00:00Pumpkin spice and everything nice, that is what Pumpkin Crumb Cake is made from.
00:04It's a tried and true recipe that people have been loving,
00:07and I want to show you how to make this comfy cozy fall dessert today on The Stay At Home Chef.
00:12This moist crumb cake with a buttery crumb topping is unreal.
00:16Even if all things pumpkin spice aren't your thing, let me introduce you to the pumpkin side. Welcome!
00:22To get started, preheat your oven to 350 degrees Fahrenheit,
00:26and then using a 9x9 baking dish line it with parchment paper or go ahead and grease that.
00:31To mix this all together I'm going to be using a stand mixer,
00:34but using a hand mixer in a great big bowl will work great too.
00:38Into the large mixing bowl add 3 4ths a cup of melted butter that is cooled down, you don't want that hot,
00:441 1⁄2 cup of white sugar,
00:45and 1 1 4th a cup of brown sugar,
00:48and mix that for about a minute until it's well combined.
00:51Then add in 2 eggs and mix those alongside the sugar and butter for about another minute.
00:56Then using 1 15 ounce can of pumpkin puree add that to the mixture,
01:01along with 2 tablespoons of sour cream,
01:04and 1 1⁄2 teaspoons of vanilla extract.
01:06Go ahead and give that a mix until it's well combined.
01:09Make sure to scrape the edges and sides of the bowl so that that is evenly mixed.
01:14Then in a separate bowl we're going to add in 1 1⁄4 cups of flour,
01:18along with 2 teaspoons of pumpkin pie spice,

01:25and it is worth doing.
01:26Then continue adding 3 4ths a teaspoon of baking soda,
01:303 4ths a teaspoon of baking powder,
01:33and 1 1⁄2 teaspoon of salt to that bowl.
01:35Whisk those dry ingredients together until they're well combined.
01:39Then gradually add in the dry ingredients to the wet ingredients.
01:43Make sure you don't over mix this.
01:45We've mixed this for about a minute and that is looking perfect.
01:49Now we're going to take that batter and spread that evenly into our prepared baking dish.
01:54Slide that aside and let me show you how to make the best ever crumb topping.
02:00To make that crumb topping, in a medium sized bowl add in 1 cup of flour,
02:043 4ths a cup of brown sugar that has been tightly packed,
02:072 tablespoons of white sugar,
02:09and 1 teaspoon of pumpkin pie spice.
02:11And then add in 6 tablespoons of melted butter,
02:15and continue to mix that with a fork until it's evenly mixed and the buttery crumbles have formed.
02:23Then sprinkle the crumb topping over the pumpkin cake batter.
02:29Make sure that's spread out evenly,
02:31and then we're going to bake this in our preheated oven for 45 to 55 minutes,
02:36or until a toothpick inserted into the center comes out clean.
02:40Once it's finished cooking and has cooled completely,
02:43you can add an additional glaze to it which not only makes it look even more delicious,
02:47but it adds just that perfect finishing touch.
02:50The glaze is simple to make.
02:51In a small bowl add in 1 1⁄2 cup of powdered sugar,
02:55add in the milk based off of how thick or thin you want that glaze,
03:00and then whisk it together,
03:02and there you have a very delicious simple glaze.
03:05Drizzle that over your pumpkin crumb cake and you are ready to eat.
03:08Then mix it together and mix it together.
