02:39First up, a look at how to keep yourself safe behind the wheel.
02:43And then we're keeping the engine running as we head into the night.
02:46Let's roll.
02:52Now, you'd be really surprised at how many people don't know the bare basics
02:56when it comes to road safety, but we have good news.
02:59With a few key techniques and tips and tricks,
03:01you can become the safe driver that you've always wanted to be.
03:04Plus, there's even now a way to evaluate your driving performance
03:08every time you get behind the wheel.
03:09But look, first things first, let's get the basics right.
03:12Now, one of the most important and honestly underrated aspects of safe driving
03:17is your seating position.
03:18You need to be in a spot where you've got the best possible view
03:21of your surroundings and the road ahead.
03:22And remember, it's not about looking cool
03:24because you've already got that covered.
03:26It's about having the correct position for your height and body type.
03:29And equally as important,
03:30make sure you adjust the steering wheel position while you're at it.
03:33Now, this next tip really should be obvious,
03:35but this thing needs to be stowed away
03:37or at least on a mount or in some sort of a cradle.
03:40Studies have shown that using the car's infotainment system when driving
03:44can impair your reaction time more than alcohol, cannabis use or even texting.
03:49Reaction time slowed by up to 57% using the infotainment system via the touch screen,
03:54compared with the 12% increase in reaction time registered
03:57when a driver has consumed alcohol to the legal blood alcohol limit.
04:00So just stop touching your screens.
04:07Now, I've got possibly a silly question for you.
04:10When you're driving, where are you looking?
04:12Your answer should be as far down the road as you possibly can.
04:15If you're only looking a few metres in front of the car,
04:18any obstacles that might occur can become really nasty surprises.
04:21Think of it like life.
04:23The further that you can predict the future, the more prepared you're going to be.
04:28OK, now that we can see into the future, let's talk braking.
04:31And I cannot say this strongly enough.
04:33It is critical that you keep a safe distance between you and the car ahead.
04:37At around town speeds, think around the three-second mark.
04:40At freeway speeds, minimum five seconds.
04:43Because you've got to remember, the faster you go,
04:45the further distance it's going to take to brake.
04:47And also, the more distance you're going to cover
04:49before you even brake in the first place.
04:52The average reaction time is about a second.
04:54So at 60 kilometres an hour,
04:56you travel 17 metres in that one second before you even hit the brakes.
05:00If you're distracted or slower to react, you'll travel even further.
05:04So no wonder nose-to-tail collisions are the most common crashes on our roads.
05:09Often because drivers follow too closely or they're just not alert.
05:14Now, let's talk cornering.
05:15And this is where your vision is so, so critical.
05:18You want to look as far through the corner as you possibly can.
05:21Not only will this help you predict the future again,
05:24but it will help you visualise the smoothest possible line.
05:28Actually, speaking of smooth, let's talk steering inputs.
05:31You don't want to go soaring away at a corner like you're trying to cut a loaf of bread,
05:35because that can unsettle the car.
05:37And it can also make your passengers feel like they're ragdolls.
05:40And that's no fun. Is it, guys? No? No.
05:44So now you've seen how making just a few small changes can make you a much safer driver.
05:53But the thing is, being able to keep track of your driving style can go even further.
05:57In fact, I've been using this amazing app that keeps track of things like your speed,
06:02how smooth you are, even your phone use.
06:04You know what? It's almost like having me come along for a drive with you.
06:08With the Aimee app running, it will score your safe driving performance
06:11and even offer tips on how you can improve.
06:14I mean, how good is that?

