00:00Nothing says summer like a blueberry pie.
00:02To make it extra special, I often make mine with a lattice top.
00:06Now for the filling, which is three pints of blueberries,
00:10the zest of one lemon, and also the juice of a lemon.
00:14Half a cup of sugar, three tablespoons of cornstarch,
00:17and two tablespoons of butter to stir this all together.
00:21So now I'm going to roll out one disc of the pastry.
00:24Use the back of your fingers like this to press this into the dish.
00:29And now for the lattice top of the pie,
00:31just roll your dough into a square approximately 11 inches.
00:36And we're going to cut this into strips.

00:39And you're going to place this on top of two.

00:48Basically basket weaving.
00:50So now get your gorgeous blueberry filling into your bottom crust.

00:57Just lift this right on top of the entire blueberry pie and press.
01:02Just trim about a quarter of an inch from the edge of your pie plate.
01:07Just make sure it's really sealed.
01:09And then brush with the same egg yolk.
01:13And I'm also going to sprinkle with sanding sugar.
01:16Now your oven should be preheated to 425 degrees and bake for 20 minutes.
01:22And then reduce the heat to 375 and continue baking until the filling is bubbling
01:27and the crust is evenly browned.
01:29So this is what the pie looks like when it comes out of the oven.
