00:00On this episode of Uncharted Waters with Peter Miller,
00:03I'm back on the water with my longtime friend,
00:06world-renowned chef Tom Colicchio.
00:08Tom, are you ready?
00:09I'm ready.
00:09From the heat of the kitchen to the heat of a screaming drag.
00:13Come on, Tom, go get one.
00:14We're fishing off the coast of Fort Lauderdale.
00:16That's perfection.
00:17That's it.
00:17Flying kites, stacking the spread,
00:20and hunting one of the ocean's most electrifying game fish.
00:24There he is, sail finish.
00:25But it's not just about the bite.
00:27It's about timing, teamwork, and making every opportunity count.
00:31Tom, you did it.
00:32When the reels start screaming and the fish go airborne,
00:35You're going to jump right here.
00:36You'll see why this is one of the most spectacular sights in sport fishing.
00:40Tom, we did it, woo!
00:42Nice fish.
00:43What a beauty.
00:45Big jumps, hard runs.
00:47This is a great day, Tom.
00:49This is friendship, adrenaline,
00:50and the pursuit of that next unforgettable moment.
00:53Woo!
00:54Right here on Uncharted Waters.
00:57Good job, baby.
00:58Good job, baby.
01:18Uncharted Waters with Peter Miller is presented by Invincible.
01:23I invited my long-time friend, Chef Tom Colicchio, to join me for a day on the water.
01:28We're going to run up to Hillsboro, which is like seven miles.
01:31So we're in about 15 minutes through the intercostal here.
01:34Tom is a world-renowned chef, restaurateur, author, and the head judge on Top Chef.
01:39Joining us is Captain Quinton, a long-time friend and my teammate from my competitive days on the
01:45Get Lit fishing team, and first mate, Kevin.
01:48We're waiting on other people, aren't we?
01:49No.
01:50Oh, this is it?
01:50Okay.
01:51No.
01:51Yeah, what do you mean?
01:53I thought we had more people coming.
01:54I mean, that's it.
01:54You've got to get A-listers here.
01:55Who else do we need?
01:56Yeah.
01:58All right, let's put her down in the water.
02:01But today, he's trading the kitchen for the ocean.
02:05We're heading out of Fort Lauderdale for a fun day of fishing,
02:08good conversation, and seeing what the ocean has in store.
02:12So, Tom, I saw you on the Tamron show, right?
02:15Yeah.
02:15Tamron Hall.
02:16I did that.
02:16What was that about?
02:18I got a book I got to promote.
02:19What's the name of the book?
02:20Why I Cook.
02:21Why I Cook, I mean.
02:22Why I Cook.
02:23It's not here.
02:23Why do you cook?
02:24Well, it's a long story.
02:26So, when I was a kid, when I was about six or seven,
02:28I used to go fishing with my grandfather.
02:30We'd catch a lot of crabs and clams.
02:33You know, looking back on that, people kept asking me this question,
02:35like, when did you start cooking?
02:36Why are you cooking?
02:37Yeah.
02:37So, I really started to think about it.
02:39And it would go back to that moment when I was young.
02:41It wasn't so much about the food, but the food has the power to bring these people around
02:45the table and bring relatives and family and friends and stuff.
02:47So, I think that's part of it.
02:48You know, I kept going back to that story.
02:50But anyway, yeah.
02:51But I, you know, I felt like I was good at it.
02:54We make a quick stop to try to catch some bait.
02:56Oh, here they are.
02:57Hey, Q.
02:58You see him?
02:59Yeah.
02:59Just toss it to the right.
03:00Pilchard?
03:01Yeah, go, go for it.
03:03Q gives it his best shot.
03:05Bait is not always easy to come by.
03:07All right, I say we pack it in, we go for it.
03:10That's why I always have a boatside bait pickup lined up.
03:14Sorry it took so long.
03:17No jumpers, no jumpers.
03:20You recognize this famous chef here, Tom Colicchio, top chef.
03:24He's ready to go.
03:26Man, these wells are looking good.
03:29If we can't catch a fish with this,
03:33there should be plenty, bro.
03:41Once we get to the spot, the first thing we want to do
03:44is get baits in the water as fast as possible.
03:47These are nice.
03:48These are perfect size.
03:49A flat line is the simplest way to start,
03:52just to get something swimming while we get set up.
03:55Hey, Tom, if you want to screw with this while I do some other things,
03:58we can let that guy out and check your drag.
04:00It's, you know, I think the drag is good.
04:02We quickly put up the kites and start building the spread.
04:09Sending out six more baits.
04:11Just get them out there because we're fired up.
04:15Making all the adjustments on the lines so those baits stay right on the surface.
