03:01so off and so scary i don't want to get comfortable have you guys been kind of thinking about what

03:13cooking is great i mean he's a legend but we're still on our toes so this is a dish that

03:19restaurant was a chef i called mondrian i was doing mostly french food because i was trained doing
03:24french food for some reason i didn't want to do italian food i was afraid to do it you know
03:28i kind of
03:28started thinking like i want to do something that feels more inspired by italy so this was the first
03:33dish that i really sat down and tried to think i'm trying to do something that really feels more
03:38like me i hope you're hungry yes there you go wow there you go braised red snapper a little rosemary
03:48lemon vinaigrette and eggplant beautiful beautiful enjoy i am completely comforted and blown away but
03:55also uh what is happening here tom is fish cooked yeah yeah chef oh good delicious nana and britney you
04:05may be the first two chefs here to start on your road to redemption but in this competition any chef
04:11can land here nana you had a problem getting food on the plate on time minute 20 side behind behind

04:23can cook you just kind of got stuck in the mud there and i did couldn't get out oh my

04:34a lot of the challenges pull you out of what you do yeah sure and it's really really hard to

04:39focus on doing the food that you'd like to do food that is reflective of what you do that's why

04:42this dish because i think it's really reflective of what i do you know to really do well in this
04:45competition you got to find yourself you got to do your thing
04:51your challenge today is go back to the basics i want a dish that shows me exactly who you are

04:57a chef just one plate of food okay that's it simple you have 30 minutes on the clock

05:10brit we back huh right we're doing halibut putting myself on a plate it's difficult
05:15and i've been kind of struggling with that but i'm hoping that i can show who i am as a
05:19chef and
05:20continue this journey i immediately go to fish i'm confident in my fish cookery especially in the
05:26kitchen maybe not so much on a nascar track i'm gonna take pache to medium my fish was raw
05:35i am doing some salmon taking it back to first cooking with my mom in the kitchen and one of
05:42my
05:42favorite dishes that she makes so i'm excited tom really wants us to put who we are on this plate
05:48i remember during the pandemic just feeling lost the best cure-all is mom's home cooking this one dish
05:56that she's made it's seared salmon with a spicy tomato curry sauce nothing crazy some onion powder
06:03garlic powder i struggled with time so i'm just going to concentrate on two things a really nice
06:10sauce and a fish lock in on those and get my plates early i need to get back in here
06:16corn tomatoes
06:18citrus wood fire grill tomatoes what else can i do tomatoes tomatoes i look at the pantry and i think
06:25about what i enjoy eating panzanella going with it and then i see some bread i think i can go
06:30the
06:30panzanella route this is the first thing that came to my mind so i'm not going to change it i'm
06:34just
06:34going to go with it follow your heart trust your gut and stick with the plan just under 23 minutes
06:39per chef you know i'm still trying to figure out exactly what kind of chef i am but i like
06:44to be
06:45light bright acidic corn's my favorite vegetable so i want to show a little technique with that
06:50i mean i feel like africans and tomatoes are very much like italians and tomatoes and we use a lot
06:58of
06:58tomatoes for sauces there's some ghanian flavors in there there's always going to be some ghanian
07:04flavors in there so it's go time baby i grew up in a very traditional ghanian household and we
07:12ate ghanian food like every night so that's my comfort food she's a little spicy oh oh today it's
07:26like i'm in the kitchen with my mom i'm in the kitchen with my best friends feels good and what
07:31a
07:31perfect way to start with doing a dish that reflects us i think that's kind of what i'm trying to
07:36learn
07:36about myself as well but feel that heavy i think i put too much pressure on myself to be like
07:43oh i'm
07:43cooking african food i'm cooking ghanian food that it made me overthink yes and think that
07:50for a second i don't belong here and i do oh yeah baby all right 16 minutes 16 heard that
08:00so nana what are you working on i am working on a salmon dish that i do with my mom
08:06all the time okay
08:06just a taste of home hope you like a little bit of spice i don't mind spice all right cool

