Fajeto (Mango Kadhi) and Moong Ki Chooti Dal
You’ve probably had Aamras hundreds of times, but have you tried Fajeto and Moong Chooti Dal yet? 🥭🌿 Fajeto is a traditional Gujarati dish made by using the leftover pulp from mango skins and seeds (what’s left after making Aamras)—showcasing our belief in using every part of the mango. The process involves washing the skin and seed with water to remove any remaining pulp, resulting in a flavorful and unique dish that’s the perfect balance of sweet and tangy.
On the other hand, Moong Chooti Dal is a simple yet delicious dish made by boiling moong dal with basic spices and tempering until dry. It’s a comforting, nutritious, and high-protein side that pairs perfectly with roti or rice and this flavorful Mango Kadhi (Fajeto).
Ingredients:
For Fajeto:-
4 Mangoes
1 cup Water
1/2 cup Yogurt (Curd/Dahi)
2 tbsp Gram Flour (Besan)
1/4 cup Aamras (optional)
Salt to taste
2 tsp Oil
Pinch of Asafoetida Powder (Hing)
1/2 tsp Turmeric Powder (Haldi)
1/2 tsp Red Chili Powder
Few Curry Leaves
1 small piece of Jaggery (Gud)
For Moong ki Chooti Dal:-
Soaked Moong Dal
1/2 cup Water
Salt to taste
Pinch of Turmeric Powder (Haldi)
1 tbsp Oil
Asafoetida Powder (Hing) and Red Chili Powder
Method:
Take the leftover mango skins and seeds in 1 cup of water. Squeeze out all the mango pulp and strain the water.
Add 1/2 cup yogurt.
Add 2 tbsp besan.
Add 1/4 cup aamras.
Add salt to taste and mix well.
(Add another 1/2 cup water if needed.)
Heat 2 tsp oil in a pan for tempering.
Add 1 tsp mustard seeds (rai), 1 tsp cumin seeds (jeera), and 1/2 tsp fenugreek seeds (methi dana).
Add a pinch of hing.
Add 1/2 tsp turmeric powder.
Add 1/2 tsp red chili powder.
Add a few curry leaves.
Add the mango and besan mixture and keep stirring.
Add a small piece of jaggery.
Cook until it comes to a couple of boils.
To make Moong ki Chooti Dal:
Heat a pan, add soaked moong dal.
Add 1/2 cup water.
Add salt to taste.
Add a pinch of turmeric powder.
Cook on medium heat.
Remove any excess water floating on top of the dal.
Let it dry and cook well.
Heat a pan for tempering.
Add 1 tbsp oil.
Add hing and red chili powder.
Pour this tempering into the cooked dal and mix.
Cook on high heat until the water is absorbed.
Enjoy delicious Mango Fajeto with Moong ki Chooti Dal & Rice.
