00:03lobster avocado salad to celebrate.

00:14With this salad, I really wanted to have the heirloom tomatoes
00:18like have their moment.
00:20Let's give her a slice.
00:21How thick are we slicing these?
00:22It really depends.
00:24You want them to like have some meat to them,
00:26kind of like a caprese.
00:27Slice them.
00:28They serve and it's like an inch of tomato.

00:33Actually, sometimes I do that with my caprese.
00:35With a, cut them a quarter inch thick.
00:39Again, like why can't I just be normal?
00:42The first layer and then we'll put lettuce on
00:44and then layer the tomatoes as we build.

00:48We're going to dress the lettuce in a bowl on the side
00:51before we transfer it to the platter
00:53so that every single piece of lettuce
00:55is coated in a little bit of dressing.

01:00If I'm at my desk and I have to like manipulate the dressing around,

01:06I'll do a little squeeze of lemon to thin it out
01:09because you know also another pet peeve of mine
01:10is like when a caesar is too thick and it like won't coat.
01:16Now we're just going to kind of throw them in.

01:37out in the Hamptons, but I'm a lobster purist.
01:41I don't think we should be putting lobster
01:42with hard boiled eggs and bacon and cheddar cheese.
01:45Personally, I think if you're going to splurge
01:47for something like lobster, you really want it to be the star.
01:50Avocado is delicious, but it's doesn't have,
01:52it needs salt and it needs lemon and it needs some olive oil.
01:56So we're going to start like layering it in.
