Street Style Idli and Murugan Chutney (Chutney Without Coconut)
In every street in Mumbai, there’s a South Indian idli vendor who comes in the morning bringing idli and chutney. This chutney is made without coconut, and the idli is super soft. I’m showing you this idli recipe using natural fermentation. You’ll need to plan 24 hours ahead if you want to enjoy this idli. The chutney is very easy and made from basic ingredients—you don’t need sambar or any other condiments.

Ingredients:
For Idli:-
1 cup split and skinless lentils (urad dal)
3 cups rice
1/2 cup poha (flattened rice)
2 tsp fenugreek seeds (methi)
Salt to taste
For Chutney:-
1/2 tsp oil
2 garlic cloves
3 green chilies
2 chopped onions
1 small piece of tamarind
2 tbsp mildly roasted peanuts
2 tbsp roasted gram
Cilantro
A few curry leaves
Salt to taste
1/4 cup water + another 1/2 cup water
For Tempering:-
2 tsp oil
1 tsp urad dal
1 tsp mustard seeds (rai)
2 dried red chilies
A few curry leaves
Method:
Thoroughly wash all the ingredients (rice, urad dal, poha & methi).
Soak everything for 5-6 hours in water.
Next, take a mixer jar, add the soaked ingredients.
Add some water and grind to a smooth batter.
(Grind the mixture in batches.)
Transfer the batter to a large vessel and mix it with your hands.
Cover and let the batter ferment overnight.
Add salt and mix.
Preheat the idli steamer.
Grease the idli molds and pour in the batter.
Put the molds back in the steamer.
Cover and steam for 15-20 minutes.
To Make Chutney:-
Heat 1/2 tsp oil in a pan.
Add 2 garlic cloves.
Add 3 green chilies.
Add 2 chopped onions and fry them partially.
Add a small piece of tamarind.
Add 2 tbsp mildly roasted peanuts.
Add 2 tbsp daliya.
Mix well, turn off the heat, and let it cool.
Transfer this mixture to a mixer jar.
Add cilantro and a few curry leaves.
Add salt to taste.
Add about 1/4 cup water.
Blend to a smooth texture.
(Add another 1/2 cup water if needed after blending.)
For tempering, heat 2 tsp oil in a pan.
Add 1 tsp urad dal.
Add 1 tsp mustard seeds.
Add 2 dried red chilies.
Add a few curry leaves.
Pour the chutney into the pan.
Mix and turn off the heat.
Remove idlis from the mold.
Place them on a serving plate.
Pour chutney over them.
Enjoy super soft idli and delicious Murugan chutney!
