03:01Now, it's cake day and your technical challenge has been set by Liam.
03:06Liam, do you have any tips for the new batch of bakers?
03:09I don't want to feel fleeced with this challenge, so don't be sheepish when it comes to dipping.
03:13Well, it is a technical challenge.
03:16It's judged blind, so make like someone who insults a seaside attraction and disappear.

03:23For your first technical challenge, Liam would like you to make six of his lamingtons.
03:30This classic Australian sponge dipped in chocolate and rolled in coconut.
03:35Which, incidentally, is how Kylie Minogue prepares for a gig.
03:39Your lamingtons must be decorated to look like cute little lambs with a buttercream fleece.
03:44You have one hour in which to make Liam's lamingtons.

04:39These are my lamingtons, originally from Australia.
04:42But this is my take.
04:43They're very neat and very beautiful.
04:46Just a simple vanilla sponge with sour cream and oil.
04:48So it allows the cake to be very moist.
04:51But also the mix itself will be very loose and liquidy.
04:53So when they divide in the actual mixture between the moulds,
04:56it has to be even.
04:56Because we want every cake to be the same size.
04:59Level and well baked.
05:01Mmm.
05:01The most important part when it comes to these lamingtons is the assembly.
05:05We want a neat dip of the chocolate icing.
05:07It has to be coated in desiccated coconut and decorated with buttercream.
05:11They also have to add sweets for them to look like lambs.
05:14I want to eat this quite desperately.

10:18that is boiling once the milk comes to the boil pour over the dark chocolate and leave to allow the
10:25chocolate to melt it's not boiling it the milk mixture must be hot enough to completely melt the
10:31chocolate if the temperature is too low the coating will be lumpy and won't fully cover the
10:36lamington you don't want any clumps in it it's quite a few lumps in it why is it too long

11:14with their sponges nearly ready icing sugar the bakers can prepare for decoration and make the coconut
11:21buttercream very coconutty as well as a punchy flavor the buttercream must be beaten until it's
11:27smooth and fluffy that buttercream is really thick or it will be too solid to pipe i am very happy

12:45assembly choose the best six trim the top of the cooled cake so each sponge is perfectly flat looking good
12:52some are bigger than the others but should be fine i'm going to put them in the chocolate and then
12:56dip them in the coconut the lamingtons need to have an even coating around the entire cake
13:01don't be sheepish get them in or the effect of the lamb's fleece will be lost
13:07you've got to drain the excess off this is where it could all go
13:16i'm gonna ditch the fork oh my god and roll the desiccated coconut into a completely covered
13:23so may i just roll it in or some sauce right next one five minutes bakers oh no

14:39okay that was hard that was a mess just happened in a while little tiny sheep right if you could

15:05the junior bakers will now face the judges for the very first time nice to see them it's rav and

15:13okay so we were looking for six lamingtons made from a classic australian sponge cake dipped in
15:20chocolate and rolled in coconuts they look pretty good rav and liam have no idea
15:25whose is whose first one in terms of height they all seem a little bit different a little bit
15:33messy but good attempt we wanted some really nice faces on top especially to make them look like
15:37lambs but they do look quite yummy
15:42your sponge is baked really well the buttercream that is on top we needed them to be even across
15:47the board okay next one
15:51yeah they're pretty much the same height there's a good coating of coconut they look very sweet and
15:55they're all even the sponge is excellent really good nicely baked good chocolate coating and the
16:03buttercream is coconutty it's delicious very very good attempt
16:12these ones are a little bit rough the lamb decoration we want them to be on top not on the
16:17side
16:17oh my gosh look at that great cake well baked it's light airy it's got a great height to it
16:28the
16:28chocolates nice coating coconuts there it's just a shame that they're just a little bit messy
16:34it looks like there's chocolate in the mix yeah maybe the cake was baked and then reformed
16:43the sponge is incorrect the whole idea of this lamenting challenge is to have the chocolate coating
16:47around the sides it's not right we're missing the ingredient maybe but the buttercream is really
16:52nice it's lovely and coconutty but next time we need the sponge with the chocolate coating on the outside
17:01these look very neat very uniform and they're all the same size but we needed the lamb decorations
17:07on top the sponge is well baked in terms of the flavor of the coconut and the chocolate is spot

