00:04it's out one Sunday we were just coming over the little bridge and I just looked at the first
00:11sales sign straight away I just said I'm going to buy grandchildren tomorrow I want to make
00:17it into a five-star hotel and I want to put Yorkshire on the map we wanted to create something
00:28that felt unique it's like a posh guest house are you well yeah everybody's your friend in Yorkshire
00:39oh you I am good to see you no one would expect a hotel like this in a valley in
00:53the middle of Yorkshire
00:57we see ourselves with the goddesses the the reeds the Glen Eagles we want to even be higher than
01:03them oh no welcome to go to evolve we are a Yorkshire team we've got that Yorkshire grit
01:12about us it's number one it really is the experience the people it's fabulous
01:36the feeling
01:41good afternoon oh good how are you today good so we have the lovely Phil Dixon Francis McLean coming in
01:49pushing the boundaries on exceptional service is at the heart of the Grantly Hall ethos
01:56campaign sorted Ben's gonna help me
02:02let's pop it carefully on the seat for now just lie the glasses down pulling out all the stops for
02:07some
02:07serious hotel regulars his lifestyle manager Paul it's important that we're absolutely on point still
02:14delivering exactly what the guest expects but when they come back to us on repeat occasions that
02:21relationships develop the relationship as a friend develops more and more we call it a Yorkshire five
02:27star welcome arriving at the hall by car is always a memorable experience it's not the only way to get
02:34here amongst its 38 acre grounds is the hotel's very own helipad fortunately I don't wear to pay yet so
02:47it stays in place pretty well it's a smooth landing for Francis McVeigh and partner Phil Dixon who are
02:54here to celebrate four years since they first met Phil Dixon and Francis McVeigh they come all the time I've
03:15known them for you know for three years they're absolutely fantastic they're part of our family you know we need
03:21to ensure that the staff actually are sharper than ever you know
03:24whatever they come here wherever they come here we have to even be in top form
03:27big mark yeah good good good we come to Grantley Hall when we want to switch off and relax it's
03:34our switch off place come through we'll get you checked in you do feel like you're part of the family
03:40of Grantley
03:40yeah they genuinely care about us we genuinely care about them every staff member wants to do something special for
03:51you and it's it's it's lovely
03:56for their romantic escape the lovebirds are residing in the royal suite typically costing four and a half thousand pounds
04:03a night it's set across two floors
04:10I don't really know why I'm following it well I'm leading you off to your room because you know this
04:15hotel as well as I do
04:17happy anniversary dear they are very pretty it's certainly a far cry from Phil and Francis's first date
04:26you took me for like this amazing meal um and I'm just a Nottingham girl at heart so I was
04:31like oh there's this like a lettuce around the corner so we'll just go there and uh ten Jager moms
04:35later and then you ended up passed out on the floor and we can't remember anything
04:40I'm just my best friend um um we do everything together so we drive to work together we work
04:47together we obviously live together we just are aren't we two peas in a pod we have a gift for
04:53you
04:53as well for both of you don't forget to take them home with you as well all right happy anniversary
05:00Phil and Francis will be celebrating in style later attending an exclusive champagne dinner
05:06curated by culinary maestro Sean Rankin chef patron of the hotel's flagship restaurant
05:18we are the the mission star restaurant uh Bradley hall you know with that comes a lot of pressure
05:22how are you good to see you you all I guess pay a lot of money you know to come
05:28here you know
05:29their expectations are high and we have to deliver every night great well you'll make a start today Sean
05:34and his team face an added challenge crafting a bespoke dining experience for a prestigious champagne house
05:42yeah we have a special event tonight uh the house of crude and hopefully we're going to be the
05:47ambassador for crude champagne we're doing a dinner party for 21 guests uh um all together three from
05:53the champagne house we've created a menu round the tasting notes around the champagne but crude this
05:58year of um realized they want to do something with carrots and all things carrots so we've created a
06:04lobster dish and we've got about three or four different elements of carrots a carrot puree cooked up carrots
06:08yeah you know really nice menu tonight for them really attention to detail is um it's key uh you know
06:15we're
06:16running really really strict to be recognized by such a renowned estate we position grantley as a top