07:23Now, did you know, even though about 25% of driving happens at night,
07:27something like 40% of accidents happen after dark.
07:30Why is this?
07:31Sometimes it's fatigue, sometimes it's a lack of visibility,
07:34or a whole bunch of other factors.
07:36But just like daytime driving, with a few tips and techniques,
07:39we can make nighttime driving a whole lot safer.
07:42Now, the first thing to be aware of is just how our eyes work in the dark.
07:47Did you know it can take up to 20 or even 30 minutes
07:50for them to fully adjust to a dark environment?
07:53And it's not only your eyes that are put to the test at night,
07:56your hearing is just as important.
07:59Listening out for any changes in the road surface
08:01can have a huge impact on how you approach a corner or a braking zone.
08:05Now to the tips to make nighttime driving safer and more enjoyable,
08:08and let's talk interior lighting and dash displays.
08:11All of these things really should be turned down.
08:14Otherwise, they can be distracting and they can ruin your nighttime vision.
08:17Just make sure you make those adjustments before you drive.
08:20Next up, keep the windscreen crystal clear inside and out.
08:24Any grime or streaks will create blinding glare when headlights hit them.
08:28And a quick wipe of the glass can make a huge difference in what you can see.
08:32And finally, it's important to understand that as we age,
08:35our eyesight, it does worsen.
08:37An 80-year-old receives far less light into their eyes as, say, a 20-year-old.
08:41In fact, it can be like wearing sunglasses.
08:43Plus older eyes, they're more sensitive to glare.
08:46So if you're struggling to see street signs or road markings,
08:49you might actually have a little bit of presbyopia
08:51or maybe some other vision changes creeping in.
08:56Now, the first tip when it comes to safer driving at night
08:59is to not look at the headlights of an oncoming car.
09:02Otherwise, you can suffer from white blindness.
09:04Instead, just be scanning the road all the time.
09:07And if the glare gets too much, glance at the left road edge
09:10to give you some perspective of where you are on the road.
09:13Because losing vision at 80 kilometres an hour for even a second?
09:16Nah, not worth it. Way too dangerous.
09:19Another big one. Slow down a tad at night.
09:22Your reaction time and stopping distances are worse in the dark.
09:25So giving yourself a bit more time by easing off the speed is just smart.
09:29And if you're feeling drowsy, don't be an idiot.
09:32Just pull over and have a rest.
09:34Don't fight sleep by putting the window down because it won't work.
09:37Regular eye tests can catch things like presbyopia and cataracts early.
09:42Something as simple as an updated prescription to an anti-glare coating on your lenses
09:46can make a world of difference for night driving.
09:49Optometrists recommend eye checks every two years or annually if you're over 65.
09:54So do your eyes a favour, especially if night driving leaves you squinting.
09:58So, there we have it. A few simple techniques and you can become a much safer driver day or night.

15:39Now, last week we met the drain man, also known as Brendan.
15:43He's a plumber extraordinaire and he really helped me get to the bottom of my obsession with drain clearing videos.
15:49If you don't know what I'm talking about, you have to get on board.
15:53I was hooked the minute I met him.
15:56So much so, I decided that we really needed to send a camera out with him to see him in action in the wild with his right hand man, Jono.
16:07We all rely on drains in our homes to work without any problems.
16:12But do any of us really understand our drain?
16:15Do we really know the do's and don'ts of flushing, hmm?
16:18Let's take a look at what is going on underground.
16:24You would be amazed at what people try to flush down their drains.
16:27Clothes, dead animals, all sorts of strange, weird and wonderful items.
16:33The weirdest thing I've heard about going through the drain, you know, are wedding rings or pendants.
16:40Skincare products, the nozzle that's in the bottle comes apart from the product and somehow is in my drain, but I have found that in there.
16:46Maybe a rat? A fish?
16:49Yeah, that sounds about right. We've seen a lot worse.
16:52We never know what we're going to find when we head out to a job.
16:55First up, this customer called and said that their shower's filling up with water.
17:03Oh, I can see hair already.
17:08And I reckon we're going to see a rat under here almost.
17:12Look at all that.
17:13So this particular house has got three kids that all have long hair.
17:18So what you can see in here is hair, bits of soap scum, conditioner and shampoo that tends to sort of solidify once it reacts with all those hair oils and whatnot.
17:30It's not the kind of stuff that you want sitting in your drain.
17:33We see this all the time.
17:35People think that hair dissolves in the drain.
17:37I'd hope hair dissolves at some point.
17:40It doesn't.
17:41And when it's blocked, you've got to do what you can to get it unblocked.
17:44I have used chemical drain clear many times.
17:49You know, these supposed remedies, they're not good for the environment.
17:53And when humans go to try and clear a drain after you've used products, it's really quite dangerous.
17:59I care for the environment, so obviously I don't use it anymore.
18:03But yeah, in the old days, everybody used it.
18:06Drain products don't clear drains.
18:09They might clear some drains, but they're not really blocked.
18:13It's just that people don't know how to clear their own drains.
18:16A good tip is to pop off these grates, to pour some boiling water down the drain, just to help break down some of those soaps that are building up in the pipes.
18:26On probably a fortnightly basis, get the kids trained to do the cleaning whilst they're in the shower, because they're usually in there long enough.
18:32A nice little clump of hair that we've removed out of that, Jono.