17:20we have a variation of sizes the flavors are great it's just a little bit messy the sponge is nice
17:27but it
17:27is a little bit tighter than some of the others but it's still very moorish there's been an attempt
17:34at piping the faces on top but next time we just need a little bit extra effort i'm not too
17:38sure if
17:39they look like labs the sponge is baked really well just a little bit messy on top last one we
17:50need
17:50your lamingtons to be coated properly in that chocolate and desiccated coconut but we've got a
17:56good attempt at making a face on top
18:00because some of them are slightly bigger than the others the bigger one is baked really well
18:04but the smaller one is a little bit over baked i love the lamb faces just a bit rougher on
18:09the edges
18:11rav and liam will now rank the lamingtons from last to first in eighth place we have
18:18this one penelope what happened i missed eggs okay i liked that you thought on your feet and still
18:25tried to deliver some labs yeah in seventh place we have this one lila i really like the decoration
18:32on top but around the edges it was just a little bit rough umair is sixth ethan is fifth khadija

18:41and in third place isla leaving harvey and humphrey battling for the top spot in second place we have
18:52this one humphrey really good they were very moorish very neat and delicious in first place we have
18:59this one harvey well done your sponge was baked to perfection there was a great height and the lambs

19:15shortly for showstopper challenge i was manifesting it there and i ended up winning so i'm very happy
19:22you know what the cake was really good across the board you know yeah really good i think liam and
19:27rav were very fair because well it was not that good i mean it's your first technical you lot will

19:38properly even just the showstopper remains before rav and liam decide who is today's star baker and

20:01your cakes must have at least two layers of sponge and one delicious filling and be decorated to
20:07resemble your worst nightmare whether that's forgetting your homework or ordering a pizza
20:15and it's got anchovies on it oh mr anchovy why are you so salty but be careful how you choose

20:22flavors for whilst your cake must be a nightmare to look at it must be an absolute dream to eat

24:57me on edge paying an unusual homage to her beloved cat hamilton in the form of a pandan flavored sponge
25:04filled with white chocolate and coconut buttercream complete with a fondant knife making a pandan sponge
25:11is difficult that's if you do a chiffon cake i'm not making a chiffon cake i'm making a sponge cake

26:20combining her two biggest fears khadijah will create a cricket ball using two vanilla sponge

26:31possibility that the spider could ride on the back of a cricket ball i'm never going to play cricket again
26:36now pop and the spiders holding on like that imagine it i'd run screaming for miles
26:43like i'm super scared of spiders i'm terrified actually isla also fears these eight-legged creatures
26:50but her sleepless nights involve a larger conquest so these are two hemispheres and they're going to get
26:56put together to make a glow and then it's going to also have spiders around it because my worst nightmare
27:02is spiders taking over the world using two hemisphere cherry and chocolate sponges sandwiched with
27:08cherry jam and whipped cream isla's globe will be decorated with fondant creating the world and the

38:09so my worst nightmare is a science experiment gone wrong it doesn't necessarily scream that a
38:15science experiment's gone wrong it maybe looks like it kind of went right the cake is a confetti
38:20cake and it's filled with cookie dough buttercream the sponge is slightly underbaked because i can
38:25still taste the flour in it but that cookie dough filling never tried it before i love it
38:31just put your cake in the oven for like extra five seven minutes you would have been on to a

38:40the marbling effect is very good it screams that it's a flaw it's quite messy but i think that's
38:47what you wanted to go for yeah you're dropping all of those bricks it's a very effective way of doing
38:51that so the sponge is a orange sponge and the buttercream is a chocolate and hazelnut buttercream
38:57flavor wise it's great the hazelnut the chocolate the orange your sponge though it's just in the
39:03middle it's slightly underbaked okay decoration wise it's bang on you know exactly what it is
39:11i love that spider it's very detailed it's a chocolate and cherry cake with cherry flavored
39:16jam in the middle what i would have done is put some more cream in there just to lighten it
