Don’t turn away Southerners; this anchovy tomato sandwich recipe will change your summer lunches for the better! In this video, Chef Roscoe teaches you how to make an anchovy tomato sandwich by crushing together anchovies and garlic before folding it into Kewpie mayo for a well-rounded, umami-packed sauce. 00:00The sandwich of the summer is better with anchovies.
00:02What's up?
00:03Drip, baby, drip.
00:04First part of this recipe is actually one of my favorite things to do.
00:07Mash your anchovies and garlic into a nice paste.
00:10The anchovy added to the kewpie is adding a rounded umami flavor,
00:14but you can't taste fish.
00:15Make sure you season your tomatoes.
00:17For one, when you start seasoning your tomatoes and you hit it with salt,
00:19it's going to draw a little bit more moisture out.
00:21It's almost like curing your meat.
00:23And who doesn't like flavor?
00:24So, how have you food and wine to this sandwich up?
00:27Anchovies and anchovy aioli, chef.
00:29Our reader's probably going to clutch the pearls over fish.
00:32Oh, hunger.
00:32What?
00:33I'm clutching my pearls over this.
00:34I'm not so sure.
00:35Like, I'm a food person, but anchovies kind of give me the creep.
00:39This is freaking delicious.
00:40Right?
00:40Okay.
00:41No fishy.
00:42No.
00:42I don't taste the anchovy.
00:44I'm informed.
00:45Told you, chef.
00:46Thank you, chef.
00:47See, southerners.
00:47We got it on lock.
