Grandma's Original Sweet Potato Pie

00:00Hi everybody, this is Ms. Penny with one of Ms. Penny's favorite foods again.
00:11This is an old, old recipe, probably as old or older than the peach cobbler.
00:18Again, it's my grandmother's recipe, and that's over 100 years old, just her.
00:25And this is her mother's recipe. So this is a sweet potato pie.
00:30This is how my grandmother made it, Mabel Clara Parks, born in 1901 and died in 1974.
00:42This is her recipe, simple, pure ingredients. Here we go.
00:48I have got in this bowl, I boiled, she boiled her sweet potatoes whole.
00:55So this is four boiled sweet potatoes whole, and they're done. They're soft, but they're whole.
01:03This keeps all the flavor of the sweet potato in here.
01:06Immediately drain them. As soon as they're done, immediately drain them and skin them.
01:13The skin comes off really easy.
01:15Four whole sweet potatoes. It'll make two whole sweet potato pies the dish.
01:21Okay, now to that we're going to add our ingredients, and then we're going to whip it.
01:26So, first I break it up just a little bit with a spoon, or a potato masher.
01:32Either one you want to use, it doesn't really matter which.
01:35Just break it up a little bit so that all the ingredients can get into it before you whip it.
01:45To that, we are adding one stick of butter. I use a half a stick of butter per pie.
01:53So, usually at holidays I'm making eight pies. So, that's a lot of butter.
02:03But I use one half stick of butter per pie. So, one whole stick of butter goes in there.
02:12And put it in while your sweet potatoes is hot.
02:15It's very important to make your sweet potato custard while the sweet potatoes are piping hot.
02:21It does make a difference.
02:23To that, we are adding one cup of evaporated milk.
02:29You can use any brand of evaporated milk, but evaporate it.
02:36Not the sweet condensed milk. No. Evaporated milk.
02:41The whole cup goes in here.
02:46Sweet potato pie is a custard pie.
02:50And custard means cream and eggs. That's what custard means.
02:55And sweet potato pie is a custard.
02:59To that, we are adding one and a half cups of sugar.
03:08Now, you would think with calling it sweet potato pie, the sweet potatoes would need less sugar.
03:14But it's not true.
03:16Because sweet potatoes, for some reason, absorb sugar.
03:21And when they absorb the sugar, it doesn't make it that much sweeter.
03:27So, you really have to add the same amount of sugar as if you were using a berry or something that weren't sweet.
03:35You'd still have to add that much for your sweet potatoes, even though they say sweet potatoes.
03:43It absorbs the sugar.
03:45It's a chemistry thing.
03:47So, a cup and a half of sugar.
03:50A whole can or one cup of evaporated milk.
03:54To that, we're going to add four eggs.
03:57Let me put it in the mixer and then we'll continue.
04:01Oh, let's get out our nutmeg.
04:04Because we're going to need a teaspoon of nutmeg.
04:19For these pies, I'm going to use a teaspoon and a half.
04:25But that's just me.
04:28So, I used a teaspoon and a half.
04:33Because it's quite a bit of, quite a bit of custard.
04:37So, now we're going to move it over to the mixer.
04:40And we're going to start not too fast.
04:49We don't want it to splash.
04:51And it's going to look like that.
04:54You want it a thick custard, but you want it a pourable custard.
04:59Because you are making a custard.
05:03This is a, sweet potato pie is a sweet potato custard.
05:08Slow your roll, slow your roll.
05:14Okay.
05:15Alright.
05:16To that, I am adding a tablespoon of pure vanilla.
05:29And, of course, you know I use McCormick.
05:39Alright.
05:41Now we're going to put in our four eggs.
05:47I use two eggs per pie.
05:50So, four eggs go in.
05:52Again, this is a custard.
05:55This is how my grandmother made it over a hundred years ago.
05:58And I am still making it the exact same way.
06:01And it calls for two eggs per pie.
06:05Half a stick of butter per pie.
06:09And at least two thirds of a cup of sugar per pie.
06:21And that's the last egg.
06:23That's four eggs.
06:24Now I'm going to turn it up a little bit.
06:28Because I need for it to whip.
06:31The thing about a sweet potato pie custard is you may have a few small lumps.
06:42But because the sweet potatoes are fully cooked, and as it bakes, those lumps will dissolve.
06:49And the good thing about the mixers are it will catch your strings.
06:56So this is sweet potato pie custard.
07:03And this is the custard for the sweet potato pies.
07:06Again, over a hundred years old.
07:08This is exactly the recipe my grandmother used.
07:11And her mother who was a slave before her.
07:16They made their own vanilla flavoring with brandy and vanilla beans.
07:23They made their own butter.
07:27Which I, to this day, love.
07:30The closest that comes to it is the Amish butter.
07:33But this is her recipe.
07:36Okay.
07:37As you can see, all the strings.
07:50So we're going to put that there to catch that.
08:07We're going to put this back over here.
08:11With this.
08:16And this is the way your sweet potato pie custard should look.
08:26That's how it should look.
08:28It should not be thick like mashed potatoes.
08:32It should have some thickness.
08:37But this cream, eggs, and butter should give it this consistency.
08:43When it comes out of the oven, it will be fully formed, light, sweet, and perfect.
08:51Okay, so now we're going to, we're going to fill up our pie shells.
09:00We're going to put it on a 350 degree oven for approximately one hour.
09:08But when I come back, I will be able to tell you exactly how long it baked.
09:29Alright.
09:30That is an unbaked sweet potato pie.
09:34My grandmother's recipe over a hundred years old.
09:39And it's made exactly the way she did.
09:41As close as I can come to the original ingredients.
09:45Alright.