04:20Perfectly in sight for any predators looking up.
04:25I think Pete, I'll go up and drive from up top so I can see better.
04:27Okay.
04:31Watch that right middle getting nervous.
04:34He's very nervous.
04:38A ma here so it might go on him.
04:40Come on, Tom, go get one.
04:41Go on him, lock it up.
04:43Lock it up and start whining.
04:45Whine, whine, whine, whine.
04:46There you go.
04:47Come on, Tom.
04:50Okay, we'll come over, walk over.
04:52All right, how are we doing there?
04:54Oh, lovely.
04:55All right.
04:57Tom dropping back, getting tight.
04:59Nice work, Tom.
05:00Hey, Tom, go ahead and pump that chump up and down.
05:03What do we got here?
05:04What do we got here?
05:05I don't know yet.
05:06He's not telling me.
05:08All right, here's a leader.
05:10A leader.
05:11Let's see what we got.
05:12A king.
05:13Nice king.
05:14Kingy.
05:16Whee, five pounder.
05:18Look at that, right in the lips.
05:20Look at those teeth, Tom.
05:22Tom, that's perfection.
05:23That's it.
05:24Well, I just think that might be the start of it all, right?
05:26Yep, that's where it all began.
05:28It's always good when you get a slimy in the boat.
05:33Uncharted Waters with Peter Miller is presented by Invincible Boats.
05:37When you're serious.
05:40Mercury.
05:44Starbright, clean and protect.
05:49Yeti, built for the wild.
05:57We're off the coast of Fort Lauderdale with my friend, Tom Colicchio.
06:00The wells are full of bait.
06:02The kites are up.
06:03And now, just waiting for the fastest fish in the ocean to scarf down one of our kite baits.
06:09This is where you gotta keep it smooth, man.
06:11Keep it in the water.
06:12I mean, if you were a sailfish, you'd be here, eating that bait.
06:16Keep it right and it'll come tight.
06:18Come on, Tom.
06:19This is our time.
06:20Our time is now.
06:21Don't stop the miller, man.
06:24So, Tom, we haven't kite fished together in...
06:26It's been a while.
06:28The first time we fished together was...
06:31We were on the cutting edge.
06:32I got a great picture of us.
06:34The guy who went on the cutting edge, the guy got in the water.
06:36And took a picture.
06:37Oh, yeah.
06:38It's a great shot.
06:39And then after that, we went with Joe Gonzalez, the miller fish.
06:42That was one of the most beautiful things I've ever seen.
06:46That blast calm with Fowie in the background, sunrise, giant tails everywhere.
06:55Something going off on that mid bait?
06:57Yeah, yeah.
06:58All right, let's go.
07:00All right, Q. I'm gonna go for it.
07:03Take that to the house, another man.
07:06Another one, another one, another one, another one.
07:08Come on, come on, come on.
07:17There he is, sailfish.
07:18Oh, yeah.
07:19I'm hooked up to a sailfish and there's nothing like it.
07:24The speed, the colors, and those jumps.
07:27Long, high, and electric.
07:29Lit up in blues and purples as the fish tail walks across the surface.
07:34Woo!
07:35Love it.
07:37At the same time, Tom is tight on a mystery fish, so I switch rods with him.
07:43Okay, Tom, nice and easy, baby.
07:47You're fine.
07:48That sail's got plenty of energy.
07:50There he is.
07:51Coming at you, Tom.
07:52Go, go, baby.
07:53Tommy!
07:55You got it.
07:55You got it.
07:56Oh, yeah.
07:58Here, Kevin, take this.
08:00I'll work with Tom.
08:02Good, nice move, Tom.
08:03Nice work.
08:04As Tom gets the sailfish close to the boat,
08:07I hand my rod off to Kevin to better prepare to leader the fish.
08:10Let's get that release.
08:13Got the release.
08:14All right, hang on, Tom.
08:15Get ready.
08:16Come around, jump.
08:19All right.
08:21We did it.
08:23Tom, we did it.
08:24Woo!
08:24Nice fish.
08:25What a beauty.
08:30This is the moment you never forget.
08:33This is it.
08:34This is why we do it.
08:37We get an official catch, and then the hook pops out.
08:41The sailfish gives us one last majestic jump before disappearing back into the blue.
08:47Good job, man.
08:50We dug that one out, huh?
08:52That was a huge fish, man.
08:58What do you got there, Kevin?
09:00I don't know.
09:01Looking at the bottom of the pool.
09:02Oh, it's probably a shark, huh?
09:03Oh, yeah.
09:05All right.
09:05I got you.
09:05Let's do some reparations and repair.
09:11This has to be a shark.
