00:02I am gonna show you how you can make them at home.

00:12I like to measure my flour,
00:13scooping with one measuring cup and filling the other.
00:17That way I don't overpack my flour.
00:20It makes my pancakes dense.
00:22When you fill it, you're gonna tap it
00:24and then remove any excess from the top
00:27and add it to your bowl.
00:29In fact, I was born and raised in Spain
00:31and when I came to the States in my teens,
00:33the first time I ever had pancakes was at IHOP.
00:37So they're super memorable
00:39and I'm a big fan of their fluffy texture.
00:43So the flour, how you measure it, makes a huge difference.
00:46Now IHOP batter is on the sweet side,
00:49so it does have sugar.
00:51We're gonna add our granulated sugar to our flour bowl.
00:54I'm also adding baking powder and some baking soda.
00:59Also a little bit of salt.
01:00You wanna mix your dry ingredients really well.
01:03Now this recipe has both baking powder and baking soda.
01:06One quick tip is to look for baking powder
01:09that is aluminum free.
01:11Believe it or not, they do put aluminum in baking powder
01:13and it makes a huge difference
01:15because it leaves an aftertaste.
01:17Now these are combined.
01:18We're gonna make space like a well in the middle,
01:20so we can add our wet ingredients.
01:23IHOP's pancakes have been around since 1958,
01:26which means that they have that iconic diner pancake taste
01:30that can only be achieved by using buttermilk.
01:33So let's add our buttermilk directly into our bowl.
01:37And then I'm gonna add my eggs.
01:41And then with a fork, I'm going to break up the eggs.
01:44As you can see, I'm just whisking them.
01:46I'm not even mixing my flour into my batter yet.
01:49And then I go from the outside of the bowl in
01:52and I add the flour.
01:54Now you want to mix it until there's no visible flour left.
01:58When you mix pancake batter,
02:00you don't wanna go to town and mix it real hard.
02:03You would just wanna gently fold everything in.
02:06And now they have no more visible flour
02:08and it looks pretty even.
02:09My final step is to add the melted butter
02:12and we're just going to gently mix it.
02:15As you can see, it's not a smooth batter.
02:17It's a little bit lumpy.
02:19This is what you want.
02:20Now you wanna use the largest nonstick pan that you have.
02:24Or if you have a griddle, use that.
02:26We're gonna get the pan hot over medium heat.
02:28But at the end of the day,
02:29they're gonna cook over medium low.
02:31The temperature gives them an iconic golden exterior.
02:34This batter's been sitting for about five minutes.
02:36You want it to look airy, just like this.
02:39My pan is nice and warm.
02:41So I'm going to pour a generous,
02:43and I mean generous, third of a cup scoop,
02:46right in the middle.
02:47I'm not gonna grease it or anything.
02:49And I'm just using my scoop to spread the batter on the pan.
02:54IHOP's pancakes are a generous five inches.
02:57So we wanna do that.
02:59Now if you're cooking these for a crowd,
03:00you may wanna grab a baking sheet and place it in the oven
03:03at about 200 degrees Fahrenheit to keep them warm.
03:07You can also make these ahead of time.
03:08These pancakes are rather large,
03:10so they're gonna take about two to maybe almost three minutes
03:12on the first side.
03:14One way you know they're ready to be flipped
03:15is because the edges are all gonna look defined,
03:18but also mostly your entire pancake
03:20is gonna have bubbles throughout.
03:23Then you're gonna grab the largest spatula
03:24that you have and flip them over.
03:26That is one perfect IHOP pancake right here.
03:29Hot off the pan, you can remove the pancake and plate it,
03:33or you can bring it from the pan straight into your oven
03:37and keep it warm until you're ready to serve them.
03:39Sometimes after a couple pancakes,
03:41the pan's gonna be really hot.
03:42So at that point, take the pan to the stove
03:45and run it under some cold water
03:47to bring down the temperature.
03:48Then you return it to the stove
03:49and continue making your pancakes.
03:51I even pulled out the griddle and cooked the rest of them
03:54so I could finish this entire batch with you.
03:57And because I'm extra, I also whipped some butter.
04:01I took a pound of room temperature butter
04:03and whipped it, and the result is gonna be
04:06that incredible butter that we all know from IHOP.
04:09So let's plate these up.
04:11Grab some whipped butter, put it on top.
04:18Check these out, they are fluffy.
