00:00Everyone loves a weeknight meal that can get on the table in very short order.
00:04And I'm going to show you how to make a chili that you can make for tonight.
00:06The ingredients are a little easier than normal.
00:10Here's two nice lean pieces of bacon.
00:14Cut the bacon into quarter inch pieces.
00:17So just brown the bacon and let it render its fat a little bit.
00:22We're going to need one white onion, coarsely chopped.
00:26And we need three cloves of garlic.
00:29Just chop our garlic.
00:31And we're going to add this to the pot.
00:33Our garlic cloves, our white onion, half a teaspoon of cayenne pepper, one and a half teaspoons of oregano.
00:41And oh, I love sweet Hungarian paprika.
00:44Very important.
00:45One and a half teaspoons of ground cumin, one and a quarter teaspoons of salt.
00:50And here goes our meat.
00:52Break it up a little bit.
00:53Don't put the whole great big piece of chopped meat in there.
00:56Stirring gently over kind of medium heat.
00:59Just keep breaking up the meat with the back of a wooden spoon.
01:03So this is what it looks like after 10 minutes.
01:06Doesn't it look good?
01:07We're going to add this to three cups of water.
01:09Two tablespoons of fine cornmeal.
01:12And one and a half tablespoons of cider vinegar.
01:15Once it comes to a boil, reduce the heat to a simmer and just cook it for about 20 minutes.
01:21And now you can get your garnishes going.
01:23And last thing is our sour cream.
01:25Okay, I think we're done.
01:27It's cooked for 20 minutes.
01:29It's thickened up nicely.
01:31And it is ready to serve.
01:33We are going to start with a dish called chicken and dumplings.
01:37Three tablespoons of butter.
01:39One small onion, very finely chopped.
01:42Two celery stalks, sliced or chopped.
01:44Three carrots, peeled and chopped.
01:47And two teaspoons of fresh thyme leaves.
01:50Put that right on the stove and saute until the vegetables start to exude their natural liquids and start to
01:58soften.
01:59The dumplings themselves, well, they're very easy to make.
02:02You need one cup of flour, one teaspoon of baking powder, one teaspoon of salt and mix this all together.
02:09And two tablespoons of icy cold butter.
02:13Butter should be in small chunks, sort of a texture of coarse oatmeal.
02:18Stir in two tablespoons of parsley and into the dry ingredients, a half a cup of milk.
02:25We have one and a quarter pounds of chicken breast, skinless, boneless.
02:29And some lovely green beans, a half a pound cut into approximately inch pieces.
02:35Add a third of a cup of all-purpose flour.
02:38This will thicken the chicken stew.
02:40Make sure you let this cook a little bit to get the flour cooked.
02:44You don't want a raw taste.
02:46So now add your stock, gradually scraping the bottom of the pan.
02:49Now bring this to a boil.
02:51Add your chunks of chicken.
02:53Stir, simmer for five minutes.
02:57So now add your string beans.
02:59Cook for another couple minutes before you place your dumpling dough on top.
03:04Use two tablespoons for this task.
03:07And just drop the dumplings right on top of your stew.
03:12Now keep this at a moderate simmer.
03:14Cover.
03:16Set your timer for 12 minutes.
03:19And the dumplings should be cooked through, be puffy, and the chicken stew underneath.
03:24Perfection.
03:25And I think we can serve the chicken and dumplings.
03:28But that really does look good.
03:31Everybody wants to make the one pot pasta.
03:34So right into the sauté pan, you add your 12 ounces of linguine.
03:39Add one onion, which is peeled and very thinly sliced.
03:43Add 12 ounces of cherry tomatoes.
03:46Just cut in half like that.
03:48Four cloves of garlic, peeled and very thinly sliced lengthwise.
03:53I'm going to put a little garlic here, a little garlic there.
03:56A quarter of a teaspoon of freshly cracked black pepper.
04:01Two teaspoons of salt over the whole thing.
04:05A quarter of a teaspoon of red pepper flakes.
04:09And four and a half cups of water.
04:12Two big sprigs of basil onto the stove.
04:16Bring to a boil.
04:17It's going to take about 11 minutes, start to finish.
04:20And you'll be stirring this constantly.
04:23Watch it closely.
04:25Keep stirring it around.
04:26And the pasta should be done in approximately nine minutes.
04:30Okay, now here is our fantastic one pot pasta.
04:34It is fragrant and it is well cooked and it is just ready to eat.
04:39Put it right in your bowl.
04:41Is that enough for you?
