00:10look what you can make with just a little leftover rice from the day before
00:17the best part is that we won't be making bechamel we're just going to make them
00:22without it and they're much easier than traditional croquettes
00:29this recipe comes about precisely because of something that's happened to you too
00:34don't lie to me have you ever made rice and miscalculated the amount it's clear that you
00:41have it happens to all of us and i'm lucky because at my house whether it's cold or whatever rice
00:50always gets eaten but i know that for many of you it ends up sitting in the fridge for a
00:56week
00:58here comes one of the advantages of this recipe it doesn't have bechamel and so we don't have to make
01:05it if you want to take note of the ingredients this is the moment pause the video grab a pen
01:14and paper
01:14and write them down take your time as i told you rice will be a main ingredient we're going to
01:22need
01:22two cups but you don't have to make it just for this any day you make rice for something else
01:28you
01:29can use whatever is left over the technique i use very simple a little bit of oil i stir so
01:35that it
01:36heats evenly that's it i cook it on medium heat with a pinch of salt i add three times as
01:42much water
01:43as rice that is if you use three cups of rice nine cups of water it's that easy after that
01:52we cover
01:52it and let it cook until it's to your liking then remember to leave it covered with a cloth
02:01and then use it i'm going to take two cups
02:09my advice use cold rice the colder it is the better it compacts and that way you can work with
02:16it much more easily i put this cold rice together with a cup of grated cheese and an egg in
02:23a large
02:24bowl and let's get mixing you can use whatever cheese you prefer if it's a dry one like parmesan
02:32for example even better the point is to stir it a lot until you have a uniform paste both in
02:41color
02:41and texture now this is what's going to turn some rice balls into surprise filled rice balls
02:52some cheese balls i'm using shredded mozzarella with freshly washed hands i press it together to form a
03:00ball that will be the core of your croquette no good don't stress about making them perfect
03:09because these kinds of recipes smell like grandma they smell like homemade food and they turn out
03:16better with those little imperfections shaping them is really simple i recommend having freshly washed
03:22and damp hands that way it won't stick to your hands as much you take a ball about the size
03:27of a
03:27traditional croquette and inside one of the balls we just made you wrap it with the rice so it's
03:35completely covered and shaped like a croquette how easy
03:43careful the cheese has to be completely covered if we leave it in the little gap when we're cooking
03:50it it's going to want to come out through there remember with wet hands take a ball of dough
03:57stretch it out shaping it put the cheese inside and wrap the cheese with the dough itself then you roll
04:06it again so that it gets well sealed and now we're going to get the crunch because a croquette recipe
04:14without crunch well it's like a movie without an ending
04:21for a good coating you have to beat an egg one is enough with two you'll even have some leftover
04:28the point is that the egg should be well mixed both the white and the yolk as you can see
04:33i have
04:34a different fork for the egg and for the breadcrumbs we shouldn't use the same one why because you put
04:41the croquette in the egg and then you make a little well here in the breadcrumbs you drain it a
04:47little and
04:47drop it into the breadcrumbs like this that way everything doesn't get all sticky and the breadcrumbs
04:53stay loose if you brought the fork over drops would fall and you'd start getting clumps by the
05:01way if you want to use panko instead of breadcrumbs that's perfect there's no problem at all what is
05:07important is to make sure it's completely covered if you're one of those who likes a super thick
05:14breading you can do it easily by dipping it in egg again and there you have it double breading
05:21thicker breading it's that easy did you know that trick
05:29now we have a pan over medium high heat we place something wooden in the center because my oil is
05:36nice
05:37and hot if you see bubbles that means it's ready and now we can add the big croquettes let's place
05:44them inside and leave them alone until we see the bottom part nicely golden and that will be the
05:53moment to flip them over you just have to keep in mind the little trick i told you make sure
06:00the oil
06:01is hot this is already underway but be careful with the heat we want them to cook quickly but not
06:08to get burned on the outside and still not have the cheese melted inside golden croquettes you have
06:16to keep turning them flip them so they brown evenly and once you have them drain the oil a bit
06:25and place
06:26them on a plate with plenty of paper towels that will make them even crispier in the same oil you
06:36cook the rest
06:37there's no secret to it and then you'll have a great dish like this one ready ready to be devoured
06:45the
06:47inside it speaks for itself and that's it and in the back it has everyone's favorite part of all my
06:57videos
06:58my favorite part checking that the idea we had in the end turns out great
07:09well thank you
07:13well you keep going too crispy on the outside and the rice melting into the cheese it's wonderful
07:29let me tell you something if someone had told me this started with rice from the day before
07:35i wouldn't believe it
07:44and the next time you have rice sitting around in the fridge remember this recipe because it's worth it
07:54and if you take my advice to put a little ball of cheese inside plus there's a delicious surprise inside
08:09crispy on the outside melted on the inside in a great way to use what you already have at home
08:15i hope you like these kinds of leftover recipes because every now and then i share one of these
