Time to eat like you’re a cowboy! Learn how to make Chef John’s cowboy cornbread chicken, featuring cornbread spiced up with a southwestern flair of flavor with peppers, onions, and strips of chicken tucked in. Garnish with some freshly sliced green onions and enjoy!

00:00hello this is chef john from foodwishes.com with cowboy cornbread chicken cases take a knife and
00:07divide these right down the middle into two strips that are hopefully equally sized toss
00:11them in a bowl and we'll drizzle those with a little bit of olive oil before we season and spice
00:14them up with a generous amount of salt some freshly ground black pepper plus i also added
00:18some chipotle pepper to this dough where we are going to melt an entire stick of butter over medium
00:23high heat and some kind of cast iron or other oven safe and once that butter melt we'll go ahead
00:27toss in a diced onion along with our customary big pinch of salt and we'll cook that stirring for a
00:32couple minutes until yes you guessed it they start to soften up and turn translucent and once they do
00:36and things are looking a little something like this toss in some bell pepper and i like to use
00:40both red and green we'll also toss in some minced garlic and we will cook this stirring for about
00:44two minutes or just until those peppers soften up slightly and start to lose the rye we'll transfer
00:48in our buttermilk as well as a couple large beaten eggs and then we'll take a whisk and mix this
00:53thoroughly until we're very sure everything's been evenly combined once that's been mixed up we will
00:57transfer in our dry ingredient and we'll grab a spatula very thoughtfully mix this and we are
01:01only going to do that until the flour disappears which point we can grab our chicken specifically
01:05the chicken we seasoned and put in the fridge and we can start pressing and pushing those pieces
01:09down into the batter that's it to finish this off we'll go ahead and scatter over our reserved
01:12pepper onion mixture is now ready to transfer into the upper center of a 400 degree oven for about
01:1740 to 45 minutes or until our chicken safely cooked our cornbread is beautifully brown but anyway
01:22once we're sure it's done we will garnish the top with some freshly sliced green onion and that's it
01:26our cowboy cornbread chicken is ready to enjoy
