The secret to a great ice cream sandwich is the cookie. Or in this case, the brookie! In this video, Martha Stewart shows you how to make her favorite double chocolate brownie cookie recipe. The double chocolate brownie cookie batter bakes into rounds that are dense and fudgy on the inside and crackly on the outside. Smush slightly softened ice cream between them and enjoy!

00:00Another one of my favorite cookies is the double chocolate brownie cookie.
00:05Melt your butter, six tablespoons of butter, with five ounces of semi-sweet chocolate cut into small
00:10pieces and three ounces of unsweetened chocolate. Put this over simmering water, just warm until
00:18the chocolate and the butter melts together. We need one cup of sugar mixed in with our melted
00:24chocolate. So add that, three large eggs, a quarter of a teaspoon of coarse salt, half a teaspoon of
00:34best vanilla. Sift one cup of all-purpose flour. So now this gets added to your chocolate mixture.
00:43Stir in your chocolate pieces and that is your cookie batter. So now scoop, put this into a preheated
00:50375 degree oven and bake until the edges are just set. And once you've baked your cookies,
00:58look how perfect they are. Make a nice generous scoop of ice cream. Put it right on top,
01:05topped with another cookie. I think they're really great.