06:21destination for champagne lovers so there's no margin for error we're sitting 21 down at the same time
06:30tonight so it's going to be quite pressured uh you might see a few uh spoons getting thrown around the
06:35kitchen
06:35as it were are you kidding our main ambition really is to try and get all the food out
06:40you know on point hot uh and at the table at the same time so it's going to be and
06:44it'll be it'll be
06:45a tough one tonight
06:49yeah nice sauce while grantley's guests enjoy the hotel's five-star luxury
06:55there is another side of the business hidden away from view
07:01maintaining the hall's immaculate appearance is a small army of skilled trades people responsible
07:08for the upkeep of every corner of the hotel
07:12maintenance teamwork is never ever done every day brings up a different challenge
07:17just through through natural usage things need to be repaired you never ever get to the euphoria of
07:23the 13th saying right tools down guys everything's done
07:28we are a yorkshire team and we have yorkshire values and we've got that yorkshire grit about us
07:34but the team's work goes far beyond day-to-day repairs basic joinery work
07:41in the maintenance yard a special project is taking shape this is my first coffin
07:48i don't expect to make another one the hotel is preparing for one of the biggest events of their
07:54autumn season and one that they've never attempted before well somebody mentioned are we doing anything
08:00for halloween so sat down with the team and said well if we're going to do it we're going to
08:03really
08:03push the boat out and i think that's what we're wanting to try and deliver now is something that's
08:07that's really magical that's different and that raises the bar for the team we took the gamble
08:13despite me not really liking halloween myself it's now up to interior and ambience manager
08:19marek and right-hand woman shelley to deliver it needs to be massive must must be that we're gonna
08:26be talking about us it needs to be crazy it needs to be wild it needs to be loud a
08:31lot of colors a lot
08:32of props um obviously there are a lot of pumpkins and i have amazing ideas in my head
08:39colin is a little bit too light for the vampires he's got a customer once the lid goes on you
08:45won't
08:45see the sun no looking really good colin's amazing just needs filling up now it's going to be painted
08:51black with a big cross on the top gently don't break it oh my tomatoes so head that end yes
08:59i know
08:59the paper this is not my first time in the coffin get out out out out out out quick out
09:16i need to do a repair job panicking for nothing that's okay thank you it's cosmetic to break
09:24the coffin's not the only work of art the team are creating right i'm going to put it straight
09:28back into the container mate so it's out to wear this is just a trial we'll make it tidier than
09:35this
09:36but maric always throws us challenges is it not too tall no we joke about this we've been married for
09:43some reason i think it's too too tall well we'll we'll we'll just check the measurements but i'm sure
09:48it'll be fine there's not a day goes by of any week where he's not got something that he's can
09:53i
09:53just tell you about we've got to unravel his his ideas and make them into feasible projects on the
09:59day if you could just address that centerpiece in we've not been beaten yet let's put it that way
10:04the latest trend is to have a champagne wall and a wedding if the crowd happened this time marie
10:12and how difficult was that when the guest rings the bell the hand comes through with the champagne flute
10:17but the hand will be dressed as a you know a horror hand oh hello finally through the human the
10:25biggest possible issue with halloween is it can look like a children's halloween party and we still
10:32want it to have some of that grantly hall magic we're going to have to try and look for a
10:38lot of things
10:39and then try and make it that it still looks classy just a few days remain to bring maric's vision
10:46to
10:47life before more than 200 guests descend on grantly halloween is a great opportunity to get the team
10:54to work together it's imperative because then people feel part of a team and there's stories out
10:58of it and i'm trying to establish a culture that you know people have collected connections between
11:04them so it's fantastic it's great great do not look at me so tight well we're tight marit well i'm
11:10just
11:10saying i trust you you've got to have something that excites you and this sort of work is
11:15is what makes me tick my heart is going like crazy um but yeah super excited yeah i like it
11:26very well done guys time's against us now it's going to be tight but i'm confident that we'll
11:31we'll get there in the end yeah let's start to go coming up old plan snacks are gone bread's gone
11:39failures not on the menu for sean rankin and his team i said on a tray lined up i didn't
