01:50this one smells like cat food you know i'm tom reed wilson and ben venuto to the taste test restaurant
02:09i'm pitting dishes from britain's biggest supermarkets against each other to help you decide where to spend
02:15your money now today my wondrous team are transforming the restaurant into a trattoria so that we can say
02:24ciao bella to italian foods but will our diners be saying mio amore or please not a teaspoon more to our
02:34supermarket offerings meanwhile downstairs in the kitchen or la cucina super chef and culinary wizard
02:41mike reed is prepping for service everyone's got high expectations when it comes to italian so we need
02:48to be on it we need to be focused and we need to make sure our diners are happy with mike busy preparing
02:54the food the first diners have arrived at the taste test restaurant oh piacere and that's where my italian
03:04well run it's dry they include ourselves a trio of italian grandmothers or nonnas thank you
03:11a chorus of opera singers it's the golden larynx isn't it please come and make yourselves comfortable
03:19italian brothers who are also pizza chefs oh the neopolis italy obsessed best friends
03:26oh lovely lovely to meet you an engaged couple now the romance has arrived this is going to be a
03:36divinely romantic table we need a little bit of italian romance don't we of course and three food loving
03:43footballers now i gather you boys are carb loading i'm going to absolutely stuff you today
03:49our diners will taste five dishes with three choices from major supermarkets each time
03:58but they don't know which brand is which and will vote anonymously for their favorite
04:04ciao diners i'm going to ask you to take a little voyage of the imagination with me we're no longer in
04:11london we're in sun-drenched sicily about to take a passeggiata or an evening promenade and on our way to the taste test
04:21trattoria we have a lovely appetizer it is of course arancini
04:34this is a battle between two premium and one mid-range supermarket
04:38our diners will blind test three arancini dishes by tasting the individual arancino balls
04:47in no particular order the options are waitrose go veggie tomato and mozzarella arancini
04:55mns food rich tomato and mozzarella arancini and asda arabiata arancini
05:02they're labeled a b and c but neither the diners nor tom will know which is which

05:18they look like scotch eggs the italian scotch egg diners it's time to taste arancini

05:32with many spices like moroccan style arancini it should be way more delicate

05:52it's an arancino so what would you look for in a proper autentica
05:58seasoning in general was way too strong so the spices were covering everything
06:03i haven't transported you to sicily yet not via the palette

06:14oh i think there's cheese in the middle i'm always a fan of cheese in the middle of anything
06:24it's a bit too strong the cheese it's almost like overpowering
06:30so what are the origins of these tasty rice balls
06:33traditionally arancini are balls of cooked rice often shaped around a flavored filling and then deep
06:45fried it's said that the arabs brought them over to sicily in the 10th century
06:53the word arancini means little oranges in sicilian because once cooked they resemble a sour orange a
07:01citrus fruit imported by the arabs when they ruled the island
07:06arancini are traditionally eaten on the feast day of santa lucia when no bread or pasta is consumed
07:15they were also a very practical dish making use of leftover risotto by shaping it into portable snacks
07:22they could be eaten by farm workers in the fields
07:25a far cry from the diners who enjoy arancini today
07:35diners it's time to tuck in to arancini c
07:40it was crunchy on the outside but that was it now see arancini c they look like very uniform balls joshua
07:57yeah they are quite nicely shaped the crunch was good yes but there ain't no flavor
08:03no flavor no no please tell me that in this melange there was something that sung yes absolutely
08:14well which one which one sung to you i have to say for me it was a
08:20so with all three arancini tasted it's time for the diners to decide the winner
08:25diners it's time to vote for your favorite arancini will it be a b or c while the diners cast their votes
08:39in the kitchen chef mike wants to find out more about what's inside the supermarket arancini
08:46and start with the asda one the risotto looks soft there's a nice little squidge and bounce back
08:54not the oozing sensor that i would expect from arancini so next one is m s these are quite small
09:02for arancini arancini traditionally is actually quite big you've got that cheese in the middle
09:07though which is melted which is nice moving on to the larger waitrose arancini when it's bigger
09:14it's juicier you can get more filling in there you can get more cheese in there
09:18it's got quite a gooey center that cheese is melted really nicely all three supermarket arancini contain
09:26cheddar cheese as well as the more traditional mozzarella so it's very interesting that they've
09:31added cheddar cheese in there so they've definitely tailored this to the british market
09:36i understand why brands would do that but it's not italian and it's not authentic
09:44back in the restaurant with the votes now counted it's time to see if our diners like the british take
09:51on arancini well diners your votes are in and we have a very clear winner with a stonking nine votes
10:00it is arancini a from asda which beat second place arancini b from waitrose and in third place
10:18arancini c from m and s
10:22and coming last is the most expensive
10:51expensive and three pounds 90 for 200 grams m s food rich tomato and mozzarella arancini
10:59actually it really delights me to reveal to you that arancini a from asda is nearly a pound
11:07cheaper than the m s option so it seems that not only are you very discerning palettes but very savvy
11:16shoppers the diners have decided when it comes to arancini it appears you don't have to fork out for

