00:00One of my favorite bread is for sure focaccia. It's very easy to make it gluten-free
00:06and it's perfect to make sandwiches. Let's see how. We will start by activating our yeast
00:14with a little bit of sugar and water. Then we mix all together the flowers, the psyllium asks
00:22and salt. Here I'm using a red lentils flour but you can use it also a chickpea flour or soy flour
00:30instead. Then we add all the water together and the mix of activated yeast.
00:41Transfer it to a bowl and then you give a good mix with the spoon or you can do it with the stand
00:47mixer until you reach this texture. Once you have achieved this you can add the olive oil. Choose a
00:56good olive oil of course to have a good taste and then you cover your bowl and you put it in a warm
01:03and dry place to rest. I put mine in the turned off oven with the light on. We will leave it like this
01:13for three hours. Then take a baking sheet, line it with baking paper and grease it with some olive oil.
01:22In a small bowl whisk together equal parts of olive oil and water with a good pinch of salt. Give it
01:31a mix and set it aside. Take your dough and transfer it to the baking sheet. Grease your fingers with a mix
01:40of olive oil and water and start flatten and shaping your dough. You can give it the shape that you want,
01:48a circular shape or a rectangular shape. But make sure to achieve the same thickness that you see in this video.
01:58Continue to grease your hands as you go.
02:00When you have achieved the shape that you desire, pour the leftover mix of water and oil in the little
02:12holes that you have created with your fingers. This will create an extra layer of deliciousness on top of
02:22our focaccia. Optionally, you can also sprinkle it with some rosemary leaves or any other spices that you like.
02:32Leave the focaccia like this for one hour and then preheat your oven. The oven must be preheated at 430 degrees.
02:43Bake the focaccia in the hot oven for 30 minutes or until it looks golden as in this video on top and then
02:54take it out of the oven and brush a little more oil on top. Transfer it to a wire rack so that you can
03:04breathe and let it cool completely before you slice it. I will leave you in the post all the ingredients