11:45say throw it
11:46in i like them all two ones and can maric and shelley work their magic to conjure up a spellbinding
11:52halloween oh wow i wouldn't fancy carving that one
12:09tonight chef sean rankin and his team are preparing for an intimate and exclusive champagne dinner
12:19it's a ticketed event so we invite our regular guests to enjoy the beautiful champagne with us
12:27one of the world's most celebrated champagne houses will be presenting their rare vintage
12:32cuvées alongside sean's bespoke fine dine menu
12:38my love of cooking started um well a long time ago now i used to help my mom cook in
12:43the kitchen
12:44when i was sort of 10 11 12 years old i'd make the york pudding mix and then i'd make
12:48apple pies
12:49there on an afternoon on a sunday at the ripe age of 16. i left school i went straight to
12:54london and
12:55did an apprenticeship from five-star hotels um mayfair ritz savoy having established himself as a much
13:01sought after chef and restaurateur in 2018 grantly hall managing director richard sykes offered sean
13:08the chance to bring his gastronomic talents to yorkshire richard said you know i'd like you to
13:15take over the fine dining at grantly hall we started work on on everything you see in here all the
13:20chairs
13:20were handmade in brighton the tables uh were done locally in york the attention was really on every
13:26single detail the china is the best china from france the cutlery is is hand dipped in sheffield
13:32silver we set the ethos being 30 to 40 mile radius around the area i'm trying to find producers
13:40trying to grow everything forage everything that's the philosophy of the restaurant and that's where i
13:44came up with the idea of taste of home eight years later the restaurant continues to play a pivotal role
13:50in richard's vision for the hotel's future hi richard how are you i'm very good yeah good to see you
13:56still got lobster on there doing well yeah um out of whitby local as always the michelin star is is
14:03one
14:03of our proudest you know achievements so it sets the sets the bar but like everything here we need more
14:09we want more we've invested a lot of time and effort and sean's time in particular to really look at
14:15every touch point we're wanting a second star we're striving for that it's not the only accolade sean's
14:24chasing tonight the champagne brand will be judging if sean is worthy of becoming one of their coveted
14:30chef ambassadors and it's not just the food under inspection
14:38our goal is always making perfect setting they will start with the eye in the tablecloth steaming the
14:44clothes i will be very careful with the glass and another and the design so they got me in one
14:51four
14:51five one three where is my sketch yes please okay so we need to go from this side please
15:02let's do the guests now move that no i don't like the visual anyway sorry guys no absolutely not
15:09not happy at all we discover imperfections so that way we try to cover up imperfection on the
15:15tablecloth with this draping but it's just awful we're gonna be late in a few minutes but we're gonna
15:21deliver 100 but if we want to be good we want to be the best so simple as it is
15:28did the tables be
15:29measured already it's great it's gonna be measured okay perfect so i'm using this ruler to make sure
15:35the actual spacing between plate and the table is absolutely equal on every single setting each setting
15:41needs to be absolutely perfect and measure equally so the guests don't feel any difference yeah it's
15:47making sure everything's in court should be very precise okay let's practice serving
15:55and the next person perfect we're trying to synchronize to to do the elegant movements sometimes the
16:04guests actually uh mentioning it looks like a ballet in a room like like show ranking restaurant you want
16:11a truly enjoy and admire what what is on the front of you amazing that looks beautiful
16:26the next one yeah you'll see the signs
16:29yeah i'm always confused we're gonna need a lot of pumpkins grantly's first ever halloween extravaganza
16:37is on the horizon the farms just around the corner i'm really happy that we're using them because
16:43obviously a local farm you know using the local businesses obviously is part of grantly so a family
16:49run business like us okay here we are at the pumpkin patch fantastic hopefully lots to choose from
16:56tasked with delivering an event that's nothing short of spectacular marrick and shelley need a bumper
17:02order of pumpkins to dress the hotel yeah yeah morning morning and this is your little puppy yeah
17:11this is jemima our little daughter james johnson runs the farm with partner emily who's brought along
17:18their baby jemima we've been farming here since 1933 um as a family so the flower field opened up
17:25two years ago and it's a way of getting people down to the farm so we can talk to about
