Today I'm going to break down the specifics on how you can make Butter Powder in your freeze dryer. It's easier than you think!!

To start off we need an emulsion. Here's what I used:
150g water
100g melted butter
25g egg white protein powder
You can scale this up or down to suit your freeze dryer size. Add the water and the egg white protein to your blender and on low start blending. Once this mixture is well incorporated begin by slowly adding the melted butter in a thin stream into the blender. After you've incorporated half of your butter mixture you can increase the speed of your blender to a medium low (setting 2-3) and continue adding the melted butter. Once you've added all of the melted butter and milk solids you can pour that mixture into your freeze dryer trays (the liquid will seem thin at this point). If you want to make sure you have a good emulsion fill a cup with your butter emulsion and leave it on your counter for 10-20 minutes. There should be no separation of water and fat. Place the butter liquid into your freeze dryer trays and freeze. You want this completely frozen before you begin. Set your Stay Fresh
Freeze Dryer to the following settings:
Freezing Tray Temp: -20f
mTorr: 555
Final Shelf Temp: 80f
Extended Dry Time: 24 hours
When finished, store in a mason jar vacuum sealed with a desiccant pack or in a mylar bag with an O2 absorber and a desiccant pack. Place in a cool dark place till ready to use.
UPDATE ON THIS RECIPE: While you can use just plain butter, brown butter does a better job at masking any egg flavor. Also, All of my experiments used the same amount of water with different ratios of egg protein. I feel like you can reduce the water in the above recipe by half and have an even stronger and better emulsion. This is untested though. I will be sure to test it and post a short video with the results...
