03:30in Lisbon.

03:33the supervisor,
03:34is giving me a
03:35behind-the-scenes look
03:36at this historic spot.
03:38This bakery is known
03:39as the birthplace
03:40of Portugal's
03:41original custard tarts.
03:42It began making
03:43the classic tarts
03:44in 1837
03:46using an ancient recipe.
03:48That formula
03:49remains a closely
03:50guarded secret.
03:51Only a handful
03:52of master bakers
03:53know the whole process
03:54and it's all handled
03:55behind a locked door.
03:57So this is the door
03:59with all the secrets

04:01Yeah, this is the only
04:02door that is closed
04:03even for me
04:04in this enterprise.
04:05Only three persons
04:06know the receipt
04:07and know how to do it
04:08and they are the only ones
04:09available to come inside.
04:10These are the original
04:11Portuguese custard tarts.
04:13You'll find versions
04:14all over the world,
04:15but the true
04:16Pastéis de Belém
04:17are made only here
04:18in this bakery.
04:20The pastry chefs here
04:22are experts
04:23in every step
04:24of the process.
04:25I'm getting the chance
04:27to try a little
04:28pastry making myself

04:30of the bakery's
04:31experienced staff.

06:34you'll also find tiles
06:35with geometric patterns
06:36influenced by the city's
06:38Islamic past.
06:41The museum showcases
06:42tiles of every type
06:44from simple designs
06:45to grand panels.

06:47they show the richness
06:48of Portugal's tile tradition.

09:06for a private masterclass
09:07with one of
09:08the restaurant's chefs.

09:13We have three dishes.

09:18We're going to fry
09:19the chicken with the
09:20garlic oil and coriander.

10:15And with just a light touch,

10:30My grandparents,
10:31they brought this dish to
10:32Lisbon when they opened
10:33the restaurant.

10:35it's just the normal
10:36Portuguese clams.
10:37There's no magic,
10:38no nothing, it's just about
10:39really good products
10:40from our coast.
10:41Portuguese cuisine,
10:42it's all about the ingredients.
10:45Sharing this meal

10:47understand why this place
10:48is so popular.
10:50It's food with history,
10:51family and flavour.
10:53As my journey comes to a close,

11:09I think one of my favourite things
11:11is all the different colours
11:12and then the pop of the trees
11:14at the top.
11:15You notice the colours so much
11:16and it's the same
11:17as what you notice
11:18in the tiles as well.
11:19The blues,
11:20the whites,
11:21the yellows.
11:22The pink.
11:23It's great just sitting back here
11:24relaxing on the ocean
11:26getting to see the different elements
11:28and levels of the city.
11:30After a fantastic day on the water,
11:35the captain lets me take the wheel
11:37as we head back to shore.
11:40For me,
11:41Lisbon is a city of layers.
11:42Layers to its history,
11:44layers to its streets
11:45and layers to its famous pastry.
11:47I've had such a wonderful time
11:49here in Lisbon
11:50and truly feel part
11:51of the Portuguese culture.
11:53But now,
11:54on to the next adventure.
