Fresh pasta and Italian wine at Glasgow’s Banca Di Roma

We spoke to head chef and head sommelier at Banca Di Roma in Glasgow’s Royal Exchange Square to see how they make pasta dishes from scratch and discover more about wine pairings.

It's all fresh, all homemade.

The first step you take into the building,

you just know straight away that you're in somewhere special.

Okay, today I introduce to you my very popular dish on the menu.

It's very popular and I have here seafood fettuccine.

And it's a mix of seafood.

It's clams, mussels, scallops, prawns, squid.

And here we have a tortelli.

Always I keep the tortelli in my menu.

It's a very nice combination between burrata, ricotta and nduja.

Plus with buttered sage, hazelnuts and balsamic vinegar.

And then we've got the wines.

We've got a materano, so it's from Lazio region.

Both the wines, they are indigenous to that region.

Materano is a really fresh, zippy, fragrant wine.

It has a lot of these aromatic herbs to it, which goes really well with that kind of fresh seafood.

And personally, I think it just goes fantastic with the sauce they have as well.

And it's just something that you will not find anywhere else.

We've imported it specially for us, so you will not find it anywhere in Glasgow.

Most likely not in the United Kingdom either.

So I think with that as well, it's such an interesting choice to have.

And then along the right, you've got a more familiar grape, a Cabernet Sauvignon,

which is that more full-bodied, that rich, a little bit more herbal, a little bit more balsamic to it.

And it goes really well with the kind of ventusia, that slight bit of spice from the Tortelli.

And again, you know, these are people who have been making wines for hundreds of years,

but are just very well-known.

And I think bringing them up to, you know, what we can show and how they can taste

is a really great experience to have for customers and for me to sell.

I'm in Banco di Roma. It's probably Italian food.

This beautiful restaurant.

And now I start to building the new menu.

It's all, everything fresh, homemade pasta.

And the thing I suggest Banco di Roma, because everything we do here,

all the production from the past, everything is here.

It's a big menu, but that is, I think, the difference,

where the tasting, everything, it's because it's all fresh, all homemade.

So I think when it comes into, the first step you take into the building,

you just know straight away that you're in somewhere special.

I think it's an iconic building. People know it from the outside.

And I think everyone still gets wild when they come in through the inside.

And I think for me personally, that reflects on the food and obviously on the wine.

You know, it comes hand in hand.

For us, you know, we obviously specialize in Italian wines.

And maybe not just your basic ones that you know and have tried before,

but the ones that are indigenous to different varieties, different regions.

And I think something that is special.

And I think, you know, the amount of effort we make on making our food taste great

is what we should be chasing, choosing the right wines for the right food.
