A pizza slice shop from the team behind Pizza Cult is opening in Glasgow’s East End.

00:00My name is Dennis. I am the owner of Anxious Pete's and also the Pizza Cult.

00:04Anxious Pete's is our attempt at doing New York style pizza.

00:09So originally Pizza Cult was Neapolitan style, very much inspired by like Naples pizza,

00:16where this is obviously very much inspired by New York thin and crispy.

00:18We've experimented at the Pizza Cult before with doing slices and stuff,

00:21but it's such a small unit and the oven's designed for Neapolitan rather than New York.

00:24We made eight batches of dough yesterday just with different ingredient amounts

00:28and like different amounts of oil, different amounts of sugar, different amounts of malt.

00:33Obviously the dough is very different to Neapolitan dough, so we've been in a lot of experimentation.

00:37And then we made it all yesterday, some of it in the fridge, some of it's out of the fridge,

00:41and then we're in today testing it all out and seeing what works and what doesn't work.

00:45Again, different cheeses, different tomatoes, different hard cheeses, different herbs and stuff.

00:50So we're just going to try different variations of everything and then whichever one comes out

00:54best today will then make tonight ready for tomorrow to open.

00:57I just liked the idea of having a cool neighborhood slice shop like you see in New York and you see

01:02on TV and stuff.

01:02We haven't got seats right now, but eventually we're going to have seats and eventually it's

01:05going to be like kind of like a third place where you come, you can have a slice pizza,

01:09you can have something to drink.

01:11We're getting an arcade machine in soon as well, it's on its way.

01:14So this is a cool place that you can hang out.

01:16That's what I've always wanted to own.

01:17Yeah, so the Barres is just like there's a good community down here now,

01:20especially with the food guys here.

01:21There's so many different food places here now.

01:22There's like pizza, there's burgers, there's Greek stuff,

01:25there's the Chrombologist, but there's wings, there's mac and cheese, there's tacos,

01:30all these kind of crazy food things.

01:33And yeah, I just think I didn't keep adding to it.

01:36And they've got the bowel buns and monster munchies as well.

01:38Like there's so many different things here that I just thought having Neapolitan is great,

01:43but I think it needed a slice shop as well.

01:45But I started here down at this pizza cult just over two years ago now.

01:48It was two years in May.

01:49I was the only food person, apart from like those new bakeries and stuff,

01:52I was the only food person doing hot food over there.

01:54And they had monster munchies and Hutch in the main building, and that was it.

01:59So it was just three.

01:59And now there's like, I don't know, 20?

02:02So it's crazy.

02:03And this made the market way more alive.

02:06When I first started, the market was a lot quieter than it is now.

02:08On weekends now, we used to just go through like,

02:12on weekends we first started like two or three bags of cheese a weekend.

02:14And now we're going through like boxes of cheese this weekend.

02:16It's crazy how big it's grown.

02:20And it's still developing as well.

02:21So I think there's still, there's going to be more food coming down.

02:24But the thing is, the food guys bring the punters down,

02:27and they see like all these other amazing things that are here.

02:29So like, you know, different clothes shops and jewelry shops and all that kind of stuff.

02:33So we are on 25 Kent Street.

02:35So we're like right in the very, very middle of the barra.

02:38So like if you're walking through the center of the barra, we're on the left.

02:40In between the Greek Yeros Place and the Trader's Tavern.

02:44And we are opening 15th of August at four o'clock.

02:47We are planning to open for slices and 14-inch pizzas.

02:51Yeah, fingers crossed.

02:52We've still got a lot to do.

02:53You can see in there now, big Ron doing some more joinery stuff.

02:55The plumber's coming again tonight to finish the sinks.

02:58But we should be on target, I think.
