My name is Dennis. I am the owner of Anxious Pete's and also the Pizza Cult.

Anxious Pete's is our attempt at doing New York style pizza.

So originally Pizza Cult was Neapolitan style, very much inspired by like Naples pizza,

where this is obviously very much inspired by New York thin and crispy.

We've experimented at the Pizza Cult before with doing slices and stuff,

but it's such a small unit and the oven's designed for Neapolitan rather than New York.

We made eight batches of dough yesterday just with different ingredient amounts

and like different amounts of oil, different amounts of sugar, different amounts of malt.

Obviously the dough is very different to Neapolitan dough, so we've been in a lot of experimentation.

And then we made it all yesterday, some of it in the fridge, some of it's out of the fridge,

and then we're in today testing it all out and seeing what works and what doesn't work.

Again, different cheeses, different tomatoes, different hard cheeses, different herbs and stuff.

So we're just going to try different variations of everything and then whichever one comes out

best today will then make tonight ready for tomorrow to open.

I just liked the idea of having a cool neighborhood slice shop like you see in New York and you see

on TV and stuff.

We haven't got seats right now, but eventually we're going to have seats and eventually it's

going to be like kind of like a third place where you come, you can have a slice pizza,

you can have something to drink.

We're getting an arcade machine in soon as well, it's on its way.

So this is a cool place that you can hang out.

That's what I've always wanted to own.

Yeah, so the Barres is just like there's a good community down here now,

especially with the food guys here.

There's so many different food places here now.

There's like pizza, there's burgers, there's Greek stuff,

there's the Chrombologist, but there's wings, there's mac and cheese, there's tacos,

all these kind of crazy food things.

And yeah, I just think I didn't keep adding to it.

And they've got the bowel buns and monster munchies as well.

Like there's so many different things here that I just thought having Neapolitan is great,

but I think it needed a slice shop as well.

But I started here down at this pizza cult just over two years ago now.

It was two years in May.

I was the only food person, apart from like those new bakeries and stuff,

I was the only food person doing hot food over there.

And they had monster munchies and Hutch in the main building, and that was it.

So it was just three.

And now there's like, I don't know, 20?

So it's crazy.

And this made the market way more alive.

When I first started, the market was a lot quieter than it is now.

On weekends now, we used to just go through like,

on weekends we first started like two or three bags of cheese a weekend.

And now we're going through like boxes of cheese this weekend.

It's crazy how big it's grown.

And it's still developing as well.

So I think there's still, there's going to be more food coming down.

But the thing is, the food guys bring the punters down,

and they see like all these other amazing things that are here.

So like, you know, different clothes shops and jewelry shops and all that kind of stuff.

So we are on 25 Kent Street.

So we're like right in the very, very middle of the barra.

So like if you're walking through the center of the barra, we're on the left.

In between the Greek Yeros Place and the Trader's Tavern.

And we are opening 15th of August at four o'clock.

We are planning to open for slices and 14-inch pizzas.

We've still got a lot to do.

You can see in there now, big Ron doing some more joinery stuff.