17:29how we
17:30farm the produce that we do so one of the key things that we do a farm is about regenerative
17:36agriculture and diversity is key we're all about making circular systems and being able to donate
17:41them is a fantastic thing and mary can eat pumpkin soup for the next six months as you can see
17:48we've got
17:48all sorts of different varieties in here we've got some great little warty ones we've got yellow ones
17:53white ones look at this unfortunately that's a monster i don't think i'll be able sir verticulars
17:59at least oh wow gorgeous wow i wouldn't fancy carving that one one particular pumpkin has caught
18:06maric's eye out of snowballs are lovely yeah is that one of those are called yes they're the snowballs
18:12i like the warty ones yeah i didn't like oh it's very halloweeny yeah yeah yeah i think we just
18:18need
18:19to get picking then maric should we take you into the patch to see where they're all grown yeah absolutely
18:24in my opinion we're gonna go approach this completely organic okay so just replicate what you did on the
18:30display that looks stunning beautiful so pick up what you think is the best for us just a real mix
18:35shape sizes colors now diversity as possible exactly thank you very much for having us that
18:42was absolutely i love this connection you know it's yorkshire organic superb superb with the pumpkins
18:50ordered the race to make grantley's first ever halloween party a success is on
18:56i have my favorite pumpkin her name is penelope let's get penelope back to grantley hall i'm gonna say
19:04yes to that
19:11it should be diced salariac as well back in the sean rankin kitchen the team are gearing up for tonight's
19:19champagne dining event so if you get like a time now we'll portion it out and then we can put
19:26it
19:26together okay so tonight we've got a private event tonight for the house of crew uh really important
19:33uh guest list this evening mommy k do you want to start the briefing please of course so we've got

19:38guests arriving at 6 30 today i work with chef sean for past 20 years uh so we completely understand
19:44uh our dynamics understand what is needed in the restaurant the discipline the passion we know the
19:50expectation and how each other works so we're starting with a lobster following then with the
19:58turbot then venison and finish with the apple thank you good have a good night thank you thank you
20:06we are 10 minutes away from uh from the party coming in yeah all ready all good we hope
20:12the guests are here among them grantley regulars phil and francis celebrating four years together
20:19and all the way from france the champagne house representatives wine manager jérôme gets the evening
20:26underway it's a quick intro because i will disturb you more after but i would like to welcome the chef

20:33and thank you very much to all of you for tonight thank you very much thank you chef
20:41the team are primed to begin service as soon as chef gives the word
20:48what i did do when i when i built this kitchen in the restaurant uh we put tv cameras in
20:54into the
20:54into the dining room it allows us really to control uh the service in the kitchen together
20:59there so um the timing is absolutely on point all the time yeah let's start to go jack if you
21:05can
21:05get done now on plates monica you ready let's go let's go so we have a beef brisola for you
21:15which says in spices for a week then another week in red wine and then we let it dry for
21:21six to eight
21:22weeks yeah yeah all good all to plan snacks have gone bread's gone uh next course is going to be
21:28uh
21:28lobster i'm really happy to share with you a new edition of crew rosé sean has prepared the menu
21:36around the tasting notes of the champagne i like the fact that it's traditional french style on a white
21:41tablecloth everybody together for me it's wine heaven once the guests tuck into their first course
21:47the clock starts ticking is this gone hot i said on a tray lined up i didn't say throw it
21:54in sean and
21:55his team have one shot to deliver the lobster bisque at the exact perfect moment elliot are we going yeah
22:02we're going 20 minute timer wait can i get a wipe on this plate please right we need to work
22:08fast now
22:08yeah that's always a place don't you yeah start to go grab your bisque there is an amount of pressure
22:16every
22:16day it's based around you know customers expectations making sure the food the quality
22:21the consistency is is there it'll never go away but that's exciting and that's what drives you and
22:26that's what keeps you going so we paired uh the rosé um with the the simple carrot uh so we
22:33decided to
22:33combine the carrot with lobster so um lobster cooked in um smoked butter alongside you have a lobster
22:40bisque which we've made from the shells uh with some heat sea herbs and a little bit of lobster oil
22:44so
