Friends, Today, I’m excited to share two Sharad Purnima special recipes: Dudh Poha and Batata Vada. These delightful dishes are perfect for celebrating this auspicious festival.

Dudh Poha is prepared using traditional methods and simple ingredients, ensuring the best taste. To enhance its flavor, I’ve added some tutti-frutti, making it even more delicious.

On the other hand, Batata Vada is a beloved dish among Gujaratis. In my recipe, I’ve included raisins and cashews for an extra burst of flavor. Be sure to listen closely for tips on achieving the perfect texture and a non-oily layer for your Batata Vada.

BATATA VADA
4 nos. Potatoes, आलू
Salt, नमक

1.25 cup Besan, बेसन
1 tsp Rice Flour, चावल का आटा

1 tbsp paste of Green Chilies, Ginger

DUDH POHA

00:55By steaming the potatoes without boiling them directly in water,
00:59the sweetness of the potatoes keeps on rising,
01:02and the dough also does not become too soft and a sweet potato vada is made in taste.

01:13And for buffing this potato, make 4 whistles on the gas medium flame.
01:18With that, to make milk pav,
01:20here I have kept 1.5 liters of milk on the gas medium flame to heat in a wooden kadhai.

01:28In this time, the fermentation process increases,

01:34it cools down naturally and destroys the fermentation process.

02:15So, take this poha and boil it in the saffron boiling milk on the other side.
02:20And then, while stirring constantly,
02:22let the poha boil in the milk.
02:24Now, the poha has been boiling in the milk for only 5-7 minutes,
02:28it has absorbed enough milk.
02:31And it has started to float on top of this boiling milk.
02:34So, we have to make sure that our milk poha is ready.
02:39Now, in this saffron pot,
02:41the colour of the milk has also changed to saffron.

02:45remove the milk poha from the stove and keep it to cool down.

03:06Now, to make the sweet potato vada batter without oil,

03:15we have taken 1.25 cups of gram flour.

03:22we will add 1 teaspoon of red chilli powder.
03:25In the masala, add 1 teaspoon of salt,

03:30and less than 1.8 teaspoon of baking soda.
03:33This will make the upper layer very fluffy
03:36and will not fill up the oil.
03:38One more special ingredient is yet to be mixed.
03:40We will mix it when we remove the potato vada from the batter.
03:44Now, first of all,
03:45mix this batter without adding water in a whisk.
03:48By doing this, the mixed masala will mix well in the gram flour.
03:52After that, I have taken 1 cup of water.
03:55Before adding all the water,
03:57add 1 cup of water and mix it in a whisk.
04:02So that there are no lumps in the batter.
04:05Here, we need water.
04:07So, keep adding water and keep mixing it.
04:10The thickness of this mixture should be medium.
04:13It should not be too thin or too thick.
04:17By mixing it like this,
04:19the batter of medium thickness will be ready.
04:22When the batter is ready,
04:24keep mixing it for 1 to 1.5 minutes.
04:27This will fill up the air in the batter
04:29and the mixture will become fluffy.
04:32And the potato vada will become fluffy.
04:36To make this much batter, I need 1 cup of water.
04:39But, we will add one ingredient in the batter
04:42while making the potato vada.

04:46we can see that the steamer has been filled up.

04:52which will make the potato vada sweet.
04:54Now, we have to take out the potatoes one by one.