18:43It's all about being proactive with your drains.
18:46Be careful with your drains.
18:47Be respectful of your drains.
18:49The better you take care of your drain, the better your drain will take care of you and your poo.
18:56Next up, we're hitting the road to go and investigate a blocked toilet.
19:01We'll push a camera through the drain, find out what the blockage is, and then we'll decide which way to go about fixing it.

19:10It certainly is a gurgle.
19:11A gurgle in your house is a major red flag.
19:14It's alarm bells.
19:15That awful, like, yucky noise that you hear.
19:18Bloop, bloop, bloop.
19:20Bubbling, gurgling.

19:28I think it sounds like...
19:29So the drains are designed to hold a certain amount of liquid.
19:39Now, when that drain fills up with water or becomes blocked, it can't flow.
19:43So the air is trying to escape anywhere it can.
19:45The gurgle is the air trying to come back up and it's making that blop, blop, blop sound.
19:50Strangely enough, I actually like seeing the drain go down.
19:53Some people think that's weird, but I remember the first time as an apprentice clearing a drain and spending hours on it.
19:59And as soon as that drain dropped, it's very satisfying.

20:07Unfortunately, I think someone's going to get in trouble.

27:31I'm Dim Sim Lim and today we're cooking fish and chips, my style of my wok.
27:36So we've got these very large russet potatoes, and we're just going to cut these into thick-cut chips.
27:45Try to cut them as uniform as you can.
27:48If they're all around the same size, they'll fry out nice and evenly.
27:51Just like that.
27:52Now we have chips into the big bowl, and we're going to wash it.
27:55We want to get rid of all the starch.
27:57That's what makes it go brown and dark really, really quick.
28:03In a separate bowl, we're going to make the batter.
28:05Okay?
28:06This batter is very similar to local fish and chip shops.
28:08They're just a rough measurement of two-part self-raising, one-part corn flour.
28:13Now we add a little bit of chicken powder.
28:15I know it sounds weird.
28:16We're frying fish, but we're using chicken powder, but it just brings out that flavour.
28:20We're going to add a little bit of baking powder.
28:22Baking powder is going to puff up the skin.
28:25A tiny pinch of salt.
28:27And now this is the secret ingredient that not many people know about.
28:31Custard powder.
28:32It makes it super yellow and golden.
28:35We're going to add soda water.
28:36When you have more air into the batter, that's when it makes them super puffy and super light and won't taste oily.
28:42You want to add it slowly, because once it goes too thin, then you've messed up the batter.
28:48The consistency we're going for is something like this.
28:50Now one last thing you're going to add to the batter is a little bit of yum-yum.
28:53Yum-yum is an MSG-based seasoning, so it just adds umami to the dish.
28:57Mix it all in.
28:59We're going to add a couple of ice cubes in there.
29:01Keeps the batter cool while you get everything ready.
29:03We're using vegetable oil.
29:05If you want, you can use canola oil, grapeseed oil, any oil with a high temp.
29:09Just not olive oil.
29:11We have these beautiful fillets of cod.
29:15We're going to top it off with a little bit of yum-yum.
29:17And dust the outside with a little bit of cornstarch.
29:20Dunk it straight into the batter.
29:22My favourite way to tell if the oil is hot enough is to put a pair of chopsticks in there.
29:26Anything that's wooden really.
29:28You see when there's bubbles on there, that's when you know it's hot enough to fry.
29:32Lay it down away from you.
29:34Use our fingers and just go like that over the fish.
29:38This adds little bits of crumb on there.
29:40So we're going to fry this for about seven minutes.
29:48Sauce?
29:49Oh yeah, we've got to make sauce.
29:51You can't have fish and chips without tartar sauce.
29:53We've got our mayonnaise.
29:55Capers in the bowl.
29:58Gherkins.
29:59Got our Dijon mustard.
30:02We're going to add a little bit of dill.
30:08Parsley.
30:10Sugar.
30:12And we're going to add lemon juice and fish sauce.
30:15Trust me on this, okay?
30:16I promise you it's good.
30:18Going to add a little bit of yum-yum.
30:21Now the sauce is ready.
30:22Let's serve it up.