04:42Freshly grated Parmesan.
04:45A little sprinkling of pepper.
04:49A little bit more salt.
04:53And the final drizzle of olive oil.
04:59Enjoy.
05:01That is a really great pasta.
05:03One pot.
05:04It's simple and it's quick.
05:06In fact, I call it quick cook.
05:08Coming home tonight, I found these delectable pork chops.
05:11Some fresh thyme is pressed into the surface of each of the chops.
05:15Another important ingredient, cabbage, for this particular meal.
05:20I have a little bit of butter.
05:21I have gravenstein apples.
05:23The apples are so good this year.
05:25Two cloves of garlic.
05:27One orange.
05:28And that's it.
05:29And my pork chops are going to go right into the hot oil.
05:34And we'll just let those saute until they get nice and brown.
05:39And then in this pan, I'll start the cabbage.
05:41This is clarified butter.
05:43And I'm adding two cloves of sliced garlic to the pan.
05:47I'm also going to cook caraway seeds, which is very nice.
05:50This flavor of caraway is great with cabbage.
05:53And I'm going to cook about a half a teaspoon right in the clarified butter.
05:58You can add your cabbage.
06:00Add a little bit of coarse salt.
06:02A little bit of pepper.
06:04I'm going to turn these over because I don't want them to curl.
06:07While these are cooking, I'm going to squeeze one half of the orange on the pork chops.
06:13The cabbage is just starting to take on a little bit of a golden color.
06:16That looks good.
06:18And now turn the pork chops yet again.
06:21Sprinkle with a little bit of salt.
06:23And now squeeze the other half of an orange.
06:27Lower the heat under the cabbage and just let it cook until it's soft.
06:30And now it's a good idea to cover the pork.
06:33It has to cook for, oh, about 10 to 15 minutes, turning them a couple times.
06:40These look very succulent and very juicy.
06:43And now I'm going to add a little bit of cognac or armagnac.
06:51You get the flavor of the wonderful cognac in the meat.
06:54Take the pork chops out and place them on a warm platter.
06:59Now these juices are just what you want to saute the apples in.
07:04And just put your apples right in the pan.
07:12And now a little bit of salt, pepper, and a little sugar.
07:17Well, here you have it.
07:18It's a quick cook dinner for autumn that you just can't resist.
07:22This recipe for one pan poached cod with tomatoes, all cooked together in the same saute pan.
07:28So choose a saute pan about this size and add three cups of chicken broth, some sprigs of basil,
07:37a half a pound of potatoes.
07:38I'm using these little Peruvian blue potatoes.
07:41Some cherry tomatoes, one and a half cups, about a half a medium red onion,
07:46a quarter of a teaspoon of red pepper flakes, and two teaspoons of salt.
07:52Bring that to a boil, reduce to a simmer, and cook for, oh, about six minutes.
07:56So we're using cod today, four ounce pieces of cod.
07:59The flaky flesh is mild and delicate.
08:02And salt and pepper your pieces, and then submerge them in your broth.
08:07Cover and poach on medium-low heat.
08:10It takes about seven minutes.
08:12And so there, it's been just about seven minutes.
08:15Add, oh, four ounces or so of sliced sugar snaps, a half a cup more of cherry tomatoes,
08:21and some lemon.
08:23Lots of seeds in these lemons.
08:24And so just like a tablespoon or so of fresh lemon juice.
08:28Just spoon this into shallow soup plates.
08:32And with the vegetables, the colorful vegetables, all around.
08:37And that is, in a matter of minutes, a really delicious, healthy, excellent way to serve fish.
08:44A beautiful piece of salmon like this deserves really nice treatment in the pan.
08:49This skin will get crispy and delicious.
08:52Always salt it generously.
08:54And now two teaspoons of olive oil in a hot skillet.
08:59Put the salmon in skin side down over medium to high heat to make sure that it has enough time
09:06to brown and crisp.
09:10And make sure also that your oven is preheated to 350 degrees.
09:16When searing a piece of fish or meat that's thick, it's best to finish it in the oven to ensure
09:22that it cooks evenly.
09:23It's been about five minutes.
09:25I think the skin is seared nicely.
09:27Now just turn this piece over.
09:32Ah, lovely.
09:34And so now transfer this directly to a 350 degree preheated oven.
09:41And now I think the fish is done.
09:44It's been cooking for five minutes.
09:46So easy.
09:48That's the beauty of pan searing.
09:50And you have a very beautiful presentation and a very healthy dish.
09:55You have a very beautiful dish.