12:15asking our diners to try the supermarket's best takes on that gorgeous gastronomy
12:24diners imagining italy without our next dish is a bit like imagining marcello mastrio annie
12:32without sophia loren it's that iconic it is of course spaghetti carbonara
12:45this is a battle between a brand leader versus supermarket premium ranges
12:52remember the diners have no idea which is which
12:55the main courses they're testing are charlie biggum spaghetti carbonara as does bistro spaghetti
13:05pancetta carbonara and sainsbury's taste the difference pancetta carbonara
13:12these are done smells really nice okay service please thank you very much
13:21it's not easy to get a good carbonara pepper it's not easy i genuinely love a supermarket carbonara
13:29dear diners it's time to taste spaghetti carbonara a
13:39it's what i would expect from a customer a little bit of cheese on that bad boy would really bring it
13:44to life i think now i know that you're big fans of italian flavors absolutely how does this rate
13:54carbonara a a little bit bland yeah it was like there's no excitement so our feeling is if carbonara
14:00a was served to you at a restaurant or a trattoria it would be slightly disappointing i wouldn't complain
14:07but i wouldn't leave it here but will spaghetti carbonara b bring home the bacon
14:15it's got more taste more flavor now katerina crucially does b meet your definition of carbonara oh it does
14:27yes it's got more flavor the cheese it tasted like uh you know the right ingredients in there
14:34well that has me kicking about the clouds already spaghetti carbonara b may be a hit with our nonnas
14:42but the origins of this classic italian dish aren't so clear-cut
14:49there are numerous theories about its origin the name carbonaro means coal burner so some believe it was
14:56created as a hearty easy dish that men making charcoal enjoyed in the 19th century
15:02another popular theory is that it was created by american soldiers stationed in italy during world war
15:10ii who used their rations of eggs bacon and pasta to make this nourishing meal
15:17today of course there are numerous takes on what has become one of italy's most popular dishes
15:23but what do our italian food lovers think of the next supermarket offering diners it's time to taste
15:36spaghetti carbonara c
15:41not close to carbonara but nice pasta now a little birdie tells me this is your favorite italian dish
15:49carbonara it is got a lot of pepper in it it's a very strong cheese as well they've maybe put too
15:55much cheese in it right so which of our pasta dishes will take the crown diners it's time to vote for
16:02your favorite spaghetti carbonara a b or c or c katerina watch out tom or she'll be after your job
16:13and while the diners vote on their favorite in the kitchen chef mike reveals the secrets of shop
16:22bought carbonaras i'm not surprised that our diners think some of these are not authentic carbonaras
16:29and that's because the supermarkets are sitting on a massive secret they've reinvented carbonara
16:35in a real carbonara there's no cream in sight it's made from raw egg yolks that's the big difference
16:41between the authentic carbonara and what the supermarkets produce raw egg yolk is a no-go in a
16:48ready meal you couldn't actually reheat a carbonara made from raw egg yolks in the microwave it would
16:56scramble so to create the creamy texture made by the egg yolk and pasta water in a genuine carbonara
