It is a Kutch | ભુજ ના ફેમસ મરચાં પાંવ | भूज के फेमस मिर्ची पाँव. This is a popular and chosen variation of mumbai famous vada pav, which is very popular in Bhuj in Gujarat. Here the stuffing of Green Chilli is prepared in such a way that, it enhances the overall experience of entire Mirchi Pav. If you try this once, you will literally fall in love with this.
½ tsp Ajwain, अजवाइन 1 tsp Dry Coriander, सुखा धनिया ½ tsp Saunf, सौंफ 100 grams Papdi gathiya, पापड़ी गाठिया 1.5 tbsp Oil, तेल 2 tsp paste of Green Chilies, Ginger हरी मिर्च और अदरक की २ चम्मच पेस्ट 1 tsp Red Chilli, लाल मिर्च ¼ tsp Turmeric, हल्दी ½ tsp Coriander-Cumin, धनिया-जीरा ½ tsp Garam Masala, गरम मसाला ½ tsp Salt, नमक ½ tsp Amchur, आमचूर 3 tsp Water, पानी 1 tsp Sugar, चीनी Chopped Coriander, हरा धनिया
Bigger Size Green Chilies, हरी मिर्च 1 cup Besan, बेसन 1 tsp Rice Flour, चावल का आटा ½ tsp Salt, नमक ¼ tsp Turmeric, हल्दी ¼ tsp Hing, हिंग ⅛ tsp Baking Soda, बेकिंग सोडा Half a Lemon, आधा निम्बू Water as required, पानी Ladi Pav, लादी पाँव 1 Cube Butter, बटर ½ tsp Red Chilli, लाल मिर्च ¼ tsp Salt, नमक Chopped Coriander, हरा धनिया Vadapav Chutney, वडापाँव की चटनी Khajoor, Imli Chutney, खजूर इमली चटनी

00:32In a hot pan, on a low flame, add 1 tsp ajwain, 1 tsp dry coriander seeds, 1 tsp black pepper, mix everything and cook
00:44Keep the flame on low and keep stirring for 1 minute
00:48When you start getting the aroma of the spices, remove the pan from the flame and let it cool down
00:59After 5-7 minutes, the dry masala has cooled down, now we will grind it in a mortar and pestle

01:14Here I have taken 100 gm papdi gathiya, you can also take vanilla gathiya instead of papdi gathiya
01:23Put the gathiya in the mixer jar, cover the jar and turn on the flame, after grinding it, it should be like this

01:39While the oil is heating, add the dry masala and let it cook
01:44While mixing, the oil should be hot, so that the flavor comes out
01:50After 1 minute, add 2 tsp ginger-garlic-green chili paste and let it cook
02:00Add 1 tsp red chili powder, 1 tsp turmeric powder, 1 tsp coriander powder, 1 tsp garam masala powder
02:11Add 1 tsp salt as gathiya is already sweet
02:17Add 1 tsp mango powder
02:21Mix it well and let the masala cook
02:25Add 2-3 tsp water and let it cook
02:31The masala should be like this
02:34The masala should have a nice aroma, so add the gathiya and let it cook
02:39Add 1 tsp khand and mix it on low flame
02:45The masala is ready
02:52You can store this masala in an air-tight container and use it in making shakma masala or kachhi samosa
03:02Add some coriander leaves and mix it well
03:07Take it out from the flame and let it cool
03:14Meanwhile, take some green chilies and cut them into long pieces
03:22There should be no seeds in the chilies, so there is no need to remove the seeds
03:30After cutting the green chilies, the gathiya masala has cooled down
03:36Take the gathiya masala and press it in the green chilies
03:43Make sure that there is no space in the chilies
03:47So that the gathiya masala will be nice and fluffy
03:53Keep the masala aside and make the masala in the remaining chilies
04:01While the chilies are getting ready, let's make the mixture for the top layer
04:06In a bowl, add 1 cup gram flour
04:09Add 1 tsp chokha nalot and mix it well
04:14Add 1 tsp salt, 1 tsp turmeric powder, 1 tsp asafoetida, 1 tsp baking soda and 1 tsp lemon juice
04:25The baking soda will also get activated and the mixture will become light in color
04:37Whisk the mixture to make the batter for the bhajiya
04:45While whisking, the mixture is ready
04:50The consistency of the mixture should be similar to that of normal bhajiya
04:56The batter is ready to make the bhajiya
05:00The gathiya masala is also ready
05:03Now, dip one chili in the batter and cover it from all the sides
05:11Then, dip the whole chili in the hot oil and cover it
05:19Do the same for the other chili
05:23Flip the sides of the bhajiya and fry the other side as well
05:29Fry the bhajiya for 1-1.5 minutes
05:34Then, remove the bhajiya from the oil and keep it on a tissue paper
05:39The more oil you use, the more the bhajiya will become dry
05:43Now, the bhajiya is ready to make the bhajiya
05:53Cut the bhajiya from the middle
05:57Heat a pan and add 1 cup of butter
06:06When the butter starts to melt, add 1 tsp of red chili powder, 1 tsp of salt, and some coriander leaves
06:13Mix it with the butter and fry the masala
06:16When the masala is fried and the color is the same, put the bhajiya from the top to the bottom
06:25Press both the sides of the bhajiya so that the masala sticks to the bhajiya
06:32Flip the bhajiya and cover the other side as well
06:38Press the bhajiya again
06:40Flip the bhajiya and place the bhajiya on a chopping stand
06:48The masala bhajiya and bhajiya are ready
