04:39These are my lamingtons, originally from Australia.
04:42But this is my take.
04:43They're very neat and very beautiful.
04:46Just a simple vanilla sponge with sour cream and oil.
04:48So it allows the cake to be very moist.
04:51But also the mix itself will be very loose and liquidy.
04:53So when they divide in the actual mixture between the moulds,
04:56it has to be even.
04:56Because we want every cake to be the same size.
04:59Level and well baked.

05:01The most important part when it comes to these lamingtons is the assembly.
05:05We want a neat dip of the chocolate icing.
05:07It has to be coated in desiccated coconut and decorated with buttercream.
05:11They also have to add sweets for them to look like lambs.

21:16This is a really excellent way for the bakers to show off their personality, to bring a bit of flair
21:20to the competition, and help us get to know them a bit more.

21:27The baker that will stand out today will produce a delicious sponge, great filling, and the ratios have to be

21:33We want that filling to complement the overall texture and flavour of that sponge cake.
