Behind the scenes at Glasgow’s Michelin Star restaurant Unalome as we predict the winner of Euros 2024 using cheese

We head down to Michelin Star restaurant Unalome by Graeme Cheevers to predict the winner of Euros 2024 using cheese.

00:00First of all, do you have any cheese jokes?

00:02What type of cheese can hide a small horse?

00:04I don't know.

00:06Mascarpone.

00:07So we've got Moleterno a trutufo on your left hand side.

00:10And then there's also Campoveja trufuto.

00:14Spanish is terrible.

00:15The Campoveja is the firm one to your right.

00:18And that one is aged for about five to six months.

00:21And raw ewe milk.

00:22There is also natural truffle throughout it also.

00:25And the slightly softer one on the left hand side,

00:28that was the Moleterno.

00:30So an Italian one, Sardinia.

00:32Eight to nine months.

00:33Also ewe's milk.

00:35But you can see it's a little bit softer

00:37and a little more intense with the truffle.

00:39Biffoli wins.

00:40Biffoli wins.

00:41That's an interesting looking cheese.

00:43Yeah, slightly different ones.

00:44So on your right hand side,

00:47we have an aged Gruyere, Switzerland.

00:50Aged for about 15 months.

00:52Usually a little bit hearty and quite nutty and buttery as well.

00:55And then on your left hand side is Alp Blossom,

00:57which comes from a sort of German Alpine region.

01:00So they use wild flowers and they kind of forage.

01:04So they change colour depending on the time of year.

01:06So you get that wild flower flavour coming through as well.

01:08The Swiss who were one of the favourites for the competition

01:11before they faced Scotland,

01:13who achieved a mighty triumphant draw.

01:16Okay, so Switzerland are through.

01:18They're quite different,

01:20but they've got a lot of history really as well.

01:25On the right hand side,

01:26we've got Doorstone from Hereford in England.

01:28It's a goat cheese, quite fluffy and zesty in the centre,

01:31a bit of ash on the outside.

01:32And the left hand side there is Minger,

01:34which Graeme just spoke about there.

01:36This is where things are getting interesting.

01:38Scotland versus England.

01:40Of course.

01:41It's got to be Minger for me.

01:42In England's defence,

01:44that's a lovely bit of cheese as well.

01:46But I think, yeah, Scotland's through.

01:50Okay.

01:51Right, you had one more cheese joke first before we go.

01:54What did the cheese say to itself in the mirror?

01:58I don't know.

01:59Hello, me.

02:01So two different ones there.

02:02We've got on the left hand side is an aged Comte,

02:07so about 30 months old.

02:08So that's a French one.

02:09Okay.

02:10Really nice, a little bit of salty

02:12and sort of nut and butter coming through as well.

02:15And we've got Prima Donna,

02:17which is a 12-month-old cow's milk

02:19coming from Holland as well on the right hand side.

02:22Personally, I think I prefer the French cheese.

02:30Okay, we're ready now for the quarterfinals of European cheese.

02:35Sorry to give a disappointing result for Switzerland,

02:38twice in two days, but it's going to be Italy for me.

02:43That truffle just kicks the cheese off.

02:45France and Scotland.

02:46I have to say France.

02:50More depth of flavour.

02:52France and Italy, they've made it this far.

02:55I think France is a champion of Euro 2024,

02:59as predicted by cheese.
