If you prefer your homemade cookies to be soft and chewy as opposed to crisp and dry, this from-scratch dessert is for you. In this video, Ella Quittner shows you how to make her Gooey Malted Cookie Dough Chocolate Chunk Bars recipe from her published cookbook ‘Obsessed with the Best’. The texture and flavor of these cookie bars are second-to-none with malted milk powder incorporated into the dough.

00:00I tested dozens, probably hundreds of different tweaks
00:03you can make to perfect chocolate chunk cookies.
00:06This is just for me.
00:07I'm Ella, and today we're making
00:09the gooey chocolate chunk cookie dough bars
00:11from my book, Obsessed with the Best.
00:13One of the things that relies on for flavor
00:14is malted milk powder, and it's gonna add so much chew
00:17and browning and savory depth to the cookie dough.
00:20So now I'm adding the flour, malted milk powder,
00:22baking powder, and the salt.
00:24That's it, that's literally half the recipe done.
00:27The second key to this recipe
00:28is that we're gonna cream the butter and sugar together
00:30for a really long time, like 10 minutes.
00:33I like to use a mix of dark and milk chocolate in this recipe,
00:36and sometimes I'll even throw in like a crunch bar
00:38or a toffee bar, because I like a mixture of sweetness,
00:41meltiness, texture, and flavor.
00:43This is about 10 minutes in,
00:45and you can see it's super light and fluffy.
00:48Adding the eggs, one at a time.
00:50One tablespoon of vanilla.
00:51It's actually illegal to measure vanilla.
00:55That's literally it.
00:56So now we're just gonna add the dry ingredients
00:58and the chocolate and we're done.
01:00It takes 10 to 15 minutes,
01:01and I swear it tastes like you work in a bakery.
01:04Does not need to be perfect.
01:05We're gonna top it with a little bit more chocolate
01:07and some flaky salt for texture.
01:09This is completely optional,
01:11but makes it look prettier when it comes out of the oven.
01:13You can serve them as bars,
01:14or you can take them out of the oven
01:16and scoop them still warm,
01:17like a sticky toffee pudding,
01:19into a sundae cup, a martini glass, a bowl.
01:22You can top it with ice cream or just more salt.
01:24The malt gives it this intense, savory depth
01:26that makes it taste like you bought these
01:28from a really expensive bakery.
01:30The texture is so unbelievable.