08:11i get a hot ones like i throw my 10 wings no problem it just doesn't like my stomach to

08:15oh yeah otherwise how's it going going well so i'm gonna do halibut today okay so with like corn
08:22panzanella yeah exactly okay juice some tomatoes a little bit of lemon i just hit it with white
08:27balsamic salt obviously i'm going to wait to toss right before i plate i'm going to clean this up and
08:31then just season this properly and get a nice uh nice sear on that okay you've got 13 minutes left
08:35how you going going for it okay now to 13 minutes left yes chef okay feeling good yeah you bringing
08:42the heat or what bringing the heat baby my salmon is almost done i just want it to be flaky
08:47and
08:48beautiful and buttery i have my mise en place ready for my panzanella salad so now it's time to focus
08:53on
08:53cooking my perfect protein about to drop my halibut so i can get that resting fish is seasoned nicely
08:59i'm waiting for that beautiful color i let the fish tell me when she's ready to move so i can
09:03relocate it to make sure i get a nice even sear eight minutes left nana you okay i'm good the
09:10salmon
09:10has been seared to perfection the sauce is working now i can start thinking about other things to really
09:17make this work getting my little salad situation together okay i really want to make tomato a second
09:26way so i'm going to do a tomato salad situation something crisp fresh with some lemon juice and
09:35maybe a little punchy a little fish sauce will bring her up five minutes left five minutes plenty of time
09:42i have to get this on the plate while my fish is resting i'm focused on plating i kept my
09:48corn and
09:49tomatoes separate from the bread because i didn't want the bread to soak up too much i shift on a
09:55little bit of fresh basil and tarragon mix that in and then i add in the grilled bread and let
09:59that
09:59hang out before i start the plate two minutes left two minutes chef just gonna check my fish oh they're
10:07real today put this on top proteins are on the plate right proteins on the plate be chef 15 seconds

10:24oh my god okay okay okay okay okay okay okay so now let's start with you what did you make
10:43for me this
10:43would be pan seared salmon with a fresh tomato salad and a curry tomato sauce my mom's is always known
10:52for
10:52this spicy tomato salmon dish and i wanted to kind of give it a 2.0 and added a vibrant
11:00tomato salad on
11:01top with some crunch in it a little bit of fish sauce to add to that umami your salmon is
11:06nicely cooked a
11:07lot of complexity here i like that you use tomatoes two different ways it's in the sauce it's in the
11:11curry plus you got a fresh little salad on top you got the ginger i'm not gonna say it's too
11:15salty but
11:15it's on the verge of being there it's like right there but i think when you eat it all together
11:19it works
11:19out really well britney what's the dish pan seared halibut with a grilled corn and tomato panzanella
11:25like you said like going back to the basics when i was a young cook and started learning how to
11:28cook
11:28fish halibut was the first one that i had to tackle i just wanted to keep it nice and simple
11:32to showcase
11:33the fish itself the halibut is beautifully cooked i think the corn salad's nice and refreshing got a lot
11:37of lemon flavor from both the olive oil and maybe some zest on the fish itself i know you want
11:41to keep
11:41that bread separate for the last second but i would have liked the bread to actually soak up more of
11:45those
11:45juices sure but really tasty these are both really really good
11:54i have to say if you were cooking like this you wouldn't be here right now yeah unfortunately for
11:59one of you this will be it both proteins are nicely cooked so that's going to cancel out so
12:05i'm looking at the actual dish in total there's one that just packs a bit more flavor

12:23i just think that the panzanella you need to get a little more liquid in there for the bread to
12:26absorb
12:26that and that's the nice thing about panzanella you know they soak up those juices and they actually
12:30become something more than just the crouton but the fish is perfectly cooked sorry about that
12:34unfortunately you connect the kitchen good job this has been an unbelievable experience this is
12:39the hardest thing i've ever done i've learned that i need to be proud of myself i'm excited to continue
