Did you know that purified water can stay liquid even below its freezing point? This amazing scientific phenomenon is known as supercooling. When water is free from impurities like dust or minerals, ice crystals have nothing to attach themselves to, preventing the freezing process from starting.

To perform this classic home science experiment, you place an unopened bottle of distilled water into the freezer for about two hours. The liquid cools down to roughly minus eight degrees Celsius while remaining entirely liquid. The water becomes supercooled and extremely unstable.

With just a tiny physical shock or contact with an ice cube, a rapid chain reaction is triggered. Ice crystals form instantly and spread through the entire bottle in just seconds. You can even pour the liquid onto an ice cube to build frozen water sculptures in real time.

Scientists use supercooling principles to study atmospheric cloud formations and preserve biological samples. It demonstrates how microscopic structures control the physical world around us.
