00:02The scariest part of an unsharp knife is it's going to hurt you.
00:05How do we fix this?
00:06You've got to sharpen your knives.
00:07For me, the tried and true whetstone is the way to go.
00:10All you do, soak your whetstone in water for 30 minutes and it's ready to go.
00:14You're going to want to sharpen a knife the same way that you would cut something.
00:17You'll see a point where it has the most contact with the whetstone and it's the same angle
00:22as the bevel of your blade.
00:24You want to take it nice and slow so that you're taking off as little metal as possible and
00:28putting the cleanest edge as possible.
00:31Just add water as you go and then you're just flipping it to the other side.
00:34It's the same thing.
00:35Again, even pressure but not much at all.
00:38If you're feeling fancy and you do happen to have more than one of these, a lot of knives
00:42that are really, really thin do like to get finished on a finishing stone.
00:45Every time that you run a knife over a stone, you need to run it over a steel at the

00:50I'm just running it across fast with very little pressure, mimicking a slice.
00:55What this is doing is honing your edge.
00:57Now I'm not having to push hard anymore.
00:59Now I'm not fighting the food that I'm trying to cut.
