00:07stand mixer and let it do the work. You're gonna want to do this with the chicken warm so that it
00:10shreds nice and easy. Recipes such as the Serious Eats Buffalo Chicken Parathas, I think this is the
00:16perfect consistency. If you take it any further, it's gonna turn into floss. Our second method is
00:20manual, using forks or hands. The reason why I like this is I can get really, really in and figure
00:26out what shape and size I want. So if you want some variation, you want a lot of control,
00:30nothing's gonna be better than hands. And as a food stylist, control is the name of the game.