09:13It's not even moving.
09:14I got the drag on lock.
09:17It hasn't moved to shake in anything.
09:20Just weight coming up.
09:21It's almost like a piece of coral.
09:23All gain?
09:24Yeah.
09:25A lot of heat, though.
09:27Drag, I put the drag on lock.
09:29Whatever is on the end of my line is extremely powerful.
09:33My arms are already on fire, and I'm just getting started.
09:37See the way it comes up on top?
09:38Yeah, yeah, yeah.
09:39When the rod is bent like this, and you've got full drag, you know you're in for a battle.
09:47It's acting like a shark.
09:49Yeah, it's all gain.
09:50Strong, steady, and heavy.
09:54Feel like reeling for a minute?
09:55No.
09:58Can you see the fish?
09:59Not yet.
10:00We got to see the fish.
10:01The weight was right there, no?
10:02Got to be right there, bro.
10:06Oh, you got a big shark, dude.
10:07Yeah?
10:08Big shark, yeah.
10:09There it is.
10:09Ah, damn, Pete.
10:10Nice job.
10:10Well, you know, I had to get my workout in.
10:14Hey, Mr. Shark.
10:15Mr. Shark.
10:16In the corner of the mouth.
10:17Look at that.
10:17I'm tired, man.
10:19That was a lot of work on the spinner, I got to say.
10:21Whoa!
10:22Hey!
10:25Tom, we're on the board.
10:27Lots of fish.
10:28Lots of fish now.
10:29Kingfish, sailfish, sharks, you name it.
10:31We're catching it, and it's only 9 o'clock.
10:37Citizen.
10:38Better starts now.
10:42Sea Keeper.
10:43Fight to fish and not the roll.
10:47Power Pole.
10:48Total boat control.
10:52Gator Step.
10:53Premium flooring and decking.
10:58Our adventure continues eight months later when Tom finds another small window in his
11:03busy New York schedule to get back on the water with us.
11:07Well, good to see you.
11:08You look lovely and cold.
11:10The Northeast is dealing with frigid cold temperatures, and that cold front is reaching
11:15all the way down here to South Florida.
11:19Changing the conditions and setting the stage for the day ahead.
11:23How you doing, Tom?
11:24Good to see you.
11:25Yeah, you step here and watch your cranium.
11:28All right.
11:29How about a hug?
11:30Good to see you, man.
11:31I brought you a coffee.
11:33Good to see you.
11:34Good to see you.
11:35It's hot, and it's nasty strong.
11:38Don't burn yourself, man.
11:39It looks like a burner.
11:40That was good docking.
11:43And you're back.
11:44I'm back.
11:45Here I am.
11:45What was the temps like in New York?
11:46When I left, it was about 10 degrees.
11:48It was cold.
11:49A little different down here in South Florida.
11:50A little different.
11:51It's a little cold down here, too.
11:52You're not going to believe this, Tom.
11:54It's supposed to be 30 on Monday.
11:56The iguanas are going to be dropping out of the trees.
11:58Yeah.
11:59They're going to be doing like, just like, ugh.
12:01And then they come back to life, you know?
12:03So we're going to try to get them again today, Tom.
12:05We're trying to get some sales.
12:07We hear some good things about up to the north.
12:09And we'll just give it our best, like we always do.
12:13And what are you thinking, Q?
12:15I'm just saying we start right out front.
12:16No sense running.
12:17You know, get up by the sea buoy.
12:19Look, he said that the fake guy said there's half a knot of current,
12:21so there's going to be a swell probably.
12:23Okay.
12:23So you might see him right here.
12:26Just kind of ride north and look.
12:28So you want to get out there first?
12:29Maybe we'll see a free jumper.
12:30Yeah, we'll hit the sea buoy.
12:32Yeah.
12:32And, you know, confirm that there's current and then blaze to the north.
12:37It's going to be a good day.
12:38It's going to be a great day.
12:40Tom, are you ready?
12:41Uh, I'm ready.
12:42Let's go.
12:48And the water's nice.
12:50We run out to the spot.
12:51And once we're there, it's straight into setup.
12:54And my hands are not working.
13:00That fish has some stank on it.
13:04Hey, Tom, you want to hang onto this one over here?
13:06The drag set, it should be good.
13:08It's Tom's got a flat out.
13:09Going out with a kite.
13:16Uh, gogs and two threads.
13:22That bait's good, bro.
13:23It's the tournament winner.
13:26Kite's ready to rock.
13:28Got goggle eyes, thread fin out here.
13:29Saving Tom from six degrees in New York.
13:32Six degrees.
13:33Yeah.
13:34Windshield minus 20.
