In this video, learn how to make honey roasted beets with both golden and red beets. This recipe starts by preheating both the oven and the sheet pan. Next, after peeling and cutting the golden and red beets into wedges, toss them separately in an avocado oil, salt, and pepper mixture. Place the beets onto the heated pan and bake for around 25 minutes before drizzling them in honey and lemon juice and baking for 5 more minutes. They’re sweet, tangy, tender, and make for a great side or snack.

00:00Most people aren't the biggest fans of beets, but if you roast them with some honey and citrus,
00:05they become sweet, tangy, tender and beautifully caramelized. The first thing you want to do is
00:10preheat your oven to 425 degrees. Then you're going to take your sheet pan and put it in the
00:14oven so it can get hot in advance. Next, let's peel the beets and cut them in half. Then cut
00:19them into small wedges. To a large mixing bowl, add avocado oil, salt and pepper. Add your golden
00:25beets and toss well to coat. Then in a separate bowl, add the same avocado oil, salt, pepper and red
00:30beets. Toss them together, making sure they are fully coated. Then transfer your red beets and gold
00:35beets to the sheet pan. This will make sure that the beets cook quicker and they have a nice sear.
00:39You're going to roast these in a 425 degree oven for about 20 to 25 minutes. Then you're going to
00:44remove them from the oven and drizzle on some fresh honey and fresh lemon juice. Then put them back in
00:49the oven for about five minutes more to caramelize and come together. Oh yeah. If someone in your
