00:00These are the four knives I have to have with me at all times.
00:02You have to have a serrated knife.
00:04Always going to be your best friend when it comes to cutting things like bread.
00:07However, another thing that a lot of people don't think about,
00:09cutting tomatoes and soft-skinned fruit.
00:11I don't care how sharp your knife is most of the time,
00:14it's going to want to damage and smoosh in before it actually cuts through.
00:17A serrated knife is made to work with things like this.
00:20All of those little bits right there are doing the work for you.
00:23Every kitchen, every chef needs a chef's knife.
00:26This is your general purpose knife.
00:27Anytime I'm cutting meat and also for certain kind of vegetables
00:30where I want to be able to have control of the way that I'm cutting,
00:33this is the one to go with.
00:34Got your pointy tip.
00:35Just going to give you the option to cut things really, really small and fine.
00:38But it's also going to give you a lot of blade right here to work with.
00:41An effective blade from tip to tail.
00:44Next is a paring knife.
00:46This ends up being the most used knife in my house.
00:49They're small, they're easy to pack, they're versatile.
00:52There's one thing that a paring knife will always do better than almost anything else.
00:56Stuff like hauling a strawberry.
00:57But I really think paring knives are great for any time you don't need a lot of blade length.
01:03There's just so much more control that this allows.
01:05And finally, a vegetable knife.
01:07As a food stylist, there's one thing that we do a lot of.
01:10It's cutting herbs and garnishes.
01:12It's great for a top-down chop.
01:14The blade always stays nice and straight.
01:15This knife made by Kiwi was $2.75.
01:19I bought this over 10 years ago.
01:21Still one of my favorites.
01:22A lot of Asian grocery stores will have these.
01:24My paring knife as well is a Kiwi.
01:27I've had this just as long.
01:28I swear by this brand.
01:29Again, they're affordable.
01:31They're comfortable.
01:32They last forever.
01:33If you want to, you can spend a lot of money on a knife.
01:35Expensive knives are great, but you don't need them all the time.
