01:02Like everywhere else in the country, the Florida Keys aren't always sunshine and calm waters.
01:08This tropical paradise gets its fair share of rough weather, but the Contender 26 Bay is
01:16built for the challenge.
01:18Shallow draft where it matters, like fishing the backcountry and catching bait, yet seaworthy
01:25enough to venture outside the reef, even in sporty conditions.
01:29So with the lingering effects of overnight storms, the guys head offshore from Big Pine Key with
01:36high hopes for the day.
01:38It's going to get super nice today.
01:39So the weather's going to change as the day goes, but we've got a little bit of cloud
01:42cover.
01:43We're going to try and catch a blackfin tuna here.
01:45It's been some nicer tunas over top of the wreck.
01:46We're going to chum a bunch of pilchards, put hooks in a couple.
01:49We're actually marking them a little bit here already in our first drift.
01:52So put those out there, see if we can catch them.
01:55My buddy Joe Malazzo has been texting me all morning.

08:57The Florida Keys sit alongside the only living coral reef in the continental United States,
09:03including some of the most diverse sections anywhere along its 350-mile stretch.
09:10Plant a Million Corals is dedicated to restoring reefs here in the Keys and beyond.
09:17The guys drop by their Summerland Key facility for an update from co-founder, Dede Vaughn,
09:23and a look at the growing operation behind the mission.
09:27You know, we've been so lucky to be supported by great volunteers.
09:31I know a guy who's a choop-choop, Earl bird.

09:40Two or three days.

09:42He's been a great help.

09:44Gave him a siphon and a sponge, and he's just helping taking care of corals.
09:47Thanks to volunteer help and generous donations, Plant a Million Corals grew from 280 corals
09:55to more than 50,000 in just three and a half years.
09:59The nursery now holds enough corals to produce its first million, but space has become the biggest limiting factor.
10:07Our goal is to have enough space to outgrow 500,000 corals.
10:12That way we can be producing a million every year or even really every six months.
10:16And these corals are going to go back to our Florida Reef Track?
10:19Absolutely, and it's so important that we maintain a healthy reef, not just for things like biodiversity,
10:25so you can have good fishing, good diving, but it's really the only way we can live in the Florida
10:31Keys and on the coast.
10:33Without a healthy reef system, we don't have anything protecting us from hurricanes.
10:37Now, new research focuses on growing large adult corals in the nursery,
10:42where a fragment can reach full maturity in as little as 14 months compared to the 25 to 75 years
10:50it can take in the wild.
10:52It's a game-changing process that offers real hope for reefs around the world.
10:58Our goal is to outplant these larger, more mature corals because not only are they the size of corals,
11:03they look like the corals you're used to seeing, but they also now act like mature corals
11:08and will take on that next stage of development with sexual reproduction to produce more corals out there on their
11:15own.
11:15And we're going to be making half a million to a million a year right here.
11:21Exactly.
11:22It all comes down to tank space, right?
11:24Right, and funding.
11:25So if we can get the funding to build the tanks, we can have the staff, the volunteers, the interns
11:31to take care of them,
11:33and that's how we can really make this large impact.

12:06A sporty morning offshore from Big Pine Key ends with a couple of solid blackfin tunas for the guys aboard
12:15the 26-foot Contender Bayboat.
12:17Now, with the weather finally laying down and Captain Joe Malazzo on board, they set their sights on the afternoon
12:25sailfish bite.
12:27Joe brings years of sailfish tournament experience, including plenty of time chasing sails alongside Earl and his buddy Dustin McCabe.
12:37After stocking the live well with Ballyhoo, Joe and the guys head to the edge and begin the hunt for
12:44feeding sailfish.
12:46So we're in the area here where there's a lot of bait, a lot of Ballyhoo, and the sails are
12:51out in deeper water.
12:52They kind of mainly stay out there.
12:54When they get hungry, they'll come in this time of year up in the shallow water where there's a ton
12:58of Ballyhoo.
12:59And as they're doing that, the Ballyhoo are going to try to get away.
13:02So when you see it happening, you're going to look and it's going to be hundreds and hundreds of Ballyhoo
13:06trying to get away from the sail at the same time,
13:09which is, you know, we call it showering because it's literally just splashing of water from a distance.
13:14Once you get up on the fish, because we run right to it as fast as we can, you want
13:18to get there before he eats one.
13:19If you get a good cast, you want to try to lead him by a couple feet and put that
13:23bait right in front of him so that's the one that he eats.
13:26I want to set my drag real light typically when we're casting at him like this.
13:30It's going to be a little lighter than I want to fight the fish.
13:32So when we hook the fish, we're going to add a little bit more drag as we feel.
13:36Okay.
13:37But when we hook them, what's going to happen with the circle hook is the circle hook is going to
13:41go all the way in the fish's stomach.
13:43We want the sailfish to swallow it completely and then it comes up and as it gets to the corner
13:47of their mouth,
13:48it's going to roll over and find home.
13:5185-90% of the time, we're going to hook them right in the side of their mouth where we
13:53want to.
13:54Okay.
13:54Which is better for the fish.
13:56Obviously, it's not stuck in its stomach, in its gills, somewhere bad.
14:00But it's better for us too.
14:01We want to pull the fish from its face.
14:03Okay.
14:03It helps us fight the fish but these fish are going to stay on the surface and we're going to
14:06more,
14:07instead of the concept of bringing the fish to the boat, we're going to bring this boat to the fish.
14:12Okay.
14:12We're going to kind of meet them in the middle really.
14:13I got you.
14:14We'll run them down.
14:14So we're going to pull them to us and we're going to go to them and that way hopefully we'll
14:18catch the sailfish faster.
14:19We're not going to exhaust the fish completely and it's better for everybody.
14:23We get him on the leader, he jumps, he's excited.
14:25When we let him go, he swims away healthy.
14:27So, that's the plan.

18:16joins the guys to share some of her favorite seafood creations.
18:21Today's recipe is an irresistible spicy tuna sushi roll.
18:25Have you ever made sushi before, Earl?

18:30It's one of those things, like, you gotta be a professional to get into this the first
18:34time, right?
18:34It's an art for sure, and we're gonna help you make it today perfectly.

18:39Well, what I'm gonna do is grab a nori roll, and while I'm doing that, a sheet of nori,
18:43you're gonna take the tuna and dump it into here, and then mix our scallion and our sesame
18:48and our soy sauce.
18:50So you're calling that nori?
18:51That's a seaweed?
18:52Seaweed wrapper.
18:53Seaweed wrapper.
18:54And it's super important to get your hands wet for this, so then that way the sticky
18:59rice doesn't stick to you whenever you start smashing it all down.
19:04Let's start putting your filling in.
19:07So we have a little avocado, you have cucumber, your tuna and green onion mixture there.
19:13We have some sesame seeds.
19:15We're spicing it up right now with the wasabi and then the sriracha mayo.
19:19So you're gonna take it, and you're gonna, with your fingers, start to fold it over on
19:24here.

19:31And then you wanna put a little glue, which is our water there.
