Nicole is turning Taco Bell’s cheesy potatoes into an entire comfort meal! In this video, she shows you how to make a Taco Bell potato casserole using diced potatoes, taco meat, and plenty of cheese. Roasted potatoes are topped with a layer of gourmet nacho cheese and cheddar before the cooked taco meat is added. Once this dinner casserole has been baked in the oven, it’s ready to serve.

00:00It's not tacos, but it is taco turned comfort food.
00:03So I've got three pounds of roasted potatoes
00:06that I have cut and parboiled.
00:08Now we're going to roast them so that they get crispy
00:10because theirs are deep fried.
00:11We are not doing that.
00:12And while that happens, we can be making our taco meat.
00:15Taters.
00:16Took the parchment out about halfway through
00:18so that they get a little toasty.
00:20Now we're gonna take gourmet nacho cheese sauce.
00:23No judgment.
00:25Spoon some right on top of the potatoes.
00:27And as it cooks, it'll melt down further.
00:29Recipe calls for some shredded cheddar too.
00:31I'm gonna put some on this layer and then some on the top.
00:34Then our taco meat.
00:35This goes into the oven.
00:36Everything is still pretty hot, so this will not take long.
00:39Take about just another 15 to 20 minutes.
00:41And about halfway through,
00:42I'm gonna top it with the taco sauce.
00:44Smelling good in here.
00:46Freshen it up with some green onion.
00:48I'm just gonna load mine up.
00:49I feel like I need a cold beer with this one
00:51since I've worked so hard.
00:55It's like you opened a baked potato up
00:57and just filled it up with flavorful taco meat,
01:00lots of gooey cheese, the sour cream,
01:02the green onion, the jalapeno.
01:03I mean, it's perfection.