31:51You put a bit in a salad and then you've got half left over and you think, what am I going to do with that?

31:58Because you don't want to cry, you know?
32:00How do you know?
32:01So, very, very sharp knife.
32:04Yeah.
32:05Also, if you keep your onions in the fridge, they give off less of the sulphur, which makes you cry.
32:12The third hack is get Ash to do it.
32:15Because I've got like, you know, proper eye makeup on.

32:18That's it.

32:22I cut everything with this that I pickle.
32:26This will cut everything really, really fine.

32:37Perfect size.
32:38Julienne.
32:39So you can make your own pickling solution.
32:43Salt, sugar, water, vinegar.
32:47You can heat it until it's all dissolved.
32:49Or you can just put it in a jar.
32:51Just half.
32:52This is the pickling solution.
32:55This is literally all you do.
32:57So I'm going to mix all of these.
32:59That looks great.

33:01Pour that in.
33:02It's yummy and sweet and vinegary and fabulous.
33:05Mustard seeds.
33:07You can whack in like a bay leaf, a bit of garlic and whole peppercorns.

33:13And then you just literally put that in your fridge.
33:16All of that was going to go in the bin and now it's not.
33:19How great.
33:20Is that how they make prison wine?
33:22And then imagine you had the most delicious burger and it's finished.
33:25I would pour that straight down the sink.

33:29You just reuse it.
33:30And then eventually it might get down a bit low or whatever.
33:32And then you just soup it up with a bit more of your stuff.
33:34People will just think you're so clever.

34:45Um, no.
34:46You definitely get lots of people that take lots of photos but never been stopped mid-rescue

34:55Is it electric blankets or power boards?
34:57Something that people might not consider, because it's so new, even for us firefighters,
35:02is lithium ion batteries.
35:03We see so many fires and the intensity of a fire from a lithium ion battery is quite excessive.
35:09It's very important for people who, you know, own these things, your e-scooters, your devices,
35:14that you understand safe charging of those.
35:17Noah G asked, how long does it take for a house to burn down?
35:20I really love to answer this question because I do a lot of work in the community about understanding house fires
35:26and there's lots of studies and things that have happened in the background.
35:30Back in the day we had lots of natural materials and natural fibres that our furniture was built out of.
35:34Now we have things that are made of very synthetic materials and they burn at a higher intensity
35:40so homes can take hold within a matter of minutes.
35:43So that's why it's so important to have smoke alarms in your home
35:46so you have that early intervention and you can get out safely.
35:49Liam D asks, have you ever actually saved a kitten from a tree?
35:53Well, yes, actually.
35:55A kitten that had got a fright from a dog went 15 metres up a tree.
35:59So we had to use the very biggest ladder that we had and some rope gear
36:03and climb up into the tree during a storm.
36:06It took probably an hour and a half to get the kitten out of the tree.
36:09The kitten was terrified because we had to put the poor thing in a little bag
36:12to get it down safely.
36:14It's something you see on the movies all the time but we actually do do it.
