A small town in WA's Great Southern was recently transformed into a culinary testing ground as part of an international fact-finding mission. The town of Borden was one of the locations chosen to host a team of chefs invited from around the world as part of a program dubbed ‘Lambassadors’.

00:22Sixteen chefs from 11 countries travelled to the town of Borden.
00:27The Lambassador program is sponsored by Meat and Livestock Australia
00:31and a one-off grant from the federal government as part of its transition away from live exports.
00:37I'm very proud to cook Australia lamb because it's a lot of passion from the farmers, from the producers
00:43and of course we're happy to serve the best lamb in the world to Chinese customs.
00:49Launched in Japan 10 years ago, Lambassadors was created to encourage international demand for lamb.
00:56First time in WA in this program. So yeah, everyone's so excited about the country of lamb in here.
01:06It also shines a light on lamb producers.
01:09It's extremely important for us to be able to get the word out to the rest of the world about how good lamb is
01:17and in that competitive red meat market.
01:21The chefs will travel across the country to learn the finer details of Australian lamb production and consumption.
01:27The focus on sustainability and the whole eating experience.
01:31You know, I think there's a huge difference. Everything is so focused on grading in the States.
01:35And here what I've found is it doesn't just stop at the grading, the carcass weight, the marbling score.
01:41There's further investigation on like what is the eating experience for the consumer.
01:46So the chefs were cooking to coincide with one of the state's largest meat processors, WAMCO's Annual General Meeting.
01:53And it's fair to say it was a true paddock to plate moment because most of the farmers here behind me helped to produce the lamb that they were eating.
02:02Except this time it just had a little bit of an international flair.
02:05And the animals here have an artificial flair.
02:06That takes place a lot of τοflair.
02:07And I think this is very important.
02:08Because it's very important for us to look at how it's been helping with that.
02:10And so it's a traditional flair.
02:12And then I think that's the way it is to turn off the scale of the reflection and make it a little flair.
