Award-winning chef Craig Rogan has returned to the Leeds food scene with bold Eastern Mediterranean restaurant The Banksia inside the new Hotel Indigo.

00:00So my name is Craig Rogan, I'm Head Chef at The Banksia Leeds, which is located at the Hotel Indigo.
00:05So The Banksia, so obviously brand new restaurant in Leeds City Centre.
00:09We offer small plates, influenced by Eastern Mediterranean cooking,
00:13a cuisine that I've really loved growing up and memories of going on holiday in Turkey a lot when I was a child.
00:19So the concept of Banksia is Eastern Mediterranean cooking.
00:22Got a few signature dishes on the menu, one being our caverma, which comes sort of with two choices,
00:28you can have it with chicken or lamb, which is a lovely dish.
00:31We've also got the lochma, which is a donut sort of soaked in honey and coated in pistachios and served pistachio cream.
00:37As I said, big influence from sort of the Eastern Mediterranean, Turkey being the main one,
00:41but using influences from around that whole area.
00:44So so far it's been going great. Obviously, first couple of weeks was pretty full on.
00:47And now that we're sort of fully open, it's just about getting the word out
00:51and just building our reputation as a restaurant and being a great destination for lunch and dinner in Leeds.