17:03the supermarkets have to add cream if you look at this first one you can clearly see
17:10the amount of cream and if i look at the ingredients there's not an egg in sight
17:19but if you fancy a genuine carbonara mike's going to show you how it's done
17:25after adding his pasta to boiling salted water
17:29he separates egg yolks from the whites and grates some italian cheese
17:33i'm adding my freshly grated pecorino
17:39a classic carbonara is made with guanciale or cured pork cheek but pancetta or cured pork belly is often
17:46used a little trick is we're taking that fat that's come from cooking our guanciale and we're going to
17:56whisk that through our egg mix just a little bit at a time we don't want to scramble the egg yolks
18:03and that's the key to getting a silky smooth and creamy carbonara but without the cream
18:10he then adds a splash of pasta water and his al dente spaghetti to the egg and cheese mix
18:15let's not forget now that beautiful crispy guanciale
18:24which is just finishing off this beautiful simple classic dish
18:30this is an authentic carbonara delicious pass me a fork
18:38back in the restaurant it's the moment of truth for the supermarket versions
18:43well diners your votes are in and it's a crystal clear winner with a whopping 12 votes it is
18:55carbonara b
19:00it's charlie biggum's carbonara so the results for the three carbonara choices are charlie biggum's spaghetti
19:10carbonara is the clear winner at six pounds for 338 grams in second place is asda's bistro spaghetti
19:20pancetta carbonara at four pounds for 400 grams and coming third is sainsbury's taste the difference
19:29pancetta carbonara at four pounds 50 for 375 grams they're all single portions
19:38but prices vary considerably the winner charlie biggum's is almost double the price of asda's offering
19:46with that in mind is there anyone that would change their choice just to save
19:52a little bit of money no no no i might oh if b is almost double the price of c like i would go more
20:04for c to be honest he has some finishing nice finishing touches like the black pepper that reminds
20:09me of a nice carbonara c wins for authenticity authenticity yeah
20:13so aside from maybe luigi it seems our diners are happy to splash the cash when it comes to spaghetti
20:22carbonara dear diners yeah it's the law i've been told that where there is pasta there must also be
20:34garlic bread but of course the big question on deck is who does it best should we find out
20:50in this round our diners will be putting three supermarket budget ranges to the test really nice
20:56strong garlic smell but of course they have no idea which is which we've just got the call they're ready
21:03for next course so let's get these cooking the supermarket budget ranges are little simply garlic baguettes
21:14morrison savers garlic baguette
21:18and waitrose essential garlic baguette bread bread bread that's the one leave some of this for me
21:27diners it's time to try garlic bread a
21:38this amount of garlic yeah but i like that they got a nice gooey thinner
21:45and the garlic is garlic ink i don't know how many another piece fizz i saw your eyes light up at the
21:52look of garlic bread eh does it live up to its looks i like things to have a bit of texture on them
21:59you know a little bit of color a little bit of vibrancy yes there are great grooves in that crust
22:04aren't there that enable it to get ever so slightly caramelized exactly it's been cooked nicely has it
22:09been cooked so nicely that i might get 16 bars

