00:12When I mentioned if they ever used vinegar for their pickled onions, they gave me a side eye
00:16and said, no, this is the only way we do it. We cut up three juicy limes and it's not going to
00:20look like it's going to be enough, but I promise you it'll work. This is all the lime juice you'll
00:25need. Last thing you need is about a tablespoon of salt. Become an onion cocktail shaker. Changed
00:30out the ones that I have in my fridge and it had been about two weeks and they were just fine. So
00:35you can make them ahead and keep them around. These pickled onions are brighter and crunchier
00:39than your standard hot brine with vinegar pickled onion. Not loud.
