00:00Today we will see how to make these teff wraps. They cook on the stove, no need to turn on the
00:09oven and they are very soft and flexible, ideal to make burritos or wraps. The method is the same
00:19as we have seen in our rice flour wraps. So we take half a cup of teff flour plus a quarter cup
00:28of potato starch and we cover it with one cup of hot water. Make sure it's boiling hot water. Then
00:39you mix it with a spoon and make sure that you achieve the same final texture that I get. I add
00:52a pinch of salt and a tablespoon of olive oil and I mix it again. Teff flour in a few seconds will start
01:03to gain some stretch and the dough will come together. If this is not the case for you, please consider
01:12adding one tablespoon of teff flour. This can depend on how finely milled the flour is. So the final
01:22texture you want to achieve is this one, very smooth and the dough looks stretchable. We will divide this
01:34dough into three parts into three parts and make three little balls. Then starting with the first ball,
01:44we lay it between two pieces of baking paper and then we roll it out as thin as we can.
01:54Move the rolling pin in different directions. Move the dough underneath the rolling pin and continue to roll until it's very thin.
02:10Then remove the first piece of paper and if you want a perfect shape, you can cut it with the lid of a pot,
02:20but this is not necessary. Remove all the scraps around your round shape and final step, we poke some holes
02:31with the fork all over the surface. Then we heat a flat pan, non-sticky until very hot and we flip our tortilla on it.
02:45After a few minutes, two or three, you will see that the piece of parchment paper come off easily.
02:52That's the time to flip also the tortilla. We let it cook for another two to three minutes
02:59until some some very nice brown spots appear under it. This is the sign that they are ready.
03:09For all the time that you work the rest of your dough, keep your wraps under a towel so they
03:17stay soft and then you are ready to thin it. Today I fill mine with some guacamole, some grilled tofu and
03:28some shiso peppers that were clipped before. Let me just show you how soft and easy to wrap they are.
03:38I hope you will make this recipe and let me know if you have any questions in the comments.
