00:00Today we are making gluten-free fried donuts. We will see the sourdough based
00:06version but I will leave you the receipt for the yeasted version in the post.
00:11Make sure your sourdough starter is active and fed. We will use 1 third of a
00:17cup of it. Then we add 1 cup of milk. You can use regular milk or soy milk, the
00:25unsweetened kind. Then we add 2 tbsp of psyllium asks. We give it a good mix and
00:35we let it rest for a few minutes.
00:47Then we start to fold in our flowers. We are using 1 cup plus 1 cup
00:55of rice flour and then 3 quarters of a cup of cassava flour. For this one you
01:05can use also tapioca starch or potato starch in replacement.
01:12At last we add 1 quarter of a cup of brown sugar and also a good pinch of salt.
01:33We give it a good mix until the dough starts to come together and looks a bit like a crumbly
01:43scent. At this point we add 1 whole egg, 1 tbsp of vanilla extract and then the zest of a whole
01:55lemon. So you grate the yellow part of the lemon. You can also do this with an orange if you like.
02:01At last 3 tbsp of melted butter. And we give it another good mix. This time the dough has to come together,
02:13be smooth, have no lumps and be really silky on top.
02:19If you are kneading with a spoon or by hand, this will take several minutes. If you are kneading in a stand mixer, it will take 2-3 minutes.
02:43When the dough starts to look like this, you can cover it with a cling film or a lid and you let it rest in a dry and warm place for about 1 hour.
03:08When the resting time is over, we take baking sheets, we cover it with parchment paper and we slightly grease it with a little bit of seeds oil.
03:24You can do this also with melted butter if you want. Make sure that all the paper is evenly coated and then transfer the dough onto the baking sheet.
03:38Do it gently. Do it gently so it doesn't deflate and flip it one or two times on the parchment papers so that it is fully coated with a thin layer of oil.
03:56This will help us in the shaping.
04:00Then we take a rolling pin and we roll the dough until a thickness that I will show you in just a second.
04:06Keep in mind that we will let the doughnuts rise a second time before frying them.
04:16So the thickness must be more or less half of what you want to achieve when frying your doughnuts.
04:28Once you have achieved the thickness that you like, you can start to cut out the shapes of the doughnuts.
04:45So I'm using a bowl, you can use whatever cutter you have of the right shape and dimension you want.
04:53And you cut out all the dough in the shape of your doughnuts.
04:59And once you have shaped all your doughnuts, we remove the leftover of the dough.
05:08You can help yourself with the knife if needed.
05:11Then I use a second cutter to cut the hole in the middle.
05:16You can decide if you want them with a hole or you want the full doughnuts without holes.
05:22I personally find that with the hole in the middle, they fry better and more evenly.
05:41Once you have shaped all your doughnuts, I like to cut the parchment paper around each doughnut.
05:49This will make it more easy to fry them and to slide the doughnuts into the frying oil.
06:00Once you have cut a piece of parchment paper for each doughnut, you let them rest for another hour.
06:08Then we heat our frying oil.
06:11Check with a toothpick if the oil is making us uncomfortable.
06:15And then slide one doughnut per one doughnut into the frying oil.
06:19After a few seconds, you will be able to remove the parchment paper with the tong.
06:24And you let the doughnut fry for at least one minute to two minutes on the first side.
06:31When it looks golden like this, you can flip them and cook for another 30 seconds to one minute.
06:38And then you can transfer them on a parchment paper to absorb the excess of oil.
06:45You continue to fry until you have fried all your doughnuts.
06:51And then you let them cool a bit down and then you can proceed with your fillings or your topping of choice.