23:10If I make garlic bread at home myself, this is what it would taste like.

23:16But how will garlic bread C perform?
23:20I would say if I certainly wouldn't buy this.
23:24No, definitely not.
23:26I don't think I want any more.
23:28Now, I haven't tasted this, but garlic bread C looks considerably less buttery to me.
23:34I don't know if that's borne out by flavour, Claire.
23:37It's not going to wow me, but I do think it's just slightly more flavoursome than the other two.

23:44With the garlic bread savoured, the diners must now decide which they prefer.

24:12Welcome back to the taste test restaurant where we're sampling some of the nation's favourite Italian foods.
24:36My delicious diners are voting on an iconic Italian side dish.
24:41But before I reveal their verdict, Mike's going to reveal the secret to a deliziosa garlic bread.
24:49In the kitchen, Mike's about to inspect the garlic baguettes.
24:53The budget brands he's comparing are Lidl Simply Garlic Baguettes, Morrison Savers Garlic Baguette, and Waitrose Essential Garlic Baguette.
25:04In order to assess the fillings, Mike's going to inspect them in their uncooked state, starting with the Waitrose Budget Range Baguette.
25:13So I want to really get inside now and see what's in there once we break it apart.
25:19The smell of garlic is very strong, quite pungent.
25:23I think that's a generous amount of filling right there on that slice.
25:28And if you look at the ingredients, they've got chopped garlic in here, but then they've got 9% butter as well, which for a budget product is great to see.
25:35Next is the Morrison Savers Baguette, which is 88 pence cheaper than the Waitrose one, but it's a slightly smaller product.
25:44So let's have a closer look at Morrison's.
25:47Definitely not as generous on the filling, I don't think, as the Waitrose, but there's herbs in there, which is nice to see.
25:55So let's have a look at the ingredients.
25:57There's no butter.
25:59What I can see is rapeseed oil and palm oil and skim milk powder.
26:05It's essentially like a margarine-based spread, and to be fair, that's reflected in the price.
26:10This is a budget product.
26:12So with just 9% butter in the Waitrose Baguette and a margarine-type mix in the Morrison's, how will the Lidl one compare?
26:21Another budget option is Lidl.
26:23Definitely more filling than the last one.
26:26I can smell more garlic as well on the nose.
26:29I can't see any milk powder, definitely no butter.
26:34They write here margarine, palm oil, rapeseed oil.
26:37So, yeah, this is like a vegetable-based spread.
26:40So it's accidentally vegan, because without the milk or the dairy-based products, that's what's helping keep the cost down.
26:46For me, a garlic bread, butter's so key, so important.
26:51I mean, it's bread and butter.
26:52It's the whole thing, right?
26:53But will the difference in the fillings impact the diner's votes?
27:01Back in the restaurant, it's crunch time in the game of the garlic breads.
27:05I would say there's a comfortable winner, because it has 11 votes.

27:19Yikes.
27:23Now, this was a Waitrose garlic bread.
27:27So, in the battle of the budget garlic breads, the clear winner, and the most expensive, is Waitrose Essential Garlic Baguette, at £1.25 for 210 grams.
27:41In second place, it's B, Morrison's Savers Garlic Baguette, at 37 pence for 170 grams.
27:49And coming third, is C, Little Simply Garlic Baguettes, at 74 pence for 340 grams.
27:59But as there are two garlic baguettes in the pack, it actually works out the same price as the Morrison's.
28:06Well, given that the winning garlic bread was almost three times the price of the second-place Morrison's, would anybody switch?
28:17Oh, Sarah, your hand shot her!
28:21I certainly would, for nearly three times the price, Tom.
28:25For the sake of saving a few, Bob, I would definitely make the switch.
28:29So, despite the winning garlic baguette being the only one containing butter,
28:34it seems some diners would think again about paying more for it.
28:38Dear diners, I promise it's jolly nearly time for dessert.
28:44But first, there's one more savoury dish, which is extraordinarily handy when you're tight for time.
28:49We've all had it in our cupboards and fridges at some stage.
28:53It is cheese ravioli.
29:00We've got to do service now in ten minutes.
29:03So let's get these raviolis cooking, please.
29:06In this round, it's between supermarket, mid, and budget ranges.
29:12As ever, our diners don't know which brands A, B, and C are from.
29:17The supermarket choices are...
29:20Sainsbury's Four Cheese Ravioli in a Tomato and Basil Sauce.
29:26Tesco Cheese Ravioli in Tomato Sauce.
29:29The only brand in our test that comes in a tin.
29:32And M&S Food Four Cheese Ravioli.
29:35They are all 400-gram portion sizes.

29:41Make sure the plate rims are nice and clean, guys.
29:46So A is cheap.
29:51It's cheap.
29:53Diners, it's time to taste cheese ravioli A.

32:00approach to the pasta parcels and wants to interrogate the cheesy fillings.
32:05So I'm going to go straight in with this first one from Sainsbury's.
32:10And the cheeses you've got is cheddar, mozzarella, you've got ricotta and a hard cheese.
32:17But there is only 15% cheese in this one.
32:21So M&S is another four-cheese ravioli here.
32:25You've got some herbs through this one as well.
32:27I like the look of this tomato sauce too.
32:30So the cheeses you've got in here are ricotta, mozzarella, rigato and a hard cheddar.
32:37It's got 23% cheese in it.
32:39It's a premium product.
32:42Finally, it's the tinned cheese ravioli from Tesco.
32:46The budget option coming in at just 80p for a 400-gram can.
32:51This takes me back to my uni days, tinned ravioli.
32:55They're very small ravioli.
32:57The pasta's quite thick.
32:58It has 2.5% cheese filling.
33:02So it really is quite a small amount of cheese.
33:04But it's Edmonton, so at least it's a good cheese that they're using at a very affordable price.
33:10It's only 80p.
33:11I mean, that's great value for a tin of ravioli.
33:17How will the different cheeses in the fillings affect the vote?
33:21It's time for the results of the rival ravioli.
33:24Well, diners, your votes are in.
33:28And one ravioli has a whopping 14 votes.

