00:00We originally started in the early 1900s in Palermo in Sicily. It was my great grandmother
00:07and her husband and relatives. They started the business originally and due to the war
00:13and other aspects the business could no longer trade but the knowledge and the know-how did
00:19actually get passed on. As I'm the only son in the family I decided to take the challenge and
00:25open my own factory. We've grown gradually over the years we started the business in 2012
00:32and it's just grown organically it's done really really well and then we decided to enter the
00:36products into the Great Taste Award and this year we've won an exceptional eight stars. We're
00:41officially the most awarded pizza dough manufacturer in the UK now and yeah we've had loads of interest
00:48and it's just going really really well and we're gaining new accreditations now so we're going for
00:53B Corp certification. We should hopefully be receiving that within the next month or two.
00:58So tell us what what is it exactly that you do here? So we produce pizza dough but we produce
01:04a full range of pizza dough covering all aspects of pizza from Neapolitan to Detroit style pizza,
01:12Bega, Poolish, all the new and trending products that are actually becoming popular now. We manufacture all
01:20of them and yeah so we cover the full range and yeah most other companies they only produce like
01:28one or two different varieties but because we're specialists in what we do we cover the entire
01:32spectrum of pizza so that way we can satisfy every different person's wants and needs. And I believe
01:39there's something about the Burnley water that's a bit of a special ingredient. Yes yes so obviously
01:44Lancashire water um historically it's always been used like in the cotton industry and when you look
01:51at the actual um like the new like not nutritional aspect but I'd say like the PH and that it actually
02:00does mimic Neapolitan water as well so we've actually got some data from that as well and uh yeah so
02:07that's a secret ingredient because a lot of people don't realize that using purified Lancashire water
02:14actually enhances pizza dough and it helps with the fermentation level with other companies especially
02:22water from the cities it's just has foul taste order and it just doesn't reflect the product as good as
02:32I was purely based on our location