22:44please enjoy thank you thank you well done elliot yeah yeah so far this would all going very well
22:55we're gonna have to try and get a nice spoonful onto each plate you know what i mean so about

23:00that okay as the evening draws to a close sean hopes the team's efforts will be enough to secure
23:07him the coveted champagne ambassadorship yeah all good yeah went really smoothly uh you know as you
23:15know we're trying to take the risk out of everything uh to make sure that you know we're on point
23:19all the
23:19time so main course is done dessert now and then that's a wrap gone i'll say 80 percent good to
23:26be
23:26fair and the team did very very well i think the only mistake they did uh so they went to
23:33wrong side of
23:34the table first which obviously yesterday i'm gonna even realize however we realize everywhere so that's
23:41that's how we are coming up it's top secret a very special proposal puts the team to the test
23:49just pop it just underneath that follow me follow me and will maric's outlandish halloween plans come
23:55back to haunt him i'm absolutely sucking words so um this is the hub of the business it's where all
24:09the magic starts and lifestyle manager paul bolton needs to channel his inner paul daniels for his next
24:16trick i've been contacted by one of our regular vip guests who has tasked me with uh putting together
24:25a proposal package for him he is proposing to his uh his partner the vip wanted to sprinkle his
24:33proposal with grantley magic he's none other than regular guest phil dixon head spinning a few ideas
24:42um my thoughts are we will do a bit of a flash mob event in the royal suite so we'll
24:50arrange private
24:51dining in the room it's very important we don't let the cat out of the bag and spoil the whole
24:56thing
24:56because that would be very embarrassing can you see everybody yes thank you
25:06paul's ambitious plan spans nearly every department we're assembling head of advance for food and
25:14beverage generally the operations team and he's called a team meeting to help organize the secret
25:20proposal i wanted to just run through what has been discussed with him dressing the room is for
25:27in-room dining stakes are high we've got to get it right they both are very very important people to
25:32us
25:33we want them to be absolutely confident that if they wish to to book their wedding with us that
25:39they have confidence that we can deliver there are going to be 13 musicians all together only with
25:44the string quartet it's top secret that's 200 no some more oh my god so where are we gonna put
26:01them
26:01as the halloween party draws closer maric and assistant shelley have an ambitious plan to transform the hotel
26:10a lot of pumpkins all different sizes maric will have the time of his life talking to them all stroking
26:16them all and then we'll try and find homes for them the white ones they call me my favorite they're
26:24coming
26:24no bones they're coming farmer james has arrived with this special delivery
26:32this sort of order is is really nice plus it's great to be able to for granola
26:36to be supporting local shelley yes it's a lot of this design i don't like it the strange ones
26:43gnarly ones no gnarly ones are good because it's halloween i'm not touching them it's gonna be
26:50beautiful it's gonna be amazing it's gonna be spectacular it's gonna be wow i'm gonna relax now

27:17decorating grantley's 38 acre grounds will be no mean feat
27:22we are progressing i can feel it we are progressing in the right direction we're getting there never
27:27a dull day at grantley hall always something different to do we need to keep on getting
27:32marek to use his brain with concepts this was not even his idea but he's embarked on it and the
27:39guy's getting crazy about it i cannot wait to welcome the guest tomorrow still a lot to do but
27:46we have broken the back of it good job let's go wow she's nailing this project
27:55phil dixon is back at grantley ready to spring a big surprise on unsuspecting partner francis
28:02playing cupid is lifestyle manager paul so the ring for today for the big proposal is here slightly
28:12nerve-wracking looking after something for such an important proposal i think it's quite special to
28:19be part of it and to be tasked with by a really super chap who to make the match magic
28:26happen for him
28:26and his his partner so i'm really excited about it downstairs phil and francis are all checked in
28:34and enjoying some drinks i'm very hungry now bring it up operation proposal is well underway at the
28:42end of the day we've got to hope she says yes in the hotel spa and wellness facility
28:53we need some spooky music the countdown to grantley hall's first ever halloween party
28:58has begun it's more like you're in a gang and the ghoulish transformation doesn't stop at the hotel
29:04so you're going to make me look like victoria beckham i'll smoke me in telly baby yes what are you
