00:03good chance that that was marinated in buttermilk before it was cooked. But for whatever reason,
00:08that same buttermilk soap is not used very often when the chicken's going to be roasted or grilled.
00:12In fact, I'm going to have to ask some old southern people why that is, since it really
00:15does work quite well, no matter how you're going to cook your chicken. And when you do use a wet
00:19marinade like a yogurt or a buttermilk, you're generally not going to get that beautifully brown
00:23crispy skin. But that's okay, because that trade-off is going to get us some beautifully
00:26moist flavorful meat. All right, I really hope you can see how beautifully moist this is.
00:30Just absolutely dripping. And above and beyond the marinade making this tender and juicy,
00:34that little bit of tanginess of the buttermilk and parts really does help create an especially
00:38flavorful chicken. This chicken really did come out great.
