Cinnamon Roll Muffins

00:00Today we are making a twist on the traditional cinnamon roll. Cinnamon roll
00:05muffins. They're easy, delicious, picky eater-proof, and the entire family is
00:10gonna love them.
00:17Hi I'm Leanne from yourhomebasemom.com and with these cinnamon roll muffins you
00:22get all the goodness of a cinnamon roll but you don't have to deal with yeast.
00:26The other upside of these cinnamon roll muffins is they come together quickly
00:30and easily because there is no rise time like with a regular cinnamon roll. Let's
00:35get started. Okay we're gonna start with the muffin first. Now we want to preheat
00:40our oven to 375 degrees Fahrenheit and prepare our muffin tin. This recipe makes
00:4512 muffins and I like to use a cupcake liner a muffin liner for my muffins. If
00:51you don't have any you can also just use some nonstick baking spray to coat the
00:56muffin tin with. Alright so for our muffin batter I'm gonna mix it just in a bowl
01:00by hand. You can totally put it into a stand mixer if you want. We're gonna use
01:05a quarter cup of melted butter. Now the important thing about the butter is to
01:09make sure that it's not too hot. Okay because we're adding an egg in in with
01:13this we don't want the butter so hot that it's gonna start to cook the egg. So
01:16if it gets too hot when you melt it just cool it down a bit. Then we're gonna add in
01:21our egg and a cup of milk. I'm using 2% you can use what you have on hand and if
01:30you don't have milk you could even add in water if you need to. Alright we're gonna
01:36mix that together and then we'll add in our dry ingredients. Alright for our dry
01:43ingredients we're going to use a tablespoon of baking powder, a half a teaspoon of
01:50salt, a third of a cup of granulated sugar, and two cups of flour and I just
01:58use all-purpose flour. Then you want to mix this together but you only want to
02:04mix it together just until you have all your ingredients combined to all the dry
02:09you don't see any dry flour in it. You don't ever want to over mix a muffin
02:13because when you over mix a muffin it makes for a tough muffin and we want a
02:17nice tender muffin. So just mix it until just combined. If you're using a stand
02:22mixer go ahead and just kind of pulse it so you don't get it over mixed. You know
02:28it's okay if there are some lumps in your batter that's totally fine. Alright next
02:32we're gonna mix together our cinnamon mixture and this is what it's gonna get
02:35swirled in to the muffin. We're gonna start with a cup of brown sugar, I have
02:41three tablespoons of melted butter, and three teaspoons of ground cinnamon. I'm just
02:50gonna mix all that together and it'll kind of be like a sandy texture to it.
03:00Alright so once we have our batter mixed up and we have our brown sugar mixture
03:05together we are going to take half of that brown sugar mixture and add it into
03:10our muffin batter and then we're going to just gently stir this into the batter. We
03:19don't want to totally incorporate it we kind of want it to be streaky so just
03:24gently kind of a folding motion mix it in there just like that. So once our batter is
03:36mixed up we're ready to fill our muffin tin. I'm going to use a scoop this scoop
03:40holds about a quarter cup. You can use a quarter cup if you want but the scoop
03:44makes it super easy. So you want to fill each one with a quarter cup of batter.
04:01So after they're filled we're going to take the remaining half of our brown sugar
04:06topping and we're just going to with a spoon sprinkle it on top the remaining
04:11amount on top of the muffins before they go in the oven.
04:20Alright they're ready to go in the oven. 375 degrees Fahrenheit for 12 to 15 minutes.
04:25You'll be able to tell they're done when you would lightly just touch on the
04:28surface of the muffin and it bounces back. Alright so while our muffins are
04:33baking we're going to mix together our glaze which we're going to drizzle over at
04:36the top of the muffin. We're going to start with a cup of powdered sugar. I've
04:40got a tablespoon of milk. You can use half and a half. You can use whipping
04:44cream. Whatever you've got. And we're also going to add in a half a teaspoon of
04:50vanilla. Now you may find you need a little bit more liquid because you want to be
04:58able to get a nice drizzling consistency and I can tell already I'm going to need
05:02some more milk in here. Okay but it's always better to start. Just start with a
05:05tablespoon because it's much easier to add more than if you've got too much in.
05:10So we're just going to add in a little bit more at a time. Probably about a
05:13teaspoon at a time until I get that nice consistency.
05:20Next time you have that craving for a cinnamon roll try a cinnamon roll muffin
05:34instead. Less work, less time, and just as delicious. Now for the taste test.