29:10going for i'm going to be a ghostly bride you can be my ghostly groom it's an unusual assignment
29:16for the spa team good job we've got the professionals doing this wowzers
29:22what i love herbs thank you so much do you know this is the only time that we can
29:36halloween welcome so you're the main figures for halloween in your bar areas my team and i have
29:41been creating some incredible spooky desserts across all departments the grantly team are working hard to
29:48to ensure everything is perfect for the big night so the key is just to do kind of a
29:55there we go that's it take your hand away oh perfect smashed it yeah thanks
30:04outside it's time to spookify grantly grounds mission michael on the bridge welcoming the guest
30:12first the first miniature stage in the grantly hall and despite the challenging yorkshire weather
30:19i'm absolutely soaking wet there's no dampening marrick's spirit spin the batteries again around
30:25the pole and press the twice you press the twice yeah awesome yeah perfect
30:38tonight the team are helping grantly regular phil spring an elaborate surprise proposal on girlfriend

30:47so just pop it just underneath there just
30:51marcus how you doing nice to meet you and you behind the scenes a posse of singers musicians and
30:58florists are arriving in the service yard follow me follow me which signals all systems go for
31:05lifestyle manager paul and the rest of the team so if you'd like to get whatever you need and we'll
31:12sneak up there there will be florists going in and various other teams going into the room so next
31:17stage is uh is the actual run-through with the artists got to smuggle the the musicians in without
31:23anybody seeing them and the florist obviously got to crack in and really get the room set very quickly
31:32the team have less than 60 minutes to dress the two-story royal suite and position the performers
31:39that makes me proud to see the different teams working together pulling out all the stops for
31:44something like this uh it was just incredible to be part of so far everything is absolutely going to
31:51clockwork that's planned florists are here musicians are here uh saris are here that's here i'm not
31:58letting that out of my sight out of my pocket the flash mob of singers and musicians need to rehearse
32:04without disturbing the other guests there's chairs coming there's chairs coming to literally two minutes
32:11looking great just do that that moment of chaos while everything gets ready but it's fine it's all good
32:16it's all good we do this all the time but we're okay it's all going to be in like 15
32:20minutes it's
32:21like we're never here it's very special i think i know the guests from pretty much day one so they
32:27for me like family so she has no idea whatsoever generally so it's very very exciting moment truth
32:34my god where's the ring okay consensus of opinion yeah ladies in the house box open or box shut
32:41shut shut shut shut i'm gonna get it okay shut it is meanwhile in the bar what are you having
32:48that's unusual yeah it's imperative we get it right because this could be the biggest wedding booking
32:57that that we've had at grantley hall time has come rock and roll coming up the pressure the pressure is
33:06on carla marek races to set the stage for grantley's halloween debut
33:13nobody will notice but i can see it and will the team's biggest surprise yet
33:18go off without a hitch you're literally the best thing that's ever happened um to me
33:30the pressure the pressure is on carla it's two hours to go before the doors open for the first
33:37ever grantley hall halloween party and then another side no it needs to be on the other side
33:45the whole team are working tirelessly to transform the reception area
33:49so guests are greeted with a spooky surprise
33:57what is this frame on the left so can we can we have this frame here
34:01the suppliers that have set the room the set designer have done the most amazing job
34:06then it's been adding little bits of fairy dust basically
34:10in reception colin and greg's champagne wall is nearly complete

34:31outside the guests are arriving halloween yeah 200 people attending it's going to be an amazing event

34:55technique must be different so we need to pass the message to ops team so when they're going to be
34:59passing the champagne they need to go from the top bottom i don't like this cause they drive me nuts
35:04which on this one nobody will notice but i can see it i know but what are you going to

35:09can't paint it black you can't do anything i'm sorry we need to paint them we need to bring them
35:13please can you help me um you know the skeleton this is kind of like a mushroomy color yeah can

35:21it as close as possible in the nail varnish so because i need to i need to paint to paint

35:53this is the biggest proposal we have done at grantley hall and it's a proposal that we've got