13:36Well, that's just ridiculous.
13:37Yeah.
13:38You don't even go outside.
13:39No, no, no.
13:41My dog wouldn't go outside.
13:42No.
13:42My dog was like, no, I'm not going out there.
13:44No.
13:46Kite, what do you see?
13:47Yeah, I just saw these birds working and I saw some flyers getting up under them.
13:51Okay.
13:52Looks like they're pushing to the south.
13:53I like that.
13:57He's jumping, he's on.
13:59Another one on here.
14:02Got a Mahi on over here, Turb.
14:04Yeah, I'm just kind of watching, see if any more are coming with him.
14:06That looks like a decent one.
14:08Yeah, he's nice.
14:09Oh, hey.
14:10Whoa, he's coming up, jumping.
14:15What I'm going to do with this guy is I'm going to put him in the floor here,
14:18so he doesn't bleed up the whole deck.
14:19Okay, Mario?
14:21Oh man, this is a great day, Tom.
14:23You want to get a gaff in this one?
14:24Yeah, I got a gaff right there.
14:26Cue the skinny one right there to the left.
14:28All right.
14:30Here we go.
14:31It's time.
14:32Coming in hot.
14:34Oh yeah, right in the honey hole.
14:37We're going to go right here.
14:38Perfect place to put him.
14:40Man, I am going to make you cook something here on the boat.
14:45Now we're going to have sashimi.
14:48When that first Mahi hit the deck, we knew it was about to ignite.
14:52I'll start putting baits on here.
14:54Got to pick the right one.
14:55There he is.
14:56That's a gorgeous gog.
14:58We found the school, and they're hunting right under us.
15:02Tom, we already got the birds attacking our baits.
15:05They're aggressive.
15:06That means it's going to be good fishing.
15:07When you run into stuff like that, you just know.
15:12Suddenly, it's nonstop.
15:14Mahi.
15:14What is that?
15:15Mahi.
15:16Four pounder, Tom.
15:17We got four pounds coming at you, chef.
15:19Watch the kite rod.
15:22All right, Tom.
15:23Oh.
15:23Nice one.
15:24Mahi, Mahi.
15:26There you go.
15:27Beauty.
15:28Oh, Mahi.
15:29Yeah, yeah.
15:29He's looking good.
15:30Yeah.
15:31You feel good?
15:32I feel great.
15:33I feel excellent.
15:34Oh, we're hooked up.
15:35We are hooked.
15:38Yeah, man.
15:39That's beautiful.
15:41Woo!
15:44Right in the corner.
15:45Let's see if I can break them off.
15:47Woo!
15:48Oh, my God.
15:50That's up close and personal.
15:52Um, are you trying to make me a Mahi dinner or what?
15:55Mahi.
15:56Oh, my God.
16:00Gemlux.
16:00Demand the best.

16:28Now we swing for the fences.
16:30And Tom's hooked up already.
16:33Come on, Tom.
16:33Come on.
16:34Let's get tight.
16:34Let's go.
16:35Watch that line.
16:36Yeah, baby.
16:37Keep, keep going.
16:38Keep staying tight.
16:39All right, Tom.
16:40What's it going to be?
16:41What's it going to be?
16:42Is he going to jump?
16:43There it is.
16:44There it is.
16:44Sail official scope, Tommy.
16:46Tom got him on.
16:47There he is jumping.
16:48Beautiful, man.
16:49This is it.
16:51Oh, Tom, you did it once again.
16:54Nothing stops Tom to Lickio.
16:58Oh, there he is again.
17:02That was the perfect bite.
17:04Perfect drop back, Tom.
17:05You fed him perfectly.
17:07See, I'm going to jump right here.
17:09Yeah, we're going to jump right here.
17:12Look at that.
17:13We've got a bird and a sailfish.
17:16All right, Tom, this is it.
17:17This is the moment.
17:18Yeah, you got it, baby.
17:19Can you go for it a little bit, too?
17:20Yeah, I got it.
17:21I'm geared right now.
17:22Oh, I got him, Tom.
17:26Nice job.
17:27Wind up there, Tom?
17:29Yeah.
17:29All right, perfect.
17:30Look at that guy.
17:32Nice fish.
17:33Beautiful.
17:33He's all bronzed out of that little.
17:34Yeah, right?
17:36He's a bronze Adonis.
17:37Is that hooked right in the tip of the bill?
17:40Actually, no.
17:41It's a rat suit.
17:42Yeah, that was where the cork was shaking.
17:44Oh, nice shot.
17:45Yeah, man.
17:46Nice job.
17:47Good job, man.
17:49Everybody, Tom Kalicki on the sails.