33:47The runaway winner in first place is M&S Food 4 Cheese Ravioli
33:52at £3.75 for 400 grams.

34:03And in bottom position, with no votes,
34:06and by far the cheapest,
34:08is Tesco Cheese Ravioli in Tomato Sauce with Emmental
34:11at just 80p for 400 grams.
34:15That's almost a fifth of the price of the winning ravioli.

37:35Indeed, the word means pick-me-up
37:37in an old Italian dialect.
37:40Traditionally, this Italian dessert
37:42has a base of Savoyardi biscuits,
37:44or ladyfingers,
37:45which have been dunked in coffee and masala wine.
37:49It's then layered with a mascarpone cream cheese filling
37:52and dusted with cacao powder, or pure cocoa.
37:57Early records suggest it originated in Treviso
38:01in northeast Italy in around 1800.
38:05It's even rumored that a brothel madam invented it
38:08as an aphrodisiac for her clients.
38:10However, a restaurant in Treviso
38:14is also credited with its invention
38:16after it appeared on the dessert menu
38:18in the early 1970s.
38:21It's clearly a controversial dessert,
38:24but will the frisky origins of this dish
38:26ignite passions in the dining room?

39:21Chef Mike dissects the different desserts
39:24to see how the supermarkets make theirs,
39:28starting with the Sainsbury's one.
39:30There's quite a decent amount of mascarpone filling there.
39:35I like the amount of cacao on top.
39:37I want to have a closer look at this sponge
39:38because you can see just how much moisture
39:41is in this sponge.
39:43That's just too much.
39:45It's essentially a coffee syrup,
39:47and traditionally,
39:48you're supposed to dip your lady fingers
39:50into the syrup and then take them out.
39:53It's not supposed to be, like, sitting in the syrup.
39:56Taking a look at the little option...
39:59It's a thick layer of sponge,
40:01probably a little bit too thick for me.
40:04The mascarpone layer on top,
40:05that looks quite airy.
40:07You see lots of air bubbles,
40:09which means it's going to eat really easily
40:11because it'll be super light.
40:12They're quite generous with the calco dusting on top.
40:16So looking at this,
40:18it's actually got 16% mascarpone,
40:20which is very generous.
40:23Like, Sainsbury's only had 7%.
40:25And finally, the M&S food dessert,
40:28which has 10% mascarpone.
40:30It definitely looks like the premium option.
40:34You can see the beautiful individual lady fingers,
40:37that light, aerated mascarpone filling in the middle,
40:41and a generous dusting of cacao on top.
40:45There's less of that coffee syrup in there,
40:47and it looks more like a traditional tiramisu.
40:49But do our diners prefer the more authentic look?
40:55Upstairs, it's results time for the three tiramisu.
41:00Well, diners, the votes are in,
41:02and it's our closest call,
41:04which maybe proves that one man's tiramisu
41:07is another man's poison.
41:08I don't know.
41:09But the winner is
41:11tiramisu B.
41:17Which is from M&S,
41:21beating Sainsbury's tiramisu
41:24in second place with five votes,
41:27and Lidl's tiramisu in third place
41:29with four votes,
41:31which was tiramisu A.
41:34All three desserts are 500 grams.
41:37So first is B,
41:40M&S food tiramisu,
41:42the most expensive at four pounds per pack.
41:46Second is C,
41:48Sainsbury's classic tiramisu at three pounds 30.
41:52And A, the cheapest,
41:54came bottom,
41:55the Lidl Milbona desserts tiramisu at two pounds 69.
42:00So a closely run race in the dessert round,
42:03showing it's really a matter of individual taste.

42:50make sure it's bellissimo.
