Ismael Popoca is in charge of product development and procurement for NATIFS, or North American Traditional Indigenous Food Systems, which runs a food lab inside south Minneapolis' Midtown Global Market. He explains how they make their maple beans.

00:16It's the combination of all those flavors.
00:19There are certain dishes that improve over time, and I believe that the maple beans are one of them.
00:25The more you simmer them, the more the flavors get together,
00:29and at the end you have a better resort.
