors of the east and the west, which is the red, the gold, and the green,
13:11blending with Chinese culture for the holiday season.
13:14This is a lovely ornament.
13:16I love that mix of east meets west, the red being very good luck.
13:21Good luck, good fortune.
13:22Lovely.
13:23The only thing I would point out, it looks like you used a faceted mold.
13:27I would have loved to see more of that texture.
13:29It's a little bit covered up from the candy melts that you used in between the seam.
13:34But it looks like a real ornament.
13:37You've got the gorgeous wreath, the detail on these little bows.
13:40I thought that was a really nice touch.
13:41Great.
13:42Well, time to put the tree in treat.

13:46So we chose to do dark chocolate ganache truffle with a chocolate pistachio streusel and cranberry sauce.
13:53So it has like a holiday element.
13:55This is delicious.
13:56I'm a big fan when there's acidity that's been added to chocolate just to brighten it up,
14:07give it pops of flavor to kind of combat that richness.
14:10And it was also a textural masterpiece.
14:12The ganache is perfectly set.
14:14It's not grainy and a beautiful amount of that crunchy pistachio goodness.
14:19And I think you have a perfect balance between the components.

14:24We feel very proud of our work.
14:26They loved our flavors and the look.

14:36We really wanted to tie it into something that's really close to our hearts, the nutcracker.
14:41The design on the chocolate that you have just underneath the tree, it looks fantastic.
14:46So well done there.
14:47But the belt around the ornament could have just been a little bit tighter.
14:51You used real chocolate on the exterior, which is very finicky.
14:54Perhaps if it was tempered, it would have held its shape a little bit better.
14:58Yeah.
14:59Which is why we see it's caving in a little bit at the top.
15:01But when you peer inside, you see that beautiful Christmas tree with ornaments on it,
15:06which is very sort of meta and referencing itself.
15:09So I applaud you for that.
15:12Speaking of nutcracker, it is time to get cracking.

15:16We did white chocolate truffle with caraway plum.
15:20Apricot jam and sugar cookie crumbs.
15:27I love complex flavors.
15:29It's warm.
15:30I love that there is the sugar cookie bite in there to break up that very soft interior.
15:37And then there's this underlying note of tartness because you have that apricot and plum, the sugar plum that runs through there.
15:46And I dig it.
15:47I was trying to get the individual flavors, but it's quite complex.

15:54Some of the caraway probably could have been blitzed up just a little bit finer because I did find myself with a little caraway seed in my tooth.

16:26We created a Winter Wonderland truffle ornament.
16:29We really wanted to get an icy, snowy kind of feel with lots of glitter and white and kind of a swirly blue and white pattern.
16:36We were inspired by your sparkles.
16:38I absolutely love the uniformity, the details on the top.
16:43This minimal design is amazing, but it would have been nice to see maybe one other design element.
16:49But you absolutely nailed taking two halves of your ornament mold and sealing them together in a way that's seamless.
16:56And it just so happens to match my outfit, so gotta give you another point for that.
17:02It's definitely giving sparkle and ice, but does it taste nice?
17:06So our inside is white chocolate ganache with apple butter, maple, and rosemary crumble.

17:35The only thing I would say, I would have loved maybe a little fleur de sel.

17:45But it's a lovely combination of flavors.
17:48So I do wish I'd put more salt in there, because it does help.

33:51Our mailbox is called Gnome Sweet Gnome.
33:54We wanted to do something whimsical.
33:56So we made a little gnome cottage in the woods mailbox.
33:59It's so charming, adding that gorgeous texture to the sides.
34:04And then on top of that, you've added this sort of white wash.
34:07It almost looks like it's been in the woods forever.
34:10And it's just layer upon layer of beautiful details.
34:13And it's giving me life.
34:16On the bottom here, that little stack of logs.
34:19You use cinnamon sticks.
34:21Genius.
34:22The wreath on the front, beautiful.
34:23You guys have done a great job.

34:28So we made this little Santa gnome cookie.
34:30And we wanted to put a little cookie inside Santa's tummy
34:35because he's been eating a lot of cookies lately.
34:37So there is a little cookie sprinkle inside.
34:41My goodness, it is the cutest shape possible.
34:44Beautiful piping work.
34:45This royal icing, it's just the perfect consistency.
34:48And then let's talk about the isomalt.
34:50I mean, crystal clear.
34:52You can see my hand right through there.
34:54And there's a baby gingerbread inside.
34:56It just doesn't get any cuter.
34:59It's cute.
35:00But the real question is, does it shake?

35:11It's a coconut lime gingerbread with coconut lime royal icing.
35:15It has all the traditional spices in a regular gingerbread,
35:18plus the coconut and lime flavored.
35:20It's a lovely cookie.
35:24So the classic gingerbread flavors come first.
35:28And then the coconut sort of comes as a wave afterwards.
35:32And then lastly, just the faintest hints of lime.
35:36But it's a little too subtle, those flavors.
35:39May I ask, you put lime into the cookie using some zest.
35:43Is that correct?
35:44Lime zest and the gingerbread.
35:46Sometimes with zest, it's so moist after it's been zested
35:49that it doesn't evenly mix throughout the dough.
35:52It's tasty.

36:07So this is cookies for Santa, gingerbread mailbox.
36:10We wanted to get the traditional wooden mailbox
36:14that Santa would have kept millions of years.
36:16It's so old.
36:18And we want to show a little bit more skill in that all the flowers
36:22are handmade and hand piped.
36:23It really sells that sort of antique-y look.
36:27I love that you use an impression mat to create
36:31an actual wood grain texture.
36:33Your greenery along the sides.
36:36It's so nicely piped.
36:37I almost think I can smell pine from here.
36:41And then you've accented that with piped flowers.
36:44It's so charming.
36:46I love all the detail that you have on the trees.
36:48I love that snow.
36:50I was watching you work the snow to make it peak so it actually
36:54looks like it's a real scene.
36:56But I would have liked to see a little bit more design just
36:59on the side or even anything.

37:22minuscule chocolate chips in there is so gosh darn cute.
37:25The only thing is I can see some bubbles in the isomalt that
37:31perhaps could have been popped with a very quick torching.
37:34And that would have added to the clarity.
37:36I can actually almost see both of you through the cookie.

37:52So we went with an espresso orange gingerbread flavor.

39:04And in the back, there are naughty little elves that
39:07are having a little snowball fight.
39:08This is really whimsical.
39:10The presentation is busy, but it's intentionally busy.

39:15It looks like a couple of really awesomely made gingerbread
39:18houses.
39:19I think what you've delivered here
39:21is my childhood dream gingerbread.
39:24One of the things I noticed right away
39:26are your beautiful conveyor belts that go between the buildings.
39:30Making straight walls is hard enough out of gingerbread.
39:34You've curved them into this sort of concave shape.
39:38And it really just looks like those starlight mints are traveling
39:41from one building to another.
39:43It's so cute.
39:45And the shaker cookie, lots of fun.
39:47There are snowflake sprinkles inside of it

39:50So it's kind of like a winter wonderland.

39:52It's quite rustic in a positive way.
